My grandmother used to make this recipe. She got it from a ladies cookbook in Lubbock, Texas. My mom made it, and now I make it. It is a family favorite!

- Mix all ingredients except the cheese.
- Pour into 8 or 9" baking dish.
- Sprinkle grated cheddar cheese on top.
- Bake at 350 degrees for 25 minutes or until cheese is thoroughly melted and sides of casserole are bubbling.

- In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

OLD SCHOOL HOMINY CASSEROLE
Handed down from my husband's grandmother from those Sunday dinners. We make this frequently, especially when we have family and friends over and serve it with barbeque. It has turned into a crowd favorite and everyone has asked me for the recipe. I hope you enjoy it as much as we do.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x9-inch casserole dish with cooking spray.
- Cook bacon in a large skillet until almost crisp, 5 to 7 minutes. Add onion and jalapeno peppers; cook and stir until just soft, 2 to 3 minutes. Toss in garlic; cook for 1 minute. Pour off and discard grease. Mix in hominy and pimentos; cook and stir for 1 minute. Add 1 1/2 cups of Cheddar cheese and salt and pepper to taste; stir until cheese is just melted, about 2 minutes. Transfer mixture to the casserole dish and top with remaining Cheddar cheese.
- Bake in the preheated oven until Cheddar cheese is bubbly, about 20 minutes.

CREAMY HOMINY CASSEROLE - MOM'S
One of mom's Alabama recipes from her grandma . Grandma made it with a roux and mushrooms ,mom used cream of mushroom soup both ways are good.

- 1. Heat oven to 325^. Grease a 2 quart casserole and set aside. Add the bacon grease in a medium saucepan heat to melt over medium heat . Add the onion and pepper and sauce until tender; about 2 minutes; then add the soup, milk and hominy to the pan with the mixture. Stir to combine.
- 2. Now add the mustard, olives, and salt and pepper to taste. stir to combine. In the prepared casserole layer 1/2 the hominy mixture, 1/2 the grated cheese, and 1/2 of the onions rings or crushed potato chips. Repeat layering and end with the onion rings or crushed potato chips on top. Bake for 30 minutes, or until bubbly and heated through.
- 3. Grandma's: Instead of the mushroom soup. 1/2 cup chopped mushrooms 1/4 cup chopped onions 1/2 cup diced bell pepper Sauté in 3 tablespoons of bacon grease then add 3 Tablespoon of flour and the 1/2 cup milk and dry mustard, salt and pepper; Stirring until well blended and thickened. Remaining recipe the same.
MOM'S HOMINY CASSEROLE
A recipe from my mother. I am not a fan of hominy myself, but this is always a dish that is emptied at Thanksgiving when she makes it. Try it for yourself, and let everyone know!

- Preheat oven to 350 degrees F (175 degrees C).
- Coat the bottom of a medium skillet with cooking spray and place over medium heat. Add the diced onion and garlic; cook and stir until the onions are soft and translucent. Reduce the heat to medium-low and mix in the green chiles; cook for 1 minute. Stir in the cream cheese until fully melted. Remove the skillet from the heat.

HOMINY AU GRATIN
Hominy Au Gratin is a cheese based sauce with hominy, pimento, seasoning, and bacon. It's a tasty, easy, unique side dish recipe.

Steps:
- Drain hominy.
- Cook bacon and crumble if you are not using precooked bacon bits.
- Melt butter in a large saucepan.
- Add flour, whisk and cook 2 minutes.
- Whisk in milk and simmer 2 minutes
- Add salt, pepper, and onion powder. Whisk to combine.
- Add 1 cup cheese and stir until it melts.
- Stir in pimento and hominy.
- Pour into an oven-safe casserole dish. (An 8x8, 9x9, or 8x12 inch dish works best.)
- Top with additional 1/2 cup cheese and cooked, crumbled bacon.
- Bake at 350°F degrees until bubbly and cheese is melted approximately 25 to 30 minutes.
- *Tip I always like to place my casserole dish on a baking pan with at least a 1 inch side in case the casserole cooks over.

- Preheat oven to 350°F (180°C). Grease a 9 x 13-inch baking dish; set aside.
- Cook noodles in a pot of salted boiling water according to package instructions until just barely al dente, about 5-6 minutes. Drain and set aside.
- Meanwhile, in a large bowl, stir together softened cream cheese, cottage cheese, sour cream, and melted butter. Set aside.
- In a large skillet, heat olive oil over medium-high heat. When the oil shimmers, add the ground beef, onion, and bell pepper. Cook until the meat is no longer pink and the onion is translucent, about 5-7 minutes. Drain excess fat.
- Stir in diced tomatoes, tomato soup, and Worcestershire sauce.
- Place ½ of the cooked noodles in the bottom of the prepared baking dish. Top with ½ of the cream cheese mixture and ½ of the meat mixture. Repeat layers with remaining ingredients. Top with shredded cheese.
- Bake, uncovered, for 25-30 minutes, or until heated through.

- Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
- In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
- Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.
