WHITE CHOCOLATE CHIP MACADAMIA NUT COOKIES
I got this recipe from a friend since I'm a big fan of white chocolate and I loved it! I'm not sure where she got it, but I thought it was good enough to post here for anyone who's looking for a good cookie recipe!

Steps:
- Preheat oven to 350°F.
- In medium bowl combine flour, soda and salt. Mix well, set aside.
- In a large bowl with a mixer blend sugars at medium speed. Add butter and mix to until it forms a grainy paste, scraping down the sides of the bowl. Add eggs and vanilla, and beat at medium speed until fully combined.
- Add the flour mixture, macadamia nuts and white chocolate chips, and blend on low speed until just combined. Do not overmix.
- Drop by rounded spoonfuls onto ungreased cookie sheet. Bake for 10-12 minutes or until edges begin to brown. Move immediately to cooling rack.

Steps:
- Preheat oven to 375°.
- Cream the butter and add the sugars.
- Beat in the vanilla extract and eggs.
- Add dry ingredients; mix well.
- Add in white chocolate chips and nuts.
- Combine mixture until well blended.
- Using a medium cookie scoop (or two tablespoonfuls batter) drop on ungreased baking sheet.
- They are large, so you may need to flatten a little before baking.
- Bake for 10 minutes.
COPYCAT WHITE CHOCOLATE MACADAMIA NUT COOKIES
My favorite store-bought cookie is the Great American Cookie Company's White Chocolate Macadamia Nut cookie. It's better than any macadamia cookie out there ... anywhere. I FINALLY found a copycat recipe online (recipelink.com) that's as close to GACC's version as you can get. Enjoy!

- 1. Preheat oven to 300 degrees. In a large bowl, cream together the butter and sugar on high speed.
- 2. Add coconut, egg, milk and vanilla; mix well.
- 3. In another bowl, combine flour, baking soda, baking powder, and salt. Add the dry mixture to the wet mixture and combine until dough forms.
- 4. Mix in the white chocolate and nuts.
- 5. Measure out about 2-1/2 tablespoons dough and form a ball. Drop each ball of dough onto an ungreased cookie sheet about 3 inches apart. Bake for 12-14 minutes. (I use a cookie scoop for less mess)
- 6. DO NOT OVERBAKE. Cookies should come out of the oven appearing slightly browned, yet undercooked. When cooled, the cookies will be soft and chewy like the original.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Stir in nuts and baking chips., Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 1 minute. Remove to wire racks to cool completely. Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. - •Make sure the oven keeps the right temperature. The cookies may need a minute or two more or less than stated.
- •Preheat oven to 350 degrees F.
- •Line baking sheets with parchment paper (no need to grease).
- •Measure flour, baking soda and salt in a large bowl and blend together. Set aside.
- •In a large mixing bowl, preferably a heavy-duty mixer, and using the paddle or beater attachment, beat butter until creamy.
- •Add brown sugar and beat again. Scrape down the bowl and add the granualted sugar. Beat until fluffy.
- •Add eggs one at a time, beating after each addition.
- •Add vanilla, beat and scrape again.
- •On low speed, add flour mixture 2 cups at a time, and mix well.
- •Mix in white chocolate and macadamia nuts. Mix only until blended.
- •Using a cookie scoop, place dough on prepared baking sheets, spacing evenly to allow for spreading.
- •Bake at 350 degrees for 10-12 minutes or until lightly browned. Do NOT over bake these cookies. They continue to bake for a few minutes after they are removed from the oven.
- •Transfer to cooling racks. Store in air tight container or plastic bag to stay soft and moist.
- •Makes 48 warm and gooey cookies.
