- 1. Grind the beef liver and take out all of the veins. Put ground liver in a bowl and add finely cut up onion which was sautéed in the butter just until translucent. Add garlic, salt, pepper, eggs and enough cracker crumbs to form a medium dough. Drop by teaspoon full into rapidly boiling soup broth.
- 2. This soup is prepared like a noodle soup only the liver dumplings are used in place of the noodles. Do not overcook! A true dumpling is never the same shape or size! The Bohemian term for dumplings is "Knedliky". Pronounced ka-ned-lick-ee.
GRANDMA'S CHICKEN AND DUMPLING SOUP
Another TOH favorite. This is time consuming but wonderful and sometimes it's nice to just slow down and stay inside! Notice that I have not included the cooling time for the chicken.

Steps:
- Place chicken, water, bouillon, peppercorns, and cloves in kettle and bring to a boil.
- Later you must remove the cloves.
- Reduce heat; simmer until chicken is tender (about 1 hour).
- Cool chicken just slightly; cut into bite size pieces and set aside and look for the cloves.
- Strain and skim the chicken broth.
- Put the reserved chicken and strained broth in a large kettle; add cans of broth, chicken and mushroom soups, celery, carrots, onion, potatoes, bay leaf, peas, and one teaspoon of salt.
- Put cover onto kettle; simmer soup on low heat for 2-3 hours, or until the vegetables are tender.
- About 30 minutes before serving, mix up dumplings by putting flour, one teaspoon salt, baking powder, and pepper together in a medium bowl.
- Add egg, melted butter, and enough milk to make moist, stiff batter.
- Drop by teaspoons into boiling liquid.
- Cook, covered and without "peeking", for 18-20 minutes or until the dumplings are done.

- Place chicken in a large stock pot. Add enough water to just cover chicken. Simmer covered, until chicken is cooked through.
- Remove Chicken and debone, discard bones and skin. Chop remaining meat.
- Add the rest of Soup ingredients, including chopped chicken, to the broth in the stock pot. Simmer uncovered, 2-3 hours, until veggies are tender.
- For the dumplings, mix together flour baking powder and salt in a large bowl. Add oil and milk, mix until just combined.
- Drop by heaping tablespoonfuls onto simmering soup. Do not mix. Cook for 10 minutes uncovered, then 10 minutes tightly covered. Serve hot by carefully scooping into bowls keeping dumplings intact.

GRANDMA'S CHICKEN AND DUMPLINGS
This is one of my family's favorite recipes for chicken and dumplings, handed down to me from my grandmother. And the leftovers taste great, too!

- Mix flour and shortening together in a bowl until it resembles cornmeal.
- Slightly beat egg and milk together in a separate bowl. Add to flour mixture and stir to form a ball of dough. Place onto a floured surface; knead and roll as thin as possible using a floured rolling pin. Let dough stand for 2 hours.
- Place chicken into a large pot and add water to just cover. Bring to a boil over high heat and continue to boil until chicken is no longer pink in the center and meat falls off of the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
- Remove chicken from the pot; strain broth and return to the pot. Add 2 cups water and bouillon. Remove meat from bones and return to broth. Add celery, carrots, and onion. Bring to a boil; continue to boil for 15 minutes.
- Meanwhile, cut dough into strips, approximately 1-inch wide. Tear strips and drop into boiling broth. Continue to boil for 10 minutes more. Season with salt and pepper and serve.

GRANDMA'S EASY HUNGARIAN DUMPLING SOUP
Grandma made these dumplings in her homemade tomato soup, it was my idea to make them with chicken soup. So you can make them however you want, I just love them so much I put them in Ham & Bean soup and they are wonderful.

- 1. Put the broth, chicken, & parsley flakes in a pot and begin heating.
- 2. Meantime make the dumplings: put the flour in a bowl with the baking powder & salt, mix well. Put the eggs in a measuring cup and beat with a fork then add milk to make a cup. (this should be enough milk but if not add more milk). Make it a consistency that can be dropped off a spoon.
- 3. When the soup begins to boil dip your spoon to heat it so the dumpling mixture does not stick to the spoon. Take appx. a teaspoon of mixture and dip it into the soup until all the dumplings are in the soup.
- 4. After the last dumpling is put in the soup, cook for just a few minutes, they cook very quickly you are ready to eat!
- 5. Note: you can put carrots, onions, celery or any thing else you want in this soup. My husband cannot eat somethings so I make it plain and it is great. Make on a cold winter day and it will warm you right up!

- 1. Mom always used a cast iron fry pan on medium heat to melt the butter, then add flour (sift it in) then stir in the water to make a thick paste, remove from heat and cool then add two eggs well beaten, nutmeg and salt (mom used more nutmeg) so will add about 1/2 teaspoon in total.
- 2. Mix well till the egg is absorbed in paste mixture. Dip spoon in boiling broth and drop by spoonfuls into soup, cook covered over medium low heat for 20 minutes, don't remove lid while cooking. ENJOY

- Slice hard rolls thinly and place in a large bowl; set aside to dry overnight.
- Add the water to the chicken, season to taste and cook slowly for several hours.
- An hour or so before serving time, make soup balls as follows:
- Soak bread in warm milk. Bread should be moist, but not soggy.
- If using, fry onion and bacon in butter until onion is tender (If not using skip to step 7).
- Stir onion and bacon into moist bread.
- Add parsley flakes, eggs, salt and pepper to bread.
- Stir to combine all ingredients.
- Shape into large dumplings.
- Drop into boiling soup.
- Simmer uncovered, for 20 minutes, or until dumplings rise to surface.

- 1. First thing after you rice or finely mash your potatoes put them into the fridge. When the potatoes are cold, add the remaining ingredients. Mix in the order given above. Shape into small balls or drop by teaspoons full into a large pot of boiling water that has 1 teaspoon of salt added to it. Cover with a lid. When they come back to a boil stir to loosen them if some are stuck to the bottom. Replace lid and boil for 10 to 15 minutes. Test your dumplings by taking one out of water and cutting it in half. If the center is raw cook them a few minutes longer.
- 2. Grandma traditionally served this with pork roast and sauerkraut. She also used pork chops, beef roast, beef tongue, roasted pig's ears, pig's feet, ox tail, etc. Grandma Helen's were and still are the best potato dumplings I have EVER tasted!
NORTH CROATIAN LIVER DUMPLINGS FOR SOUP
This is one of my favorite soup dumplings. The good thing is that you can freeze surplus and use them later for another meal. It can stay in refrigerator about 3 months at -20°C. The procedure with frozen dumplings is the same as with fresh when putting them into soup.

- Cover breadcrumbs with milk and wait until breadcrumbs soaks milk. Mince garlic, onion parsley leaves and add marjoram.
- Sauté onion on butter until becomes translucent.
- Mince the liver and sauté them shortly on butter with onion and garlic (just to become grey).
- Add eggs, parsley, marjoram, salt, pepper. Mix well all ingredients and shape them into balls approximately 1 inch in diameter.
- Cook them in hot soup 3-5 minutes (depends on size). Be careful, soup mustn't wildly boil otherwise dumpling will disintegrate.
- If you want to freeze them put them on foil on hard surface making sure they don't touch each other. Freeze them completely and than put into bag. You can take them one by one and follow the above mentioned cooking procedure.

This came from a Taste of Home recipe collection from several years ago. It is requested by my family several time a year. Great during cold weather and when you are feeling under the weather. Takes a little time to prepare, but well worth it.

- Cover and bring to boil; skim fat.
