Dressed up for the table with fresh berries and mint sprigs, seltzer and syrupy raspberry vinegar make a thirst-quenching combination.

Number Of Ingredients 5

Ingredients

1/4 cup raspberry vinegar
6 tablespoons sugar
2 quarts seltzer (about 2 liters)
Garnishes: raspberries
Fresh mint leaves

Steps:

Bring vinegar and sugar to a boil in a small saucepan over medium heat. Boil, stirring occasionally, until sugar is dissolved, about 1 minute. Set syrup aside to cool. Put syrup in a pitcher; stir in seltzer, add ice, and serve.

In a cocktail shaker (or small jar), combine the raspberry jam, fresh raspberries, and fresh mint leaves. Muddle them (with a muddler or end of a wooden spoon) until the berries are broken up— about 15 seconds. Add vodka and stir or muddle a little more.
Pour the muddled berries through a small fine mesh sieve into a glass. Make sure to push all of the juice out to get the full flavor!
