1 lb breakfast sausage
12 eggs
1/2 tsp salt
1 cup half-and-half
1/2 cup green onions
4 cups day-old bread (torn into chunks)
1 cup sharp cheddar cheese (shredded)

Steps:

  • Grease a 9" square baking dish then set aside.
  • Place a large skillet over medium heat then add sausage. Cook sausage, crumbling until evenly browned and cooked through. Drain excess grease then set aside to cool.
  • In a large mixing bowl, beat the eggs together with salt and half-and-half. Add green onions and cooked sausage then stir to combine.
  • Cut the bread into 1" cubes then stir the bread cubes and shredded cheese into egg mixture.
  • Spread mixture into prepared baking dish, cover with aluminum foil and chill in the refrigerator for at least 8 hours, or overnight.
  • Preheat oven to 350 degrees and bake, covered, for 60 minutes. Remove foil and continue to bake until completely set, about an additional 15-20 minutes.

1 tablespoon unsalted butter, softened
1 pound ground sausage
4 cups shredded cheddar cheese
6 large eggs
1 teaspoon salt
1 teaspoon dry mustard
2 cups half and half

Steps:

  • Remove the casserole from the refrigerator and let it stand at room temperature for about 20 minutes.
  • Preheat the oven to 350 F.
  • Serve and enjoy!

1 lb sausage
1 cup chopped onion (optional)
6 eggs
2 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dry mustard
4 slices bread, cubed
1 cup grated cheese
2 tablespoons margarine

Steps:

  • Cook sausage and onion until done; break into small pieces. Drain and set aside.
  • Combine eggs, milk, salt, pepper, and mustard into mixing bowl. Mix well.
  • Grease a 13 x 9 inch casserole dish with the butter or margarine.
  • Layer the cubed bread, sausage, and 1/2 cup cheese into dish.
  • Pour in the egg mixture and sprinkle with remaining cheese.
  • Bake uncovered in preheated oven at 350 for 45 minute.
  • This recipe can be prepared ahead of time and refrigerated prior to baking.

1 1/2 cups sharp longhorn cheese, shredded

1/2 lb bulk turkey sausage
1/4 teaspoon fennel seed
1/4 teaspoon dried oregano leaves
1/4 lb French bread, cut into 1/2-inch cubes
1 (8 ounce) carton egg substitute
2/3 cup skim milk
1/2 cup evaporated skim milk
1 teaspoon dry mustard
1/8 teaspoon cayenne pepper
1 dash black pepper
paprika (to garnish)
1/2 cup grated reduced-fat sharp cheddar cheese

Steps:

  • Coat nonstick skillet with cooking spray at medium-high heat for 1 minute.
  • Add sausage, fennel, oregano.
  • Cook until brown, then transfer to paper towel and set aside.
  • Coat an 8-inch square baking pan with cooking spay and line the bottom with cubed bread.
  • Sprinkle meat over bread.
  • In separate bowl, combine remaining ingredients and pour over sausage.
