Time 1h

Yield 12

Number Of Ingredients 12

9 uncooked lasagna noodles (9 ounces)
1 medium onion, chopped (1/2 cup)
1/2 cup chopped green bell pepper
2 cloves garlic, finely chopped
2 cans (15 ounces each) chunky Italian-style tomato sauce
1 can (19 ounces) cannellini beans, rinsed and drained
3/4 teaspoon fennel seed
1/2 teaspoon sugar
1 container (15 ounces) fat-free ricotta cheese
1/4 cup shredded Parmesan cheese
3 cups frozen cut leaf spinach, thawed and squeezed to drain
1 1/2 cups finely shredded mozzarella cheese (6 ounces)

Steps:

  • Heat oven to 350° F. Spray rectangular baking dish, 13 x 9 x 2 inches, with cooking spray. Cook and drain lasagna noodles as directed on package.
  • Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook onion, bell pepper and garlic in skillet about 3 minutes, stirring occasionally, until vegetables are crisp-tender. Stir in tomato sauce, beans, fennel seed and sugar; reduce heat to medium. Cook 5 to 10 minutes, stirring occasionally, until sauce is slightly thickened.
  • Mix ricotta cheese, 2 tablespoons of the Parmesan cheese and the spinach. Spread about 1 cup tomato sauce mixture in baking dish. Top with 3 noodles. Spread with half of the ricotta mixture. Top with about 1 1/2 cups tomato sauce mixture, 1/2 cup of the mozzarella cheese, 3 noodles, remaining ricotta mixture, remaining tomato sauce mixture and remaining 3 noodles. Sprinkle with remaining 1 cup mozzarella cheese and remaining 2 tablespoons Parmesan cheese.
  • Cover and bake 35 minutes. Bake uncovered 10 minutes or until top is light golden brown and mixture is bubbly. Let stand 5 minutes before serving.

Time 1h45m

Yield 1 lasagna, 9 serving(s)

Number Of Ingredients 19

1 butternut squash, peeled and diced
1 tablespoon olive oil
1 tablespoon butter
2 carrots, peeled and diced
1 onion, diced
2 celery ribs, diced
6 garlic cloves, minced
2 teaspoons fresh thyme, chopped
2 teaspoons fresh oregano, chopped
1 (15 ounce) can cannellini beans
1/2 cup white wine
4 ounces mozzarella cheese
3 ounces ricotta cheese
1 (9 ounce) package no-boil lasagna noodles
5 tablespoons butter
1/4 cup flour
3 cups milk
2 teaspoons salt
1/2 teaspoon ground nutmeg

Steps:

  • Peel and dice the butternut squash. Toss with salt, pepper, and olive oil. Place pieces on a cookie sheet covered in tinfoil with non-stick spray and roast at 400F for 40 minutes, or until squash is tender.
  • About 10 minutes before the squash is done, melt the butter in a Dutch oven over medium heat. Add the onions, celery, carrots, and stir for 2 to 3 minutes. Stir in the thyme and oregano.
  • Add the garlic and cook for an additional 5 minutes.
  • Add the chopped roasted butternut squash and about 1/4 of the beans with their liquid. Mash this mixture together and then add the rest of the beans to the Dutch oven.
  • Pour in the white wine, and add a bit of water if you think it needs to be thinner. Reduce heat to low, and simmer while you make the béchamel.
  • In another pot, melt the butter for the béchamel. Over medium heat, add the flour and whisk until smooth. Stir regularly until the mixture turns golden brown, about 6 to 7 minutes.
  • Heat the milk in a separate pan until it is just about to boil. Whisk the milk into the butter mixture until the sauce is smooth.
  • Bring to a boil and cook for 30 seconds longer. Remove from the heat and season with salt and nutmeg.
  • To assemble: Preheat the oven to 375°F.
  • Brush a 9-by-13-inch glass baking dish with melted butter.
  • Layer the ingredients in this order: béchamel, pasta, butternut squash filling, and cheese. You should make 3 to 4 layers of pasta, finishing with béchamel and 1/4 cup of the mozzarella and ricotta sprinkled over the top.
  • Bake in the oven for 45 minutes, until the top is golden brown and bubbling.
  • Remove from the oven, allow to cool for 20 minutes, slice, and serve.

GRILLED VEGETABLES WITH CANNELLINI BEANS & VEGAN PESTO

Grilled vegetables with cannellini beans & vegan pesto image

Plate up a dish filled with colour with grilled veg, tomatoes, cannellini beans, pesto and pine nuts. Packed with textures, the dish is vegan and healthy

Categories     Dinner

Time 45m

Number Of Ingredients 12

1 large aubergine, sliced lengthways into ½cm slices
2 courgettes, sliced lengthways into ½cm slices
250g cherry tomatoes
400g can cannellini beans
crusty bread, to serve
60g basil leaves
20g parsley leaves
1 small garlic clove
1 lemon, zested and juiced
30g pine nuts, lightly toasted, plus 1 tbsp to serve
2 tsp nutritional yeast
3-4 tbsp olive oil

Steps:

  • Light the barbecue. For the pesto, blitz the basil, parsley, garlic, lemon zest and juice, 30g pine nuts and nutritional yeast together in a food processor. Mix in the olive oil to loosen and season to taste.
  • When the coals are ashen, place the aubergine and courgette slices on the grill. Cook for 2-3 mins, then turn and cook for 2-3 mins more until the veg is softened and slightly shrunken. Add the tomatoes to the grill and cook, turning often until the skins have split and the tomatoes soften. Immediately remove from the grill along with the other veg.
  • Drain the cannellini beans, reserving the liquid from the can, and tip the beans onto a serving platter. Add 2 tbsp of pesto and mix, loosening the bean mixture with some of their reserved liquid.
  • Add the aubergine and courgette slices to the platter and mix gently until lightly coated in the pesto. Scatter the tomatoes on top, then drizzle with more pesto (you can loosen this with more of the reserved bean liquid, if needed). Sprinkle with the extra 1 tbsp pine nuts and serve with crusty bread.

CHEESY WHITE BEAN-TOMATO BAKE

Cheesy White Bean-Tomato Bake image

For those of you who love lasagna's edges, where sticky tomato meets crisp cheese, this whole dish is for you - even the middle. A tube of tomato paste here mimics the deep flavors of sun-dried tomato. Frying a few generous squeezes caramelizes the tomato's sugars and saturates the olive oil, making a mixture that's ready to glom onto anything you stir through it. Here, it's white beans, though you could add in kale, noodles, even roasted vegetables. Then, all that's left to do is dot it with cheese and bake until it's as molten or singed as you like. Serve with bread and a bitter-green salad.

Time 15m

Yield 4 servings

Number Of Ingredients 7

1/4 cup extra-virgin olive oil
3 fat garlic cloves, thinly sliced
3 tablespoons tomato paste
2 (15-ounce) cans white beans (such as cannellini or Great Northern) or chickpeas, drained and rinsed
1/2 cup boiling water
Kosher salt and black pepper
1/3 pound mozzarella, coarsely grated (about 1 1/3 cups)

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high heat. Fry the garlic until it's lightly golden, about 1 minute. Stir in the tomato paste (be careful of splattering) and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper and stir to combine. Sprinkle the cheese evenly over the top, then bake until the cheese has melted and browned in spots, 5 to 10 minutes. If the top is not as toasted as you'd like, run the skillet under the broiler for a minute or 2. Serve at once.

  • To prepare the veggies: In a large skillet over medium heat, warm the olive oil. Once shimmering, add the carrots, bell pepper, zucchini, yellow onion, and salt. Cook, stirring every couple of minutes, until the veggies are golden on the edges, about 8 to 12 minutes.
  • Add a few large handfuls of spinach. Cook, stirring frequently, until the spinach has wilted. Repeat with remaining spinach and cook until all of the spinach has wilted, about 3 minutes. Remove the skillet from the heat and set aside.
  • Meanwhile, to prepare the tomato sauce: Pour the tomatoes into a mesh sieve or fine colander and drain off the excess juice for a minute. Then, transfer the drained tomatoes to the bowl of a food processor. Add the basil, olive oil, garlic, salt, and red pepper flakes.
