QUESADILLA BURGERS
This is a great twist on the hamburger that everyone is sure to love! It's a combination of southwest and the classic American hamburger. I have three kids who all eat very differently from one another and this was a hit for them as well as hubby! I like to serve these with either sweet potato fries or green bean fries!

Steps:
- Mix sour cream, ranch dressing, and taco sauce together in a bowl until Southwest sauce is smooth. Cover bowl and refrigerate for flavors to blend.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Cook hamburger patties in the preheated grill for 5 minutes, seasoning with Worcestershire sauce. Flip patties. Arrange tortillas on the grill and lower heat to medium-low under tortillas. Add Cheddar cheese and Colby-Jack cheese to tortillas; cook until cheeses melt, 2 to 4 minutes. Continue cooking hamburger patties until cooked through, about 5 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Spread Southwest sauce onto 1/2 of the tortillas; top with lettuce and picante sauce. Place 1 hamburger patty on top of picante sauce layer and top patty with a tortilla, creating a sandwich.

CHEESEBURGER QUESADILLAS

- In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in ketchup, mustard, bacon and Worcestershire sauce; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 5-7 minutes, stirring occasionally., Meanwhile, in a small bowl, combine mayonnaise, milk, relish and pepper; set aside., Preheat griddle over medium heat. Sprinkle 4 tortillas with cheese; top with beef mixture and remaining tortillas. Place on griddle; cook until golden brown and cheese is melted, 1-2 minutes on each side. Serve with sauce and, if desired, lettuce and tomatoes.

- Toss together the Cheddar, Monterey Jack and pepper jack in a bowl; set aside.
- Heat 2 tablespoons of the butter in large skillet over medium heat. Place a single tortilla in the skillet. Sprinkle a little less than a third of the cheese blend over the tortilla. Sprinkle with salt and pepper. Add about a third of the diced tomato and a third of the chiles. Sprinkle a touch more cheese over the whole thing and gently top and press with a second tortilla. Cook until golden on the bottom, about 3 minutes.
- Carefully flip the quesadilla to the other side. Continue cooking until the second side is golden, 3 to 4 minutes more. Repeat with the remaining ingredients. Slice each quesadilla into wedges and garnish with cilantro sprigs.

- Preheat a grill over medium heat. Combine the ground beef, onion, ketchup, mustard, relish, salt and pepper in a medium-size bowl. Place the tortillas on a clean work surface. Spread half of meat mixture on half of each tortilla, leaving about a 1/2-inch border. Top the beef with 2 slices of American cheese and 1/2 cup cheddar. Fold the empty side of each tortilla over the filled side. Grill for 1 to 2 minutes on each side, or until the cheese has melted and light grill marks appear. Cut into wedges before serving. Tip: I like to use 3 (5 ounce) Bobby Chez Smashed Burgers instead of ground beef because they're such a great quality. Cook and crumble, as directed.

- In a medium bowl, toss together veggie burgers, salsa, cheese, and seasonings.
- Use pizza cutter to cut tortillas into 7 inch triangles.
- Place about 2 tablespoons burger mixture in the center of each triangle.
- Fold corners of large triangles over filling, completely enclosing filling and making small triangles.
- Secure with toothpicks, and brush with butter.
- Place on grill with toothpick sides up.
- Grill at 375 degrees for 9-12 minutes, or until cheese completely melts.
- Arrange on top of shredded lettuce, and sprinkle with bell pepper.
CHEESEBURGER QUESADILLA
Burritoville, a local joint down by Southeast University here, specializes in some of the oddest burritos I've ever tasted. From the BBQ chicken to the Buffalo burrito, I've had them all, but they've got only one type of quesadilla. So I've decided to take one of my favorite burritos from there, the cheeseburger burrito and apply it to quesadilla form. Served with a side of fries and a Coke®, it's what I call my most recent of culinary triumphs. Serve with a side of ketchup, yellow mustard, and sweet relish.

- Heat butter in a saucepan over medium heat; cook and stir onion until slightly tender, about 5 minutes. Add ground beef, Worcestershire sauce, salt, black pepper, and garlic powder; cook and stir until beef is browned and crumbly, about 10 minutes. - Gently shape beef into 4 balls, shaping just enough to keep together (do not compact). In a large skillet, heat oil over medium heat. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness. Cook until edges start to brown, about 1-1/2 minutes.
