CREAMY GARLIC SEAFOOD PASTA



Creamy garlic seafood pasta image

This seafood pasta with creamy garlic sauce is the perfect dinner recipe, whether you need to get dinner on the table fast or impress guests.

2 tbsp olive oil
250 g (½lb) shrimp / prawns (peeled and deveined)
150 g (5oz) mussel meat ((approximately 500g with shells) )
150 g (5oz) calamari tubes / squid heads
2 tbsp butter
4 garlic cloves (crushed)
½ tsp chilli flakes
½ cup white wine
1-2 tsp lemon juice
1 cup cream
salt and pepper (to taste )
½ cup parsley (finely chopped)
500 g (1lb) pasta (cooked + 1 cup cooking water reserved)

Steps:

  • In a large pan, add a splash of oil and allow to heat up.
  • Season the seafood with salt and pepper then cook in batches until golden brown.
  • The shrimp/prawns should take no more than a minute per side (depending on size) and the calamari and mussels will take only a few minutes to cook. Take care not to overcook the seafood as they will go tough and rubbery. Rather undercook slightly as it will cook a little more while being tossed with the sauce and pasta.
  • Remove the seafood from the pan and set aside.
  • In the same pan, melt the butter and add the garlic and chilli flakes. Cook until fragrant then pour in the lemon juice and wine.
  • Bring to a simmer and allow to reduce by half.
  • Pour in the cream and allow to come to a simmer. Allow to cook for 5 minutes or until the sauce coats the back of a spoon.
  • Add the seafood (and any of its resting juices) and parsley and stir to combine.
  • Toss the sauce with cooked pasta and a splash of the pasta cooking water and toss to coat the pasta. Serve sprinkled with parsley.

Creamy pasta pomodoro is a quick and easy weeknight meal. Hearty rigatoni pasta noodles are coated in a tangy, luscious tomato sauce.

1 tablespoon extra-virgin olive oil
3 tablespoons finely minced shallot
1 large garlic clove (finely minced)
¼ teaspoon sea salt
Freshly ground black pepper
1 14-ounce can chopped tomatoes
1 teaspoon balsamic vinegar
⅛ teaspoon cane sugar
Pinch of dried oregano
Pinch of crushed red pepper flakes
Marinara recipe (from above)
¼ cup raw cashews* (see note)
½ tablespoon tomato paste
¼ cup water
¼ cup pasta water
¼ to ½ teaspoon sea salt
10 ounces rigatoni
Extra-virgin olive oil (for drizzling)
2 medium zucchini (sliced into thin half moons)
2 tablespoons fresh thyme leaves
2 14-ounce cans Mutti Cherry Tomatoes, drained
6 cups spinach or mix of spinach & arugula
¼ cup chopped parsley or sliced basil
Sea salt and freshly ground black pepper

Steps:

  • Make the marinara sauce: Heat the olive oil in a small pot over low heat. Add the shallot, garlic, salt, and a few grinds of black pepper and cook for 3 minutes, stirring often. Add the tomatoes and their juices, balsamic vinegar, cane sugar, oregano, and red pepper flakes. Cover and simmer over low heat for 20 minutes, stirring occasionally.
  • Make the creamy sauce: Add the marinara to a blender with the cashews, tomato paste, salt, and ¼ cup of water. Blend until smooth. Set aside until ready to use. Before serving, stir in ¼ cup hot pasta cooking water to loosen it up so that it'll nicely coat the pasta.
  • Cook the pasta in a large pot of salted boiling water according to package directions or until al dente.
  • While the pasta cooks, heat generous drizzles of olive oil in a nonstick skillet over medium heat. Add the zucchini, thyme, and generous pinches of salt and pepper. Sautee, stirring occasionally, until lightly browned, about 3 minutes. Add the tomatoes, reduce the heat to low, and cook for 2 to 3 more minutes or until heated through. Add the spinach and gently toss until wilted. Season to taste with more salt and pepper.
  • Scoop the pasta into individual bowls, add scoops of the creamy sauce, and toss to coat. Distribute the vegetables among the bowls and top with parsley and or basil. Season to taste and serve.

1 pound shrimp (deveined, peeled and tails removed)
2 tablespoons + 1 teaspoon olive oil, divided
4-5 large tomatoes, chopped into bite sized pieces (if using smaller tomatoes such as Roma increase to 6-7)
3 cloves garlic, finely chopped
2 tablespoons chopped fresh basil, plus more to garnish
1/4 teaspoon crushed red pepper flakes (optional)
12-16 ounces angel hair pasta (or other long pasta)
1/2 cup fresh grated parmesan cheese, plus more to taste
salt & pepper to taste

Steps:

  • In a large pot, add water and bring to a boil while you are chopping the tomatoes. Don't add the angel hair pasta yet, it cooks quickly (usually 3-4 minutes) so you will want to add it to the boiling water after you start cooking the tomatoes.
  • In a large skillet over medium heat add 1 tablespoon olive oil and cook shrimp until it has turned pink, about 1 - 2 minutes per side. Remove shrimp from pan and set aside.
  • Drain any liquid from the skillet, reduce heat to medium-low and add 1 tablespoon olive oil. When oil is hot, add chopped tomatoes, then salt and pepper to taste. Stir occasionally and cook for 5 minutes and then add chopped garlic. Cook 2 - 3 minutes more and until the tomatoes get soft and garlic is fragrant.
  • Add angel hair pasta to the boiling water and cook per box instructions (typically 3-4 minutes).
  • While the pasta is cooking, put the shrimp back into the skillet, add the freshly chopped basil and a small amount of olive oil to taste (1-2 tsp is what I use). Stirring well to combine and bring out the flavor of the basil. Taste and add more salt, if needed. Add the crushed red pepper flakes, if you like a little kick of heat.
  • Drain pasta (reserving about 1/2 cup of the pasta water). Add pasta into the skillet to combine with the tomatoes, shrimp and basil. Stir to fully combined. If you want the sauce to be more moist, add some of the pasta water, as desired.
  • Serve topped with freshly grated parmesan cheese and fresh basil and enjoy!

8 ounces uncooked thin spaghetti
1 tablespoon olive oil
3/4 pound uncooked shrimp (26-30 per pound), peeled and deveined
2 cloves garlic, minced
1/4 to 1/2 teaspoon crushed red pepper flakes
1 can (14-1/2 ounces) petite diced tomatoes, undrained
10 fresh basil leaves, torn
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup grated Parmesan cheese

Steps:

  • Cook spaghetti according to package directions., In a large skillet, heat oil over medium-high heat. Add shrimp; cook until shrimp begin to turn pink, 1-2 minutes. Add garlic and pepper flakes; cook 1 minute longer., Add tomatoes; bring to a boil. Reduce heat; simmer, uncovered, until shrimp turn pink, 2-3 minutes, stirring occasionally. Remove from heat; stir in basil, salt and pepper. Serve with spaghetti and cheese.

1 can (18.5 oz) Progresso™ Traditional New England clam chowder
1 cup milk
1/2 cup shredded Parmesan cheese (2 oz)
2 cloves garlic, minced
2 tablespoons olive oil
1 1/2 lb uncooked peeled deveined large shrimp, tails peeled
1 package (8 oz) sliced fresh mushrooms (3 cups)
4 medium green onions, chopped (1/4 cup)
1/4 to 1/2 teaspoon crushed red pepper flakes
1/2 cup chopped fresh parsley
Salt and pepper to taste, if desired
1/2 cup shredded Parmesan cheese (2 oz), if desired

Steps:

  • In 5- to 6-quart Dutch oven, cook linguine as directed on package. Drain well; return to Dutch oven and cover to keep warm.
  • Meanwhile, in blender, place clam chowder, milk, 1/2 cup Parmesan cheese and the garlic; blend on medium speed until mixture is smooth. Set aside.
  • In 12-inch nonstick skillet or wok, heat oil over medium-high heat until hot. Add shrimp, mushrooms and onions; cook about 5 minutes, stirring frequently, until shrimp turn pink.
  • Stir in pepper flakes and soup mixture; cook until thoroughly heated. Stir in parsley. Add salt and pepper to taste.
  • Pour over cooked linguine in Dutch oven; toss gently to coat. Top individual servings with Parmesan cheese.

This is nice and light for a pasta dish, and quick to put together. For your basic pomodoro sauce to serve anytime with pasta, simply omit the shrimp. I do think the choice of canned tomatoes is extremely important, and effects the overall quality of the sauce. I definitely use imported Italian tomatoes, preferably San Marzano.

½ onion, chopped
