Easy Key Lime Pie image

You need only five ingredients to create this refreshing, easy Key lime pie. It's special enough for weekend potlucks, but easy enough to make for a weeknight dessert. —Taste of Home Test Kitchen

1 can (14 ounces) sweetened condensed milk
1/2 cup Key lime juice or lime juice
1 graham cracker crust (9 inches)
2 cups whipped topping
Lime slices, optional

Steps:

  • In a large bowl, beat cream cheese until smooth. Beat in milk and lime juice until blended. Transfer to crust. Refrigerate, covered, at least 4 hours. Just before serving, garnish with whipped topping and, if desired, lime slices.

1 (9 inch) prepared graham cracker crust
2 (8 ounce) packages cream cheese, softened
2 (14 ounce) cans low-fat sweetened condensed milk
¾ cup key lime juice
1 teaspoon grated lime zest
¼ teaspoon salt
1 cup heavy cream, chilled
1 teaspoon vanilla extract
3 tablespoons confectioners' sugar

Steps:

  • To Make Lime Filling: In a large mixing bowl, whip cream cheese until fluffy. Add condensed milk, lime juice, lime rind, and salt. Whip until mixture is smooth. Pour into graham cracker crust. Cover with plastic wrap and chill thoroughly.
  • To Make Topping: In a medium bowl, whip cream until soft peaks form. Add vanilla or lemon extract and confectioners' sugar. Continue to whip until cream forms stiff peaks. Place topping in a fine-mesh sieve and place sieve over a bowl to catch liquid that drains off. Cover topping tightly with plastic wrap and allow to drain for 2 hours.
  • Before serving, discard liquid that has drained from topping. Spread topping over pie.

1-1/2 cups shortbread cookies
3 tablespoons butter, melted
LIME FILLING:
1 cup sugar
1/4 cup cornstarch
3 tablespoons all-purpose flour
1/4 teaspoon salt
2 cups water
3 large egg yolks, beaten
1 tablespoon butter
1 teaspoon grated lime zest
Green liquid food coloring, optional
1/4 cup lime juice
CREAM CHEESE FILLING:
1 package (8 ounces) cream cheese, softened
1/2 cup confectioners' sugar
2 teaspoons lime juice
1 cup whipped topping

Steps:

  • Combine cookie crumbs and butter; press onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake at 375° for 8-10 minutes or until crust just begins to brown. Cool on a wire rack., For lime filling, combine the sugar, cornstarch, flour and salt in a saucepan. Stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount for hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Stir in butter, lime zest and food coloring if desired. Gently stir in lime juice. Cool to room temperature without stirring., For cream cheese filling, beat cream cheese, confectioners' sugar and lime juice in a small bowl until smooth. Fold in whipped topping. Spread evenly in crust; top with lime filling. Refrigerate for 3 hours or until firm. Refrigerate leftovers.

1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
3 egg yolks
1/2 cup nellie & joe famous key west lime juice
1 9-inch graham cracker crust

Steps:

  • Preheat oven to 350 degrees.
  • Beat softened cream cheese until creamy.
  • Add sweetened condensed milk and beat to incorporate.
  • Add egg yolks and beat well.
  • Add lime juice and beat till combined.
  • Pour mixture into pie crust and spread with spatula until evenly distributed.
  • Place on cookie sheet and then into the oven and bake for 10 min.
  • until the filling begins to set.
  • Remove from oven and allow to cool on rack at room temp.
  • Then place in the refrigerator for at least an hour.
  • Two works better.
  • Cut into 8 slices and serve with a generous helping of whipped cream.

1/2 cup cornstarch
2-1/2 cups cold water
1/8 teaspoon salt
3 large eggs yolks, lightly beaten
3 tablespoons butter
2/3 cup lemon juice, divided
1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1 package (3.4 ounces) lemon-flavored instant pudding mix
2 pie shells (9 inches), baked
Whipped cream
Lemon slices

Steps:

  • In a large saucepan, combine the sugar, cornstarch and salt. Stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. , Remove from the heat. Stir in butter. Gently stir in 1/3 cup lemon juice. Cool for several hours or overnight., In a large bowl, beat cream cheese and condensed milk until smooth. Stir in pudding mix and remaining lemon juice. , Fold into chilled lemon filling. Divide and spoon into baked pie shells. Refrigerate for several hours. Garnish with whipped cream and lemon slices.

I looked through every lime pie recipe listed here, and can't find one similar, so decided to post this. My mom won first place in the cream pie category at a cook off in their retirement community in Texas. I think the cream cheese gives it just that bit of difference.

1/2 cup sugar
1 tablespoon sugar
4 tablespoons cold butter, cut in pieces
2 large eggs
4 tablespoons lime juice
1 lime, zest of
8 ounces cream cheese
2 tablespoons lime zest
2 tablespoons lime juice
2 cups whipping cream
1/4 cup powdered sugar
lime curd, made from recipe above
1 1/4 cups graham cracker crumbs
1/2 cup sugar
1/4 cup butter, melted

Steps:

  • Lime curd: Cook over medium heat: the sugar, butter, eggs, & lime juice, whisking until a mark holds (about 12 - 15 minutes). Stir in the zest & cool. Can be made up to one week ahead, kept in covered container.
  • Crust: Mix crumbs, butter & sugar well. Pat into a 9 inch pie pan. Refrigerate until firm.
  • Pie filling: Beat together: cream cheese, lime curd, lime zest, & lime juice. Whip the cream and powdered sugar. Fold 1/4 of the whipped cream into the cream cheese mixture & then fold in the rest. Put into graham crust & chill.
  • Garnish with whipped cream & lime slices.
