5 lbs small frog's legs
3/4 cup lemon juice or 3/4 cup vinegar
crushed ice
1 cup milk
6 eggs, separated
2 tablespoons olive oil
1/4 teaspoon salt
salt and pepper
1 1/2 cups flour
vegetable oil

Steps:

  • Wash the frog legs thoroughly and place in a large Dutch oven. Sprinkle with the lemon juice or vinegar and cover with the ice.
  • Refrigerate for 1 to 3 hours.
  • Combine milk, egg yolks, olive oil, and 1/4 teaspoon salt; mix well.
  • Beat egg whites until stiff and fold into egg batter.
  • Sprinkle frog legs with salt and pepper; dip each in batter and dredge in flour. Fry until golden brown in deep oil heated to 375°F; drain on paper towels.

24 frog's legs, skin removed
1 (4 ounce) packet saltine crackers, crushed
1 cup all-purpose flour
½ cup cornmeal
1 teaspoon minced onion
2 teaspoons salt
1 tablespoon ground black pepper
2 eggs
½ cup milk
2 cups vegetable oil for frying
1 cup peanut oil for frying

Steps:

  • Rinse the frog's legs and pat dry; set aside. In a large resealable bag, combine the saltine cracker crumbs, flour, cornmeal, onion, salt and pepper. Shake to mix. In a shallow bowl, whisk together eggs and milk.
  • Heat the vegetable oil and peanut oil in a large skillet over medium-high heat. The oil should be about 1/2 inch deep.
  • Dip the frog's legs into the milk and egg, then dip into the cracker mixture until evenly coated. Carefully place them in the hot oil. Cook until golden brown on each side, about 5 minutes per side. If the legs start to brown too quickly, reduce the heat to medium. Drain on paper towels before serving.

2 to 2 1/2 pounds small frog legs
1/3 cup lemon juice
1 tray of crushed ice
2 cups vegetable oil or shortening (for deep frying)
1/3 cup milk
2 eggs, separated
2 teaspoons vegetable oil
Dash of salt and freshly ground black pepper
Optional: dash cayenne pepper
2 cups all-purpose flour
1 teaspoon garlic powder

Steps:

  • Wash frog legs thoroughly. Place in a large bowl; sprinkle with lemon juice, and cover with crushed ice. Refrigerate the frog's legs for 30 minutes to 1 hour.
  • Heat the oven to 200 F or warm setting.
  • In a deep saucepan or skillet or deep fryer, heat about 2 inches of vegetable oil or melted shortening to 375 F.
  • Line a large rimmed baking pan with paper towels.
  • In a medium bowl, whisk together milk, egg yolks, and 2 teaspoons oil.
  • Beat the egg whites until stiff; fold into milk and egg yolk mixture.
  • In another bowl, combine the flour and garlic powder; blend well.
  • Sprinkle the frog legs with salt and freshly ground black pepper, and a little cayenne pepper, if using; dip each frog's leg in milk-egg mixture, then dredge in the flour and garlic powder mixture to coat thoroughly.
  • Working in batches, fry the coated frog legs in the hot fat until golden brown, about 2 minutes. With a slotted spoon, transfer to the paper towel-lined pan to drain. Put them in the preheated oven to keep warm while frying subsequent batches.

Steps:

  • Soak frog legs in milk for 1 hour, turning every 15 minutes.
  • Remove from milk and salt and pepper them lightly, and coat them in flour.
  • In a skillet bring the butter to a sizzle and add frog legs.
  • Sauté legs uncovered until they're golden brown on both sides (turning as needed).

16 large frog's legs or 32 small frog's legs
all-purpose flour
2 tablespoons butter
2 teaspoons corn oil
4 teaspoons garlic butter
salt
pepper
1 lemon, juice of
flat leaf parsley
lemon slice (to garnish dish)

Steps:

  • Clean legs under cold water and dry them.
  • With a small knife, make an incision between and bone of lower part of one leg and insert through the other (criss-cross).
  • Preheat oven to 400°F.
  • Salt and pepper each leg and cover them with flour.
  • In a saucepan add the butter and brown them 4 minutes each side.
  • In a small pot add the garlic butter, parsley, and lemon juice; simmer a few minutes.
  • Put the legs in an oven proof-baking dish; pour over the garlic sauce and bake for about 30 to 35 minutes.
  • Serve on preheated plates. Bon appetit.

1 pound frog legs, rinsed and patted dry
2 teaspoons white sugar
2 teaspoons garlic salt
½ teaspoon black pepper
Oil for deep frying
1 egg, beaten
¾ cup cornstarch or tapioca starch
2 tablespoons butter
2 teaspoons garlic, minced
Salt to taste
¼ cup soy sauce
1 tablespoon lime juice
2 teaspoons chili paste or sauce
1 teaspoon white sugar
1 teaspoon minced garlic
½ teaspoon sesame oil

Steps:

  • Place the frog legs into a bowl and sprinkle with a mixture of 2 teaspoons sugar, garlic salt, and black pepper. Toss until evenly coated, then set aside to marinate for 30 minutes.
  • Heat at least 2 inches of oil in a large, heavy pot to 350 degrees F (175 degrees C).
  • Mix the frog legs in the beaten egg to coat, then drain off excess. Toss in cornstarch, and shake off excess. Fry in hot oil until golden brown and cooked through; 4 to 5 minutes. Turn once to insure they cook evenly.
  • While the frog legs are cooking, melt butter in a small skillet over medium heat; stir in 2 teaspoons of minced garlic. Cook gently for about 3 minutes until the garlic softens, season with salt to taste.
  • When the frog legs have finished cooking, drain well on paper towels, then place onto a serving dish. Pour garlic-butter sauce overtop; serve with dipping sauce.
  • To make the dipping sauce, stir together the soy sauce, lime juice, chili paste, 1 teaspoon of sugar, and 1 teaspoon of minced garlic in a small bowl. Season to taste with sesame oil if desired.

2 cups yellow cornmeal
1 cup all-purpose flour
2 tablespoons seafood seasoning (such as Old Bay®)

Steps:

  • Place frog legs in a bowl and pour milk over the top. Cover and refrigerate for 1 hour.
  • Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
  • Meanwhile, combine cornmeal, flour, and seafood seasoning in a gallon-sized resealable plastic bag. Seal and shake to combine.
  • Remove 1 pair of frog legs from the milk, letting excess drain back into the bowl. Place in the bag with the seasoned cornmeal mixture and shake to coat. Dip the frog legs back in the milk and return to the cornmeal mixture. Shake to coat once more and transfer to a plate. Repeat with remaining frog legs.
  • Spray the air fryer basket with cooking spray and add as many frog legs as you can without overlapping. Spray the tops with cooking spray. Work in batches if needed.
  • Air fry for 5 minutes. Spray any chalky spots with cooking spray. Continue cooking until crispy, about 3 minutes more. Transfer to a plate and repeat with remaining batches.
