Chicken salad mixed with sharp Cheddar and tangy BBQ sauce is served up in scooped-out tomatoes in this tasty Southwest-style dish for two.

6 oz. boneless skinless chicken breast, cooked, chopped
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
1/2 cup chopped green peppers
1/4 cup chopped onions
3 Tbsp. MIRACLE WHIP Light Dressing
2 tsp. BULL'S-EYE Original Barbecue Sauce
2 tomatoes

Steps:

  • Mix chicken, cheese, peppers and onions in medium bowl. Add combined dressing and barbecue sauce; toss to coat. Cover and refrigerate at least 1 hour.
  • Cut tomatoes into wedges, starting at the top of each tomato but being careful to not cut all of the way through to bottom of tomato.
  • Place 1 tomato on each salad plate; gently separate wedges. Fill evenly with chicken salad.

A Chili Lime Southwestern Chicken Salad with a low fat and CREAMY Cilantro Chili Lime Dressing that doubles as a marinade! Weight Watchers Smart Points: 10 per serve

Number Of Ingredients 16

Marinade/Dressing:
4 skinless (, boneless chicken thigh fillets)
2 tablespoons olive oil
1/3 cup freshly squeezed lime juice
4 tablespoons fresh chopped cilantro ((or flat-leaf parsley))
2 cloves garlic (, crushed)
1 teaspoon brown sugar
1/2-3/4 teaspoon red chilli flakes ((adjust to your preference of spice))
1/2 teaspoon ground Cumin
1 teaspoon salt
1/4 cup plain greek yogurt ((or sour cream) -- FOR DRESSING ONLY)
4 cups romaine ((cos) lettuce leaves, washed and dried)
1 cup grape / cherry tomatoes (, halved)
1 ripe avocado (, sliced)
1 cup black beans (, washed and rinsed)
1 cup corn (, washed and rinsed)

Steps:

  • Whisk marinade ingredients together to combine, or pulse in a magic bullet using a small cup OR a small food processor until blended (all except for the greek yogurt). Pour half the marinade into a shallow dish to marinade the chicken fillets for two hours if time allows. Refrigerate the reserved untouched marinade to use as the dressing.
  • Heat about one teaspoon of oil in a grill pan or skillet over medium-high heat and grill chicken fillets on each side until golden, crispy and cooked through. (Grill in batches to prevent excess water being released.) Once chicken is cooked, set aside and allow to rest.
  • Slice chicken into strips and prepare salad with leaves, tomatoes, avocado slices, black beans, corn and chicken.
  • Prepare dressing with remaining marinade/dressing with the 1/4 cup greek yogurt; mix well to combine OR pulse in a small food processor or magic bullet small cup.
  • Drizzle the creamy dressing over the salad; divide into 4 bowls and serve.

This delicious and easy-to-make Southwest Chicken Salad is flavored with my homemade Creamy Avocado Dressing. It is topped off with beans, corn, scallions, cherry tomatoes, and cheddar cheese. You can use leftover or rotisserie chicken for a meal-worthy weeknight dinner, or if you have time, cook your own chicken.

1 ½ teaspoon kosher salt
¾ teaspoon black pepper
1 teaspoon sweet paprika
1 teaspoon ground cumin
6 tablespoons olive oil
3 bone-in chicken breasts ((14-15 oz each), patted dry)
6 cups leafy salad greens or romaine lettuce (rinsed and spin-dried)
1 15-oz black beans, drained and rinsed
1 15 oz. of corn, drained and rinsed
3 mini peppers (rinsed and thinly sliced)
1 jalapeno pepper (seeded or not - based on your heat preference - sliced thinly)
4 scallions (sliced thinly - both white and green parts)
1 cup cherry tomatoes (washed and sliced)
1 cup fresh cilantro leaves (rinsed (optional))
½ cup cheddar cheese (shredded)
1 cup of Creamy Avocado Cilantro Lime Dressing

Steps:

  • To cook the chicken: Preheat the oven to 425 degrees F. Mix salt, pepper, paprika, ground cumin in a small bowl. Drizzle chicken with olive oil and sprinkle with the spice mixture on both sides. Place it on a sheet pan and roast for 30-35 minutes or until it registers 165 degrees F when a thermometer inserted in the middle of a breast. Remove from the oven and set it aside to cool for 10 minutes.
  • To assemble the salad: Place salad greens, black beans, corn, peppers, jalapeno pepper, scallions, tomatoes, and cilantro in a large salad bowl.
  • Drizzle it with the creamy avocado dressing. Give it a gentle toss to make sure that everything is thoroughly mixed.
  • Cut the now-cooked and rested chicken in small cubes (or slices) and add it in the salad.
  • Sprinkle with shredded cheddar cheese and serve.

5 cups shredded romaine lettuce
2 cups shredded deli rotisserie chicken
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (11 oz) whole kernel corn with red and green peppers, drained and rinsed
1 cup chopped tomato
1/2 cup sliced green onions
1/3 cup olive oil or canola oil
1 1/2 cups finely chopped fresh cilantro leaves
1 clove garlic, finely chopped (1 teaspoon)
3 tablespoons lime juice
1/4 teaspoon salt
1/2 cup Mountain High™ whole milk plain yoghurt

Steps:

  • In large bowl, mix Salad ingredients.
  • In blender, place olive oil, cilantro, garlic, lime juice and salt. Cover and blend on high speed until smooth. If necessary, stop blender and scrape down mixture. Transfer to small bowl; beat in yoghurt with whisk until smooth.
  • Before serving, add dressing to salad mixture; toss until mixed well. Serve immediately, or refrigerate up to 1 hour before serving.

1 tablespoon olive oil
1 tablespoon fajita seasoning mix or 1 tablespoon taco seasoning
4 1/2 cups lettuce, assorted, torn
2 tomatoes, cut in wedges
1/2 cucumber, peeled and slices
4 green onions, chopped
1 avocado, diced
1 cup corn, thawed
1 cup black beans
1/4 cup cilantro, chopped
cilantro salad dressing (purchased or use recipe 30146 "Cilantro Dressing for Salads" by Bergy)

Steps:

  • Rub chicken with olive oil and fajita seasoning. Grill over lot heat until done. Set aside and keep warm.
  • While the chicken is grilling, prepare and combine the remaining salad ingredients, except the dressing.
  • Slice chicken 1/4" thick, against the grain, and add to salad. Toss with dressing to taste.
  • Serve immediately.
