TUNA QUESADILLAS
Made with some pretty humble ingredients, these cheesy tuna quesadillas take a simple can of tuna up a notch and turn it into something extra special! Made in under 30 minutes, this tuna quesadilla recipe is sure to be a favourite for your next taco Tuesday!

- Preheat your oven to 200 degrees Fahrenheit. This is used to keep your quesadillas warm while you are pan frying your batches.
- Meanwhile, in a medium bowl, mix the tuna with kosher dill pickle, mayonnaise, salt, black pepper, chives, and cayenne pepper until well combined.
- Distribute 1/2 of both Monterey Jack and cheddar cheese on top of one half of each tortilla.
- Top cheese with tuna mixture (about 1/3 cup per tortilla).
- Top tuna mixture with remaining Monterey Jack and cheddar cheese and distribute potato chips over top (crush any larger potato chips if needed).
- Fold over each tortilla so it's a half-moon shape.
- To cook quesadillas, heat 1 tablespoon of olive oil or vegetable oil in a large non-stick frying pan over medium-low heat and gently swirl around to coat.Note: Cook the quesadillas in batches, two quesadillas at a time, adding more oil to the pan between batches.
- Place two quesadillas in the pan. Cook quesadillas for 2 minutes on one side.
- Carefully flip the quesadillas to the other side and continue to cook for another 2 minutes or until they're golden brown and crispy on the outside and the cheese has melted inside (carefully watch to ensure they don't burn). Once done, transfer the quesadillas to a sheet pan and place into your preheated oven to keep warm while you are continuing to cook the remaining quesadillas.
- Repeat process to cook remaining quesadillas.
- Once the quesadillas are done, cut each in half so you end up with 12 pieces. Serve with your favourite dipping sauce or enjoy as is!

- Brush each side of tortilla with a little bit of oil.
- In a large skillet, put one tortilla, oiled side down.
- Spread half pesto and one can of tuna on the tortilla.
- Sprinkle with half the zucchini and cover with 3 slices of cheese.
- Add salt and pepper, if wanted.
- Cover with another tortilla, oiled side up.
- Heat at medium heat 4 to 6 minutes pressing with a spatula from time to time (flip at mid-cooking).
- Set aside and keep warm.
- Do the same with the remaining ingredients.
- When ready to serve, cut each quesadilla in 6 wedges.

- Cook onion, garlic, and 1/2 teaspoon salt in oil in a large heavy skillet over medium heat, stirring, until onion is softened. Add tomato and cook, stirring occasionally, until tomato breaks down, 3 to 5 minutes. Add blossoms and 1/4 teaspoon salt, then cover and cook, stirring occasionally, until tender, 4 to 5 minutes.
- Combine tortilla flour, water, and 1/4 teaspoon salt in a large bowl and knead until a uniform dough forms, about 1 minute.
- Pinch off enough dough to form a 1 1/2-inch ball and transfer to a plate; dough should be moist but not sticky. If necessary, knead in a little more tortilla flour or water. Form remaining dough into about 13 (1 1/2-inch) balls, transferring to plate, and cover with plastic wrap.
- Press 1 ball of dough between plastic squares in tortilla press to form a 5 1/2- to 6-inch tortilla (less than 1D16 inch thick). Peel off 1 plastic square, then, holding tortilla in your palm, put 1 rounded tablespoon cheese (1/2 ounce) on one side of tortilla and spread 1 rounded tablespoon filling in a flat layer over cheese, leaving a 3/4-inch border. Fold tortilla in half, using plastic square as an aid, and pinch edges to seal, flattening slightly.
- Make more quesadillas in same manner, arranging them in 1 layer and covering with plastic wrap.
- Very lightly oil comal (or pizza pan), then heat over medium-high heat until hot, about 2 minutes. Cook quesadillas, 3 at a time, until edges loosen from comal and brown spots appear on underside, 2 to 4 minutes, then turn over and cook, gently pressing quesadillas flat with a metal spatula if necessary, until brown spots appear on underside, 2 to 4 minutes more. Serve immediately with salsa on the side.
CHEESY TUNA AND ZUCCHINI NOODLE CASSEROLE

- Place spiralized zucchini (zoodles) into a pot and cover with well salted water; bring to a boil. Boil for 3 to 4 minutes, then empty into a colander to drain. Let drain for 2 to 3 hours, occasionally pressing out as much moisture as you can.
- Preheat the oven to 375 degrees F (190 degrees C). Lightly spray a 9x13-inch glass casserole with cooking spray and add drained zoodles.
- Bake zoodles in the preheated oven for 10 minutes.
- Meanwhile, melt butter in a skillet over medium heat. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and cook until softened, about 1 minute. Add cream cheese and cook until softened, about 2 minutes.
- Remove zoodles from the oven and pour off any liquid. Add the skillet mixture to the zoodles, along with tuna, peas, Cheddar cheese, salt, and pepper. Stir until well combined. Sprinkle almonds on top.

- Preheat oven to 400 degrees. In a large skillet, heat 3 tablespoons oil over medium heat. Add onion and 1 teaspoon salt; cook, stirring occasionally, until onion is soft, about 5 minutes. Stir in garlic; cook 1 minute more.
