CROCK POT PESTO RANCH CHICKEN AND VEGGIES #RSC
Ready, Set, Cook! Hidden Valley Contest Entry. You can't get much easier than this! With little prep work, all ingredients get mixed into the crock pot to create a complete meal. The pesto and ranch combine to make a delicious sauce that coats the chicken, potatoes and carrots. Our family just loved this recipe and I hope that you do, too! Feel free to adjust the amount of veggies to your liking.

Steps:
- Cut the potatoes in half if they are small or into quarters if they are large.
- Put the potatoes, baby carrots and shallots into the bottom of the crock pot.
- Place the chicken breasts on top of the vegetables.
- In a small bowl, mix together the pesto and chicken broth with the packet of Hidden Valley Ranch Salad Dressing and Seasoning Mix until completely combined.
- Pour the pesto/ranch mixture over the chicken and vegetables.
- Mix everything together so the sauce covers all ingredients.
- Put the lid onto your crock pot and cook on low for 6-8 hours.
- Enjoy!

Ready, Set, Cook! Hidden Valley Contest Entry. I thought about the list of ingredients and this soup just seemed a natural fit. This soup brings an old favorite up to date. And, did I mention how easy it is to make? All in one pot or crock pot. This soup can be made rich & creamy or, by changing the milk to fat-free Half & Half, made into a skinny soup without losing any of the flavor. You may also omit the chicken to made a vegetarian Creamy Ranch Potato Soup.

- Place 1/2 cup water in 5-6 quart pot, add two packets of Hidden Valley Ranch Dip Mix (original flavor) and stir until well mixed.
- Add 6 1/2 cups water and add all remaining ingredients; except fresh spinach.
- Bring soup to boil over medium heat. Reduce heat to med/ low cook until vegetables are desired crispness. 30-45 minute.
- Garnish with fresh chopped spinach. Serve hot.
- May be made in crock pot.

I wanted to come up with something I could coat the chicken in besides buttermilk that would make it moist and very flavorful. Ranch dressing is my absolute favorite condiment and dip practically everything in it. So I thought instead of buttermilk, why not Ranch!

- Preheat oven to 400.
- Saute the garlic and shallot on medium heat until soft. Add the spinach, goat cheese and ranch dressing. Stir until well incorporated, add salt and pepper to taste.
- In separate bowls, add ranch dressing and panko mixed with parmesan.
- Take the chicken breasts and make a slit in the thickest part of the chicken to form a pocket. Do not cut all the way through. Stuff the breasts with some of the spinach mixture. Take the toothpicks and thread the chicken shut.
- Take each breast and carefully dip in the dressing, shaking off the excess then dredge in the panko/parmesan mixture, making sure to coat the breasts very well. Place on a baking sheet fitted with a rack coated with cooking spray. Setting the chicken on the rack above the pan will ensure the chicken will be cooked evenly. Bake for 25 minutes or until cooked all the way through.

RANCH CHICKEN MEATBALLS & CREAMY RANCH GRAVY #RSC
Ready, Set, Cook! Hidden Valley Contest Entry. This recipe is one of my families' favorites. It's quick and easy, you can cook it on the stove top or in a crock pot; make and freeze ahead; and it feeds a crowd, i.e., my family! Even the little ones love it, spinach and all! I like to serve over buttered egg noodles with steamed broccoli on the side.

- Preheat oven to 350.
- MEATBALLS:.
- Combine all ingredients, except vegetable oil, in large bowl as listed. Mix well to ensure all ingredients are combined. (I use my hands, clean of course!) Using a small ice cream scoop or a tablespoon, scoop up mixture and form into balls. When all meatballs are all formed - Heat 3 tablespoons of vegetable oil in 12" skillet over medium hi heat. Add as many meatballs to skillet without crowding and fry till all sides are golden brown. (You may need to add more vegetable oil with each batch you fry) Set on rack placed over cookie sheet and continue to fry meatballs until all are done. Place meatballs in oven to finish cooking while you make the sauce.
- GRAVY:.
- In large measuring cup or bowl, whisk together Hidden Valley Ranch Dressing, milk and sour cream. Set aside.
- In large saucepan over medium heat, melt butter. Whisk in flour, mixture will be crumbly and a little dry.
- Gradually add dressing mixture to pan, whisking constantly. Mixture will begin to thicken almost immediately. Continue to whisk, adding in pepper, salt,nutmeg, scallions and parmesan cheese. Turn heat to lowest setting and cover.
- Remove meatballs from oven and place on large platter or dish. Spoon gravy over top, sprinkle chopped scallions over top, and serve extra gravy on the side.
KICKED UP CHEESY RANCH BREADSTICKS #RSC
Ready, Set, Cook! Hidden Valley Contest Entry Need an easy appetizer for your next party? Want to impress your guests? These breadsticks are just what you're looking for! Simple to make, the dip can be prepared ahead of time and you can bake the breadsticks as needed. (You may make your dough of course...) Don't forget to poke a few holes in your crust, to prevent large air pockets. If you like spicy food, you can add more cayenne (I used 1/2 tsp. for the 'bread spices', as we like it HOT!) If you don't have a pizza stone, these can be baked on a pizza pan. The yield is a guess - yours may be different, depending on the width you cut your 'strips'. **Dry ingredients listed in parentheses are mixed into yogurt, to make dip**

- Preheat oven and pizza stone to 450 degrees. (you may use a pizza pan if you don't have a stone.).
- In a small bowl, mix 1 1/2 tablespoons of HVR dry dip mix with 3 T. of parmesan cheese, 1/4 t. cayenne, 1/2 t. dill, 1/2 t. crushed red pepper, 1/2 t. garlic powder and 1 T chopped chives; set aside. (These are your 'reserved' spices).
- In a small bowl, mix yogurt with 1 1/2 T. HVR dry dip mix with 2 T. parmesan cheese, 1/4 t. cayenne pepper, 1/4 t. dill, 1/4 t. crushed red pepper, 1/4 t. garlic powder and 1 t. chopped chives. (
- Place a piece of parchment paper on a pizza pan; press out the dough to fit the size of the pan.
- Poke holes in pizza crust with a fork - this will prevent large air pockets from forming (as there is no sauce or toppings to 'weigh down' the dough.).
- Brush olive oil over pizza crust and then sprinkle reserved spices all over dough.
- Move your parchment to the pizza stone in the oven (or use a peel, if you have one.).
- Bake for 8-10 minutes - keep a watch, as you don't want them to burn!
- Remove from oven - let cool for a couple of minutes, slice in half and then run your pizza cutter the other way, making 3/4 - 1 inch strips.
- Serve with your spicy dipping sauce! Enjoy!
CHICKEN RANCHILADAS #RSC

- Preheat oven to 375 degrees. Spray a 9" x 13" x 2" baking dish with non-stick cooking spray; set aside.
- Heat spinach in microwave oven according to package directions, just to thaw it out, not heat it through. Place spinach into a clean kitchen towel and squeeze dry; set aside.
- Heat the vegetable oil in a medium non-stick skillet over medium-high heat. Add in the shallots, garlic and 1/2 teaspoon salt and cook until they begin to soften, approximately 2 - 3 minutes. Add in the reserved spinach, mix to combine; set aside.
- Place the yogurt into a medium bowl, add 4 teaspoons of the ranch seasoning mix; mix to combine; set aside.
- Place the enchilada sauce into a medium bowl, add in the remaining ranch seasoning mix, mix to combine; set aside.
- Place the chicken into a large bowl, add in the reserved spinach mixture, 6 ounces of the cheese, remaining 1/2 teaspoon salt, black pepper and 1/2 cup of the ranch yogurt sauce, mix to fully combine; set aside.
- Lay the tortillas in a single layer onto work surface. Evenly divide the chicken mixture between the tortillas, placing it down the center of the tortillas. Start rolling up the tortillas, by folding over an empty end of the tortilla over the filling, then rolling up cigar style. Follow this process for all 6 tortillas.
- Spread 2 - 3 tablespoons of the enchilada sauce into the bottom of the prepared baking dish. Place rolled tortillas, seam side down, into baking dish. Pour remaining sauce over tortillas, being sure to cover them entirely in sauce. Top with remaining 2 ounces cheese. Cover dish with aluminum foil, place in preheated oven and bake until heated through, approximately 30 - 35 minutes.
- Serve ranchiladas with remaining ranch yogurt sauce on the side.

- Poach chicken in boiling water until tender. Cut into chunks and shred between 2 forks.
- Add cream cheese, garlic, sage & mushrooms.
- Separate crescent rolls into triangles. Place a rounded Tblsp of filling on each triangle and pull all edges up to seal.
- Roll in corn flakes and place on cookie sheet.

- Bring potatoes to a boil in a large pot of salted water. Cook until tender for 15 to 20 minutes. Drain and mash potatoes. Stir in dressing mix and sour cream.
