- In a saucepan over medium heat, bring water to a boil. Add celery; cover and cook for 8 minutes. Add peas; return to a boil. Cover and cook for 2-3 minutes or until vegetables are tender; drain. , In a small bowl, combine sour cream, rosemary, salt and garlic salt; mix well. Toss vegetables with pimientos; place in a serving bowl. Top with sour cream mixture. Sprinkle with almonds.

CREAM OF CELERY SOUP

Steps:
- Melt the butter with the olive oil in a large pot or Dutch oven over medium-high heat. Add the onion, season with 1/2 teaspoon salt and cook, stirring occasionally, until softened but not browned, about 4 minutes. Add the celery, celery root and 1 teaspoon salt. Cook, stirring occasionally, until the celery is tender, about 7 minutes.
- Add the bay leaf, chicken broth and 2 cups water and bring to a boil. Reduce the heat to medium low and cook until the celery root is very soft, about 20 minutes. Discard the bay leaf. Add the heavy cream and return to a simmer, then remove from the heat and let cool slightly.
- Working in batches, transfer the soup to a blender and puree until smooth, adding some herbs to each batch; return to the pot and reheat if needed. Stir in the celery salt and serve with toppings.
CREAMY CELERY GRATIN

- Cut any thick celery stalks in half, trim all of it into thumb-size lengths, then wash and leave wet. Melt half the butter in a large frying pan, then add the celery, onion and bay leaves. Season, cover, then cook over a medium heat for about 30 mins, stirring occasionally to stop the onions catching.
- Meanwhile, prepare the breadcrumbs. Melt the remaining butter in a separate pan, then toss in the crumbs and walnuts, stirring often until lightly golden and toasted. Set aside.
- Heat grill to medium. When the celery is tender, turn the heat right up, pour in the wine and stock, then reduce by two-thirds. Pour in the cream, then reduce for a final few mins until you have a syrupy sauce. Check seasoning, tip into an ovenproof dish, then scatter with the breadcrumbs and Parmesan. Grill for 2-3 mins, until the sauce bubbles. Let it sit for 5 mins before serving.

CREAM OF CASHEW PEA SOUP

- Heat oil in a large saucepan over medium-low. Add onions, celery, and garlic and cook, stirring often and adding a splash or so of water if the bottom of pan gets too brown, until golden brown, 30-40 minutes. Season with salt and pepper. Add cashews, sugar, red pepper flakes, and 3 cups water and bring mixture to a simmer. Cook until vegetables are very soft and losing their structure, 10-15 minutes.
- Blend one-third of sugar snap peas with one-third of vegetable mixture in a blender, adding some cooking liquid from vegetable mixture as needed to thin, until very smooth, about 2 minutes. Press purée through a fine-mesh sieve into a medium saucepan; discard solids. Working in 2 batches, repeat with remaining peas and vegetable mixture, adding water as needed if you run out of cooking liquid. If soup is still very thick, thin with water until you get a velvety, pourable consistency. (You should have about 7 cups soup.)
- Stir vinegar into soup; season with more salt and pepper and warm over medium-low until heated through.
- Serve soup topped with scallions and potato chips.

- Soup can be made 2 days ahead. Let cool; cover and chill. Reheat over medium-low, thinning with water as needed until pourable.

- Place the corn or peas on a plate and pat dry using paper towel/s then place in a bowl with onions, cucumbers and celery (DO NOT add in the tomatoes you will add them in just before serving) toss to combine.
- Mix all the dressing ingredients together until well combined.
- Pour over the veggies; mix well to combine.
- Season with black pepper and more salt if needed.
- Cover and chill for a few hours to blend the flavors.

- In a large pot of boiling water, cook the pasta according to package instructions, stirring frequently, until al dente.
- Meanwhile, in a large 12-inch saute pan, set over medium-high heat, add the olive oil and the butter, stirring gently until the butter melts. Add the onions and saute until translucent, about 3 minutes. Add the garlic to the pan and saute until fragrant, about 30 seconds. Place the diced ham in the pan and saute for 1 minute.
- Deglaze the pan with wine and cook until it is reduced, about 30 seconds. Add the cream, peas, salt and pepper and reduce the cream by half, about 4 to 5 minutes.
- Drain the pasta well and transfer to a large heat resistant bowl. Pour the sauce over the pasta and sprinkle with the cheese and the parsley. Toss gently with tongs until the pasta is coated with sauce. Serve hot.
CREAMY BRAISED CHICORY/BELGIAN ENDIVE AND CELERY WITH PEAS
This recipe would make a lovley side dish to your Christmas of Thanksgiving turkey. In fact the recipe source ('Good Food' magazine December 2005) suggests to serve this at Christmas. It serves 8 as a side dish together with another side dish. However, it can also be served as a main dish as I did. It will serve 3 then. We had this as a main course together with 'wild rice mix' (longgrain rice with wild rice pieces in it). Lovely!

- Heat oven to 200C / fan 180C / 295F / gas 6. Hold one chicory half and a length of celery together and wrap with a rasher of pancetta or bacon to make a bundle. Repeat with remaining veg and place in a shallow ovenproof dish. If you have any leftover celery, pop that in too. Pour in the stock and cream, season to taste and cover tightly with foil.
- Bake for 40 minutes or until the vegetables are soft. Remove the foil and stir in the peas. Cook for 10 minutes more until the bacon is crisp and the peas just cooked.
- Serve this as a main dish together with rice (serves 3) or as a side dish (serves up to eight).

PEA AND BEETROOT CREAM SOUP

- Make beetroot soup first. Heat 2 tbsp olive oil in soup pan. Add finely sliced onion and sauté until translucent.
- Add chopped celery and minced garlic and sauté for a minute.
- Add peeled and chopped beetroot and sauté together another minute.
- Add chicken stock, cover and cook on medium heat for about 30-35 minutes, until beetroot is soft.
- The pea soup will be ready in same time with beetroot soup. Heat 2 tbsp olive oil in another soup pan. Add finely sliced onion and sauté until translucent.
- Add chopped celery and minced garlic, peas and sauté for a minute.
- Add chicken stock, cover it and cook on medium heat for 15-20 minutes.
- Blend each soup seperately with immersion blender until smooth. Remember to rinse immersion blender in between each soup. Season it with salt and pepper according to your taste.
- If you made it ahead, gently reheat both soups and pour into separate jugs.
- With one jug in each hand, pour soups at the same time into the soup plates.
- Make swirls with a toothpick.
- Decorate with pistachio (optional).
CREAMY CELERY AND POTATO SOUP
Very easy to make, healthy, filling and, most of all, delicious!

- Melt the butter in a large saucepan over a low heat. Add the celery, potatoes and leeks and cook gently for 5 minutes.
- Pour the stock into the pan and add the bay leaf. Bring to the boil, then reduce the heat, cover and simmer for 20 minutes or until all the vegetables are tender. Remove the bay leaf.
- Cool slightly. Using a draining spoon, lift out the vegetables and put them into a blender or food processor with some of the liquid. Whizz to a purée.
- Return the purée to the pan with the rest of the liquid, add the milk and heat gently. Season to taste with salt and pepper.
- Ladle the soup into warm bowls and grind a little more pepper over the top. Scatter over the chopped celery leaves to garnish.
CREAM OF CELERY SOUP
Steps:
- In a small saucepan add 1 cup celery, 1 cup carrots, 1 cup vegetable broth. Bring to a boil and cook until tender, about 4 minutes. Drain and reserve cooked vegetables. In a large saucepan, over medium high heat, melt butter. Add onions and saute until clear. Whisking, add flour, cook 2 minutes making sure flour does not brown. Add 5 cups vegetable broth and continue to whisk until mixture boils, making sure to reach the bottom of the pan. Add uncooked 1 cup celery and 1 cup carrots. Bring mixture to a boil, reduce heat, and simmer about 30 minutes. When cooked strain soup through a fine sieve into a clean pot reserving vegetables. In a blender puree vegetables with 1 1/2 cups of liquid. Stir puree into pot with liquid. Stir in cream, reserved vegetables. Heat and serve.
