Creamy Parmesan sauce coats tortellini, ham and broccoli in this dish that's ready in 30 minutes.

1 package (9 oz) refrigerated cheese-filled tortellini
1 tablespoon olive oil
1 medium onion, chopped (1/2 cup)
2 cups cubed (1/2 inch) cooked ham
2 cups frozen chopped broccoli (from 1-lb bag)
1 cup whipping cream
1/4 cup shredded Parmesan cheese (1 oz)

Steps:

  • Cook and drain tortellini as directed on package.
  • Meanwhile, in 12-inch skillet, heat oil over medium heat. Add onion; cook 4 to 5 minutes, stirring frequently, until lightly browned.
  • Stir in ham and broccoli. Cook 5 minutes, stirring occasionally.
  • Stir in cream and cheese. Heat just to boiling over high heat. Stir in tortellini. Reduce heat to medium; simmer uncovered 4 to 5 minutes or until thoroughly heated.

Note: I usually soak beans overnight and then they will cook faster. Also only mash a few beans to check them for softness, don't mash them all.

1 gallon boiling water
2 pounds dry great Northern beans
2 onions, chopped
6 cups chopped ham
2 (10.75 ounce) cans condensed cream of mushroom soup
8 ounces processed cheese food (eg. Velveeta), sliced

Steps:

  • Add beans to boiling water and cook on high. Beans will soak up some water, so you will need to add more water later.
  • As soon as beans can be mashed with fork, add ham and onions, let cook until beans and ham are done.
  • Turn down to medium heat and add soup and cheese. Stir frequently while soup and cheese are mixed into the beans. When cheese is melted turn off heat and serve. Leftovers may be frozen.

1 small onion, chopped

6 cups chicken broth

2 tablespoons Dijon mustard
1 tablespoon Italian seasoning
½ teaspoon crushed red pepper flakes
8 ounces frozen four-cheese tortellini
¼ cup half-and-half
freshly grated Parmesan cheese to taste
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Melt butter in a large soup pot over medium heat. Add onion and cook for 2 minutes. Add carrots and celery and cook an additional 2 minutes. Sprinkle flour over mixture and cook 2 more minutes.
  • Mix chicken broth, cannellini beans, ham, Dijon mustard, Italian seasoning, and crushed red pepper flakes into the pot. Bring to a boil. Reduce heat and simmer for 15 minutes.

Steps:

  • Bring the broth to a gentle boil in a medium pot over medium-high heat.

2 lbs dried great northern beans, rinsed, drained & picked over
4 ham hocks, 2 fresh and 2 smoked or 4 ham bone
2 onions, chopped
2 cloves, garlic minced
3 potatoes, pared and cubed
3 carrots, diced
1 cup celery, diced
3 quarts water
2 teaspoons dried thyme
1 teaspoon dried marjoram
1 teaspoon pepper
1/2 teaspoon rubbed sage
1/2 teaspoon dried savory
parsley
salt

Steps:

  • Put rinsed beans in pan and cover up to 2 inches past beans in large pot -- let sit overnight.
  • Drain, put beans back in pot, add water and the rest of ingredients.
  • Bring to boil, turn to simmer and cover.
  • Simmer for at least 3 hours or until beans are soft.
  • Take out bones and dice up any meat on bones and put back into pot -- You can add more ham if you want.
  • Discard fat and bones.
  • Season to taste with pepper and salt and parsley.
