Steps:

  • Combine the brown sugar, mustard, soy sauce, paprika, ginger and oil in a small saucepan. Bring to a boil. Cook and stir until brown sugar is dissolved., Place salmon skin side down on a greased broiler pan. Sprinkle with pepper and salt., Broil 6 in. from the heat for 10-15 minutes or until fish flakes easily with a fork, brushing glaze over salmon during the last 1-2 minutes of cooking.

The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

2 tablespoons hot sauce, such as Frank's
1 tablespoon packed dark brown sugar
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 tablespoons light mayonnaise
1 tablespoon snipped chives
8 stalks celery, very thinly sliced in half moons on an angle
1/2 small red onion, very thinly sliced
Four 5-ounce center-cut skin-on salmon fillets, about 1-inch thick
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling the grill

Steps:

  • Preheat an outdoor grill or grill pan on medium high.
  • Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
  • Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
  • Transfer the fillets to individual plates and serve with the celery slaw.

1 ½ cups brown sugar
4 ½ tablespoons lemon juice
2 ¼ teaspoons dried dill weed
¾ teaspoon ground cayenne pepper
1 pound salmon fillets, with skin
lemon pepper to taste

Steps:

  • Preheat an outdoor grill for high heat.
  • Melt the butter in a saucepan over medium heat, and mix in the brown sugar, lemon juice, dill, and cayenne pepper. Cook and stir until the brown sugar is dissolved. Reduce heat and simmer until ready to brush onto the salmon.
  • Season salmon with lemon pepper, and place directly on the grill grate, skin side down. Brushing frequently with the butter and brown sugar glaze, cook the salmon 20 minutes, or until easily flaked with a fork. Reserve some of the glaze for serving.

½ teaspoon EACH: onion powder AND garlic powder
2 teaspoons smoked paprika
1 teaspoon kosher salt
1 tablespoon melted butter
3-4 tablespoons maple syrup
1 ¼ pounds salmon (cut into 3-4 pieces)

Steps:

  • PREP: Position a rack in the upper third of the oven and preheat the oven too 450ºF. Line a baking sheet with foil and spray with cooking spray (or brush with a little oil) and set aside. In a small bowl, combine the cayenne, onion powder, paprika, salt, and garlic powder.
  • SALMON: Place the salmon on the prepared baking sheet, brush with melted butter, and sprinkle with the prepared seasoning. Bake the salmon for 8-10 minutes depending on the thickness of the salmon. Generally, you need to bake it about 4-5 minutes for every 1/2 inch of thickness. Remove from the oven, brush with the maple syrup and place back in the oven. Switch to the broiler setting and broil for 30 seconds to 1 minute or until bubbly and brown. ¼ teaspoon olive oil
1 clove garlic, minced
¼ cup soy sauce
½ lemon, juiced
1 teaspoon honey

Steps:

  • Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.

2 small bunches broccoli - or about 4 cups florets with stem
6 tablespoons light flavored olive oil
3 tablespoons soy sauce
3 tablespoons rice vinegar
3 garlic cloves (minced)
1 scant teaspoon red pepper flakes
3 tablespoons peach jam

Steps:

  • Heat the broiler with rack in middle position. In a small bowl or glass measuring cup, combine the oil, soy sauce, vinegar, garlic, pepper and jam. Set aside.
  • Line a baking sheet with foil and grease lightly with oil. Place the salmon on the baking sheet and then spoon about half of the sauce mixture on top of the fish. Broil just until the fish barely flakes apart with a fork, about 10 minutes.
