Brie Grilled Cheese image

If you've never made a grilled cheese using brie, you haven't quite lived yet. This Brie Grilled Cheese is easy to make and bursting with flavour!

Number Of Ingredients 10

8 small-medium slices of White Bread ((Sourdough works great))
1x 9oz/250g round block of Brie, (sliced into 12 wedges)
few pinches of Fresh Thyme ((optional))
Butter, (as needed)
1lb / 500g Onions
1 tbsp Balsamic Vinegar
1 tbsp Brown Sugar
1/2 tbsp Olive Oil
1/2 tbsp Butter ((or more oil))
Salt & Black Pepper, (to taste)

Steps:

  • Caramelized Onions: Add oil and butter to a large non stick pan over medium heat, then add in onions. Fry for around 15mins, or until they start to soften. Season with a pinch of salt and pepper. Turn heat to low-medium then continue frying until they start to naturally caramelize and turn golden (another 10-15mins). Add in balsamic vinegar & brown sugar, turn to low heat and continue frying until soft, deep golden and sticky (15mins+). Don't let then catch on the pan and go crisp at any point, low and slow is the aim of the game here. If they brown at any point just lower the heat (see notes).
  • Grilled Cheese: Wipe out pan and add two slices of bread with the heat OFF. Spread with butter then flip so they're butter-side-down. Add 3 wedges of brie each (or enough to cover), top with a dollop of onions and finish with a few pinches of fresh thyme (optional).
  • Fry: Top each with another slice of bread and spread with butter. Turn heat to a medium and fry both sides until golden, with the brie just starting to spill out. Repeat with second batch and enjoy!

2 ounces Brie, thinly sliced
1 tablespoon jam or orange marmalade
2 slices white or potato bread

Steps:

  • Pre-heat a small pan over medium heat. Melt half the butter in the pan.
  • While the pan heats up, add the Brie and jam to a slice of bread, and top with the remaining slice.
  • Set sandwich in the hot pan, and cook about 2 minutes. Flip, add the remaining butter, and cook until golden.
  • Cut in half and serve immediately.

1/2 cup stone-ground mustard
2 tablespoons honey
2 tablespoons mayonnaise
8 slices raisin walnut bread
4 tablespoons salted butter, at room temperature
8 slices sharp Cheddar
12 very thin slices Granny Smith apple
1/4 cup sweet cherry pepper relish
One 8-ounce wheel Brie, sliced into 8 slices

Steps:

  • For the dipping sauce: Add the mustard, honey and mayonnaise to a medium bowl and whisk until combined. Set aside.
  • For the sandwiches: Heat a 12-inch nonstick skillet or griddle over medium-low heat. Coat one side of each bread slice with butter and place 2 pieces butter-side down in the skillet. Layer one piece of bread with 2 slices Cheddar and 3 slices apple. On the other piece of bread, spread 1 tablespoon pepper relish and add 2 slices Brie. Cover and let cook until the bread starts to brown and the cheese starts to melt, 2 to 3 minutes.
  • Flip the Cheddar piece of bread onto the Brie piece to create a sandwich, then cover again and let cook until the cheese is melting over the sides of the bread, another 2 to 3 minutes. Repeat the process until all the sandwiches are made. Serve with the dipping sauce and enjoy!

2 thick slices French bread
6 thin slices Brie cheese, or more to taste
12 fresh thyme leaves, or to taste
1 pinch cracked black pepper
6 slices pear (such as Bosc)
salt to taste

Steps:

  • Generously butter one side of each slice of bread.
  • Heat a skillet over medium heat.
  • Place bread slices butter-side down into hot skillet. Arrange Brie cheese slices on top of each piece of bread. Sprinkle thyme and cracked black pepper over the top.
  • Spread pear slices in a single layer over the Brie cheese on one slice of bread and top with a pinch of salt.
  • Flip the slice of bread without pears onto the slice of bread with the pear slices. Continue cooking sandwich until cheese and pear are heated through and cheese is melted, 2 to 3 minutes per side. Transfer to a plate and cut into halves.

This recipe takes baked brie to a whole new level by replacing jam with fresh fruit, herbs and nuts and infusing it all with a touch of smokey flavor from a cedar plank. Keep a close eye on it when grilling - the bottom rind will fully melt if cooked too long, causing the brie to lose its shape and release all the warm gooey cheese!

1/2 cup blackberries
1/3 cup diced strawberries
1 1/2 teaspoons red wine vinegar
1 1/2 teaspoons sugar
1 1/2 teaspoons chopped fresh thyme, plus leaves for garnish
Kosher salt and freshly ground pepper
1 8-ounce wheel brie cheese
2 tablespoons roasted salted almonds, roughly chopped
Crackers, for serving

Steps:

  • Put a cedar grilling plank in a large baking dish or on a rimmed baking sheet and cover with water; let soak at least 1 hour. Preheat a grill to medium to medium high.
  • Put the blackberries in a medium bowl and lightly crush with a fork. Add the strawberries, vinegar, sugar, thyme, a big pinch of salt and a few grinds of pepper. Stir, then let stand at least 5 minutes.
  • Drain the cedar plank. Trim just the top rind off the brie. Place the brie on the plank and top with the berry mixture, reserving some of the juices for serving. Sprinkle with the almonds.
  • Place the plank on the grill and cover. Cook until the brie is softened and warmed through, 9 to 11 minutes (keep an eye out during the last few minutes in case the brie starts to melt out of the rind). Gently press the side of the brie to see if it's ready; it should yield to pressure. Drizzle with the reserved berry juices and sprinkle with a few thyme leaves. Serve warm with crackers.
