12 oz cherry tomatoes, cut into quarters
1 to 2 shallots, finely chopped
1 garlic clove, minced
1/2 cup chopped fresh parsley
1/2 cup chopped fresh mint
6 to 7 pitted kalamata olives, chopped (optional)
1 jalapeno pepper, finely chopped (optional if you want to add spice)
Kosher salt and pepper
1/2 tsp to 1 tsp sumac
2 to 3 tsp lemon juice
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)

Steps:

  • Place quartered cherry tomatoes, chopped shallots, minced garlic, chopped fresh herbs, chopped kalamata olives (if using), and chopped jalapeno (if using) in a mixing bowl.
  • Season with kosher shalt, pepper, and sumac (start with a heaping 1/2 tsp sumac, add more late if needed). Toss gently.
  • Add lemon juice and a generous drizzle of quality extra virgin olive oil (I used Early Harvest EVOO). Toss to combine. Set aside for a few minutes to let the flavors marry.
  • Serve with pita chips or chips of your choice. Enjoy!

2 to 3 medium-sized fresh tomatoes (1 to 1 1/2 pounds), stems removed
1/2 red onion
2 serrano or 1 jalapeño pepper, stems, ribs, and seeds removed (less or more to taste)
Juice of 1 lime
1/2 cup chopped cilantro
Salt and pepper to taste
Pinch dried oregano (crumble in your fingers before adding), or more to taste
Pinch ground cumin, or more to taste

Steps:

  • Prep the ingredients: Roughly chop the tomatoes, chili peppers, and onions. Be careful while handling the chili peppers. Use a plastic baggie or disposable gloves to handle them, or wash your hands thoroughly with soap and hot water after handling and avoid touching your eyes for several hours. Set aside some of the seeds from the peppers. If the salsa isn't hot enough, you can add a few for more heat.
  • Make the salsa: Place all of the ingredients in the bowl of a food processor fitted with the blade. Pulse only a few times, just enough to finely dice the ingredients and not enough to purée. If you don't have a food processor, you can finely dice by hand.
  • Adjust seasonings: Place in a serving bowl. Add salt and pepper to taste. If the chilis make the salsa too hot, add some more chopped tomato. If it's not hot enough, carefully add a few of the seeds from the chilis, or add a little more ground cumin. If you like, let the salsa sit for an hour (room temperature or chilled) for the flavors to combine.
  • Serve: Serve with chips, tortillas, tacos, burritos, tostadas, quesadillas , or pinto or black beans. The salsa will keep refrigerated for up to 5 days.

5 red, ripe tomatoes, about 2 1/2 pounds
1 cup finely chopped red onions
1/4 cup freshly squeezed lime juice
2 tablespoons finely chopped seeded, deveined jalapeno peppers (add more or less according to taste)
1 teaspoon ground pepper, preferably white
Salt to taste, if desired
1/4 cup olive oil
1/4 cup finely chopped fresh coriander leaves

  • Cut away and discard the core of each tomato.
  • Cut each tomato in half crosswise. Use the fingers to press out the fleshy, seedy sections. Squeeze each half gently to ensure that most of the seedy sections are empty. Cut each unpeeled tomato half into quarter-inch cubes. There should be about three cups.
  • Put the tomato cubes into a mixing bowl and add the onions, lime juice, jalapeno peppers, white pepper, salt, oil and coriander. Blend. As the mixture stands, the volume will be reduced.

This recipe is my own modification of the one made famous by Linda McDaniel. Her recipe, for green tomato relish, is fantastic. But when the time came for me to make it, green tomatoes were not available. I did, however, have tomatillos. The flavor is decidedly different but I've come to love this sweet-n-tangy relish even more. I always keep a jar in the fridge but it never lasts too long. I have found it goes really well with ham (on English Muffins) or even just served with eggs (sunny-side up or poached) for an unusual but bright-tasting breakfast. This recipe makes about 5-1/2 Cups of relish and was configured to be served in 2-Tablespoon portions.

10 tomatillos
1 medium red bell pepper
1 medium green bell pepper
2 medium vidalia onions
1/2 tablespoon kosher salt
1 1/2 tablespoons yellow mustard seeds
1 1/2 tablespoons celery seeds
2 1/2 cups granulated sugar
1 cup apple cider vinegar

Steps:

  • Peel the papery wrapping off of the tomatillos, remove the seeds and inner ribs from the bell peppers, and peel the onions.
  • Quarter the tomatillos and set aside. Roughly chop the onions and bell peppers and set aside.
  • In your food processor, finely puree the tomatillos, peppers, and onions together. I usually have to do this in two batches. On high speed, this takes me about 3 minutes per batch; when done it should resemble a fine-grain blend.
  • Line a strainer with cheese cloth and drain the minced vegetables for at least 1 hour. I have drained this over night, before, and had no problems.
  • After the minced vegetables have drained, combine them with the remaining ingredients in a non-reactive pot.
  • Place the pot over high heat on your stove and bring to a boil.
  • Stirring, to prevent scorching, lower the heat to a simmer and cook for another 5 minutes.
  • Remove to mason jars and refrigerate. Once it is chilled, serve in dollops with sausages, chips, eggs, ham, or anything else that needs a sweet-n-tangy boost.

1 small red onion, finely chopped
225 g ripe tomatoes
1 small red chile, deseeded and finely chopped
1 garlic clove, crushed
1 tablespoon dark brown sugar
120 ml balsamic vinegar
salt & freshly ground black pepper

Steps:

  • Start off by skinning the tomatoes - put the tomatoes in a bowl and pour boiling water over them and leave for 1 minute and then drain them and slip off the skins.
  • In a food processor, add the onion, tomatoes, chilli and garlic and blend until finely chopped.
  • Place the mixture in a saucepan over low heat and add the sugar and vinegar.
  • Simmer very gently, without the lid on, for 2 hours, by then the mixture will have reduced to a thick sauce.
  • Stir frequently towards the end of cooking time so the sauce doesn't stick to the bottom of the pan.
  • Taste to check the seasoning - serve hot or cold.
