SMALL BATCH ICING- TO WRITE ON CAKES

Small Batch Icing- to Write on Cakes image

Sometimes you just need a small amount of icing to write on a cake or cookies. I don't like buying those ready made tubes because they're so expensive for such a small amount of icing. They don't taste that good either. Here's the recipe I use when I just need a small batch. You can tint it any color you want by adding food coloring. The paste coloring is best but the drops will work fine, too.

Provided by Realtor by day

Categories     Dessert

Time 11m

Yield 1 1/4 cups, 4 serving(s)

Number Of Ingredients 4

1 cup confectioners' sugar
1/4 cup shortening
1 1/2 teaspoons water
1/4 teaspoon clear vanilla extract

Steps:

  • In a large bowl, combine sugar, shortening, water and vanilla. Beat on low speed to combine, then beat on medium speed for a full five minutes. It won't look like Icing at first, but keep the mixer going for a full five minutes, and then you're done!
  • Note: If you're not using this for decorating, but just for icing the cake, thin the icing by adding 3 tbs. of corn syrup, or water to the icing.

APPLE-CRANBERRY CRISP WITH OATMEAL-COOKIE CRUMBLE

Apple-Cranberry Crisp with Oatmeal-Cookie Crumble image

Inspired by the bright flavors of cranberry sauce, tangy cranberries and sweet orange zest add a floral tartness to this apple crisp, topped with an oatmeal cookie crumble studded with almonds. The crumble topping can be made and frozen up to 1 week ahead of time while the full crisp can be assembled and refrigerated up to 1 day before, so it can easily be baked to serve after Thanksgiving dinner.

Yield 12-16 servings

Number Of Ingredients 26

For the Almond-Oat Crumble:
1 cup all-purpose flour
1 cup granulated sugar
1 cup old-fashioned oats
1/2 cup (packed) light brown sugar
1 teaspoon vanilla extract
3/4 teaspoon baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon freshly grated nutmeg
3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces, room temperature
1/2 cup sliced almonds
For the Apple-Cranberry Filling:
7 1/2 pounds baking apples (such as Honeycrisp, Braeburn, and/or Golden Delicious; about 16), peeled, cored, cut into 1/8" slices
1 1/4 cups fresh or frozen cranberries, thawed if frozen
1 cup granulated sugar
1/2 cup all-purpose flour
1/2 teaspoon finely grated orange zest
2 tablespoons fresh orange juice
1 teaspoon ground cinnamon
3/4 teaspoon kosher salt
1/2 teaspoon freshly grated nutmeg
To serve:
Sweetened whipped cream or vanilla ice cream and toasted almonds (for serving)
Special Equipment
A 4-quart baking dish, braising pan, or Dutch oven (at least 12" in diameter and 2 1/2" deep)

Steps:

  • Make the crumble:
  • Mix flour, granulated sugar, oats, brown sugar, vanilla, baking powder, cinnamon, salt, and nutmeg in a large bowl. Add butter and mix with your hands until mixture feels like damp sand and clumps form. Add almonds and mix with a wooden spoon until evenly distributed and large, walnut-sized clumps form. Freeze 30 minutes.
  • Make the filling:
  • Toss apples, cranberries, granulated sugar, flour, orange zest and juice, cinnamon, salt, and nutmeg in a large bowl. Let stand 10 minutes.
  • Bake the crisp:
  • Meanwhile, preheat oven to 350°F. Place baking dish on a foil-lined rimmed baking sheet (if using a Dutch oven, you don't need the baking sheet).
  • Toss apple mixture again, then transfer to baking dish, leaving some juices behind. Break crumble into smaller pieces, leaving some larger clumps. Top apples with crumble, mounding slightly if needed.
  • Bake apple crisp until crumble is golden brown and filling is bubbling through in the center, about 1 hour. Transfer baking dish to a wire rack and let cool 10 minutes. Serve warm with whipped cream or ice cream topped with almonds.
  • Do Ahead
  • Crumble can be made 1 week ahead; cover and freeze. Crisp can be assembled 1 day ahead; cover and chill.

SMALL BATCH OF CHEWY MINI MUFFIN-COOKIES

Small Batch of Chewy Mini Muffin-Cookies image

What a great little, I mean little in quantity, sweet little treat. I adapted this from a One Cookie recipe here on Recipe Zaar. When I made, it made exact amount for two, or four really, but we, two of us, ate all in one night. A great recipe when you don't want to make too much, just right and super quick and simple! Enjoy!!!

  • WET INGREDIENTS: Combine the brown sugar, white sugar, and room-temperature butter (not melted) in a bowl. This takes a bit of patience to mix together; press the butter into the sugars with the back of a spoon and gently mix until smooth. Add in the vanilla and egg yolk; stir to combine.
  • DRY INGREDIENTS: Stir in the oats, salt, cinnamon, baking powder, and baking soda. Next, add in the flour and chocolate chips and stir to combine.
  • FORM COOKIE BALLS: Using a cookie scoop or your hands, make four equal-sized balls of the batter (if using a scale, each ball weighs 45 grams) and place on a parchment paper-lined cookie sheet. Place in the freezer for 15 minutes.
  • BAKE: Preheat the oven to 350 degrees F. Once cookie dough has been in the freezer for 15 minutes, take the sheet pan straight from the freezer to the oven. Bake for 10-14 minutes (my oven takes exactly 12 minutes) or until lightly browned around the edges.
