I fell in love with apfelkuchen when I was in 6th grade. Our teacher let us order from a local German bakery and eat our treats in class once a month. These flavors bring back wonderful memories.

2 ¼ cups sifted all-purpose flour
1 ⅛ cups warm milk
¼ cup white sugar
1 (.25 ounce) package active dry yeast
6 tablespoons butter, softened
1 tablespoon vanilla extract
1 pinch salt
3 large apples - peeled, cored, and sliced
1 cup white sugar
¾ cup sifted all-purpose flour
2 ounces candied lemon peel, chopped
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 pinch salt
½ cup butter

Steps:

  • Grease the bottom and sides of a 9x13-inch baking dish or a 9-inch springform pan.
  • Beat 2 1/4 cup flour, milk, 1/4 cup sugar, yeast, 6 tablespoons butter, vanilla extract, and 1 pinch salt in a large bowl with an electric mixer on high until dough is smooth, about 5 minutes; spread into baking dish and press dough up the sides. Press apple slices into dough.
  • Mix 1 cup sugar, 3/4 cup flour, candied lemon peel, cinnamon, nutmeg, and 1 pinch salt in a bowl. Cut in 1/2 cup butter with a knife or pastry blender until mixture resembles coarse crumbs; sprinkle over apples. Allow dough to rise for 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven until cake is golden brown and apples are tender, about 35 minutes.

or Sunken Apple cake. This is based on a recipe my grandmother used. The apples are placed on top of the dough, which raises as baked, making the apples appear as if they have sunk into the cake.

2/3 cup soft butter or 2/3 cup margarine, plus some for the form
2/3 cup sugar
2 teaspoons vanilla sugar
1 pinch salt
2 -3 drops almond extract (optional)
2 eggs
1 cup flour
1 teaspoon baking powder
1/2 cup ground almonds (optional)
8 apples (approx.)
1 lemon, juice of (optional)
1/3 cup currants (optional)
1/4 cup slivered almonds (optional)
1 teaspoon icing sugar, for dusting

Steps:

  • Preheat oven to 350 degrees.
  • Beat the butter or margarine with a wooden spoon or mixer until creamy. Slowly add the sugar, together with the vanilla sugar, salt and almond extract, alternating with the eggs. Mix the dough until it is very foamy and the sugar has been thoroughly dissolved. Sift in the flour with the baking powder, add the ground almonds, and mix everything together quickly.
  • Carefully coat a springform with butter or margarine. Pour the batter in and smooth down the surface. Peel the apples, cut in half lengthwise, and remove the cores. Cut into the outer surface a few times with a knife, but don't cut all the way through. Brush apples with the lemon juice. Place the apples close together onto the batter, core side down. Soak the currants for a short time in hot water, wash thoroughly and rub dry in a cloth. Sprinkle the currants, together with the slivered almonds over the apples. Bake the cake at 350 degrees for 75-80 minutes or until golden brown. Remove from the oven and let cool before dusting with icing sugar.
  • Serve with whipped cream.
  • Note: I always leave out the optional items as I find they don't they add much to the flavour of the cake.

½ cup butter or margarine, softened

2 large eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour two 9 inch round cake pans. Soak the raisins in boiling water while the oven preheats.
  • Cream together 1/2 cup butter or margarine with 1 cup sugar until fluffy. Beat in the eggs one by one, then add the almond extract and milk. Sift together the flour, salt, and baking powder; stir into the creamed butter to form a loose dough.
  • Divide the dough in half and press each half into the bottom of a prepared cake pan, bringing it slightly up the sides. Drain the raisins and scatter them over the dough. Arrange the apple slices in a spiral pattern over the raisins, overlapping slightly. Sprinkle with the remaining 1/2 cup of sugar and drizzle with 1/2 cup of melted butter or margarine.
  • Bake in preheated oven until apples are soft and the dough is lightly browned, about 30 minutes. Serve warm or at room temperature.

2 medium tart apples, peeled, cored and halved
1 cup plus 2 tablespoons unsalted butter, softened

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Apfelkuchen is a german apple cake or pie-like dish. It is one of those recipes where every family has a different recipe so there are hundreds of different recipes. This was a recipe that I found on the internet many, many years ago for a project in German class in high school and have not found one similar to it anywhere. I LOVE this Apfelkuchen and being of mostly German heritage I love it even more! It is more of a custard type pie but it is by far one of the best apple dishes I have ever had! I always make sure to make it every year when apples are in season!

3 cups sliced apples
1 (9 inch) unbaked pie shells
1/2 teaspoon cinnamon
4 tablespoons butter, divided
2/3 cup sugar
2 eggs
1 teaspoon salt
1 1/2 teaspoons vanilla extract
3 ounces cream cheese, softened
1/3 cup brown sugar
1/2 cup flour
1/2 cup chopped pecans

Steps:

  • Place pie shell in a round cake pan (not a pie pan). Toss apples with cinnamon and place in pie shell. Cream 2 tablespoons butter, sugar, and eggs together. Add salt, vanilla, and cream cheese. Blend until just smooth and pour over apples. Combine brown sugar, flour, and 2 tablespoons butter, add pecans. Crumble this mixture on top of pie. Bake at 375 degrees for 45 minutes. Reduce heat to 350 degrees and continue to bake for 15 minutes. Allow to cool and serve.

1/4 cup fresh lemon juice
5 Granny Smith apples, peeled, cored and sliced into 1/8-inch wedges
One 15.25-ounce box white cake mix
1 1/4 cups apple cider
1/3 cup sour cream
3 large eggs, whisked
Nonstick cooking spray, for the pan
2 1/2 cups packed light brown sugar
1 cup all-purpose flour
1 teaspoon cinnamon sugar, plus more for dusting
2 sticks (1 cup) salted butter, frozen for 20 minutes
Sunny's Bourbon Whipped Cream, recipe follows
1 cup heavy cream
1 tablespoon bourbon
1 tablespoon granulated sugar

Steps:

  • Preheat the oven to 325 degrees F.
  • For the apples: Add the lemon juice and 2 cups of water to a large bowl and stir. Add the apple wedges. Set aside.
  • For the batter: Add the cake mix to a large bowl. Whisk together the cider, sour cream and eggs in a separate bowl. Add the wet ingredients to the cake mix and stir until combined.
  • For the streusel: Add the brown sugar, flour and cinnamon sugar to a large bowl. Stir to combine. Using a box grater, shred the chilled butter into the bowl. Use a pastry cutter or fork to mix and toss the mixture until crumbly. Place back in the refrigerator if needed while preparing to bake.
  • To assemble: Spray the bottoms and sides of a 9-inch springform cake pan with cooking spray. Place a circle of parchment paper on the bottom and spray again. Pour half of the cake batter in the pan. Sprinkle the top with half of the streusel mixture, then add half of the apple slices in a circular fanning pattern. Repeat the layers and dust the top with cinnamon sugar.
  • Bake until a wooden skewer inserted in the center of the cake comes out clean, 1 hour 30 minutes to 1 hour 45 minutes. Cool on a rack for 30 minutes before releasing the spring form.
  • For serving: Serve the cake slices with Sunny's Bourbon Whipped Cream.
  • In a large bowl, whisk the heavy cream until light and soft. Add the bourbon and granulated sugar and continue to whisk until soft, lazy peaks form when the whisk is removed from the bowl. Refrigerate and serve cold.

Steps:

  • Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.
  • To make the crust: Place the flour, sugar, and salt in a large bowl or food processor fitted with a steel blade and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan and transfer to the oven. Bake until slightly golden but not brown, about 12 to 15 minutes. Set aside to cool.
  • Lower the oven temperature to 400 degrees.
  • To make the filling: Place the cream cheese, sugar, and vanilla in the bowl of a mixer fitted with a paddle and beat until creamy. Add the egg, mix to combine, an pour over the cooled crust.
  • Place the sugar and cinnamon in a small bowl and mix to combine.
  • Place the apples on top of the filling in two or three columns. Sprinkle with the cinnamon sugar and transfer to the oven. Bake until firm and a rich brown, about 20 minutes. Cut into 20 to 24 pieces.

Cinnamon and lemon infused apples encased in a sweet vanilla pastry.

400g flour
200g of vanilla sugar (or caster sugar and good vanilla essence if you cannot find this)
200g unsalted butter (room temperature)
2 teaspoons baking powder
1 large egg
2 or 3 cooking apples
Cinnamon
1/2 lemon and rind
1/2 lemon

Steps:

  • Pre heat oven to 200c, then peel and cut the apples into slices add to sauce pan and heat. Add in 3 large pieces of lemon rind and a squeeze of half a lemon and add cinnamon to taste. Cook until the apples have softened a bit, and leave to cool.
  • On the kitchen counter add the flour, incorporate the baking powder into the flour and mix with fingers. Create a well in the flour and add the sugar to the centre (if you cannot find vanilla sugar - then use caster and add some good vanilla essence or even a fresh vanilla pod). Create another well in the sugar and crack in the egg.
  • With your fingers, begin mixing the egg into the sugar.
  • Add the softened butter and mix into the sugar mix. Then begin to incorporate the rest of the flour to make the sweet pastry.
  • Once needed together, separate the pastry into 2 even oprtions and from each, grab some spare pastry (equalling about a small handful). Grease the cake tin with some butter and with one of the halves of pastry, roll out, and line the bottom of the cake tin with the pastry (you can have this relatively thick - add to bottom of tin and add the cut off's to the other pile of pastry). Prick the pastry and add into the oven for approx 20 mins - sometimes a little less - until just golden.
  • Take out and let it cool a little.
  • Once the cake tin has cooled, take the sausages of pastry, and line round the circumference of the cake tin, then with your fingers, press the pastry up the edges of the tin so you are joining the baked bottom half, and creating the edge of the cake - if you need to add some more, just take some pastry from the other mixture - make sure there are no holes round the edges. Take the lemon peel out of the apples mixture, and add the mixture to the cake tin and spread around evenly.
  • Then add your top rolled pastry, covering all the apples, and press together the edges of the pastry, with the edges you created up the sides of the tin with your finger so all the pastry in cases the mixture and is sealed all round. Prick the top of the pastry and pop in the oven for about 20 minutes until golden.
  • Mix together a good amount of icing sugar and freshly squeezed lemon to create the icing. Once cake has cooled, put it on a plate and ice with the lemon and icing mix. Then get a big knife, cut yourself a piece and serve it with a big dollop of cream and a big cup of coffee!!!
  • You can experiment with the filling. I have created and Apfelkuchen with Amaretto soaked cherries and lime icing, which has a great festive taste. You can include dried fruits, pears, or whatever takes your fancy. It is also really good the next day when the cake has rested and the flavours have combined.

1 cup confectioners' sugar, or 1/2 cup confectioners' sugar and 1/2 cup light brown sugar
1/2 teaspoon vanilla or almond extract
1 to 2 tablespoons milk or water

Steps:

  • 1. Preheat the oven to 350°F. Grease a kugelhopf or 10-inch Bundt pan.
  • 2. Sift together the flour, baking powder, and salt. Beat the butter until smooth, about 1 minute. Gradually add the sugar and beat until light and fluffy, about 4 minutes. Beat in the egg yolks, one at a time. Stir in the flour mixture and milk.
  • 3. Beat the egg whites on low speed until foamy, about 30 seconds. Increase the speed to high and beat until stiff but not dry. Fold one-fourth of the whites into the batter, then gently fold in the remaining whites.
  • 4. Pour half of the batter into the prepared pan. Spread with half of the apples. Top with the remaining batter, then the remaining apples.
  • 5. Bake until golden brown, 50 to 60 minutes. Let cool in the pan for 20 minutes, then transfer to a rack and let cool completely.
  • 6. To make the glaze if using: Combine all the glaze ingredients, stirring until smooth and of pouring consistency. Drizzle over the cake and let stand until set.
