A Recipe that is always requested from my kids when they come and visit. I spent 20 years of my 28 years in the Air Force in the dining hall. I think I have perfected SOS (Creamed Beef).Very simple and quick. Serve over toast (Shingles) or biscuits or hashed brown potatoes. I know leaving the grease in is not real healthy but it really makes it tasty. If you use anything other then HAMBURGER or drain the grease it will not turn out.

1 pound ground beef
2 cubes chicken bouillon, crumbled
½ teaspoon garlic powder
½ teaspoon ground black pepper
¼ teaspoon onion powder
½ cup all-purpose flour
1 ½ cups low-fat milk

Steps:

  • Heat a large skillet over medium-high heat; stir in the ground beef, chicken bouillon, garlic powder, black pepper, and onion powder. Cook and stir until the beef is crumbly, evenly browned, and no longer pink, about 7 minutes.
  • Stir in the flour and cook for 3 minutes, stirring constantly. Stir in the milk and bring to a simmer, stirring constantly. Reduce heat to medium-low, and simmer 5 minutes to thicken.

1 pound ground beef
1/2 cup onion (chopped)
1 clove minced garlic
1/4 cup flour
1/2 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon Worcestershire sauce
2 cups milk (I use one 12 ounce can of evaporated milk and enough water to make 2 cups)

Steps:

  • Brown ground beef, onion and garlic until beef is cooked. Drain. Put hamburger back in skillet and add flour, salt, pepper, Worcestershire sauce and milk. Simmer until gravy thickens. Makes 6 to 8 servings.

Although I seldom cook with hamburger, this is a wonderful example of how mom taught us how to improvise, adapt, and experiment to the nth! This one's being added for posterity! The next time I pour in a cup of salsa because I'm out of tomatoes, I'll think of mom and blow her a kiss. MUAH!

cream soup, vegetables, meat, etc. as available

Steps:

  • Salt skillet. Brown desired amont of hamburger. Push meat aside and add 1 to 2 tablespoon flour to remaining grease. When it forms a paste, add desired amount of milk to make a gravy. Season with salt and pepper. At this point, it can be served on toast, mashed potatoes, noodles, rice, etc.
  • HOWEVER, this can be a take off point to several directions. Other ingredients an be added along the way. Celery, onion, mushrooms, left-overs of various kinds (vegetables, soups, even other meats, etc.) Also, sometimes I simply add half a package of dry onion soup mix after the hamburger fries; doesn't need any other seasoning. One time I found a cup of cooked rice to add. Another time I found a half can of cream of mushroom soup, another time a cup of left-over cream of potato soup.

1 pound lean ground beef
1/4 cup all-purpose flour
2 cups milk
1 1/2 teaspoons salt
1/4 teaspoon pepper
4 white bread slices, toasted and cut in half diagonally
Butter, to top

Steps:

  • Saute the beef in a large skillet over medium heat, breaking it up with a wooden spoon and cooking until it is no longer pink, 12 to 15 minutes. Drain off the excess fat and sprinkle the meat with the flour. Stir and cook the beef and flour over medium heat until the flour has completely coated the beef and cooked slightly. Stir in the milk and continue to cook until the mixture becomes smooth and thickens, about 8 minutes. Add the salt and pepper. Serve over toast triangles. Top with a pat of butter.

2 pounds chopped beef chuck or round
1 onion
1 tablespoon heavy cream
Freshly ground black pepper
Unsalted butter
Vegetable oil, as needed
Kosher salt, to taste

Steps:

  • Spread the meat out on a board and grate 2 to 3 tablespoons of onion into it¿use a fairly fine grater so you get just the juice and very finely grated raw onion. Now mix in about a tablespoon of heavy cream and some freshly ground black pepper, to taste. Form into patties¿a 6- to 8-ounce patty for an average serving.
  • Using a black iron skillet or your best copper one or your pet aluminum frying pan, Teflon-coated or not (with a Teflon coating you won't need much fat, just a little bit for flavor), and cook the hamburgers in the butter and oil over fairly high heat, giving it 4 to 5 minutes a side, depending on how well done you like it. Salt this creamy, oniony, peppery hamburger before serving it on a buttered bun or English muffin, or as a main course with sliced tomatoes and onions or some home-fried potatoes.

I loved it when Mom used to make this for us! I have no idea if she originally made it for Dad, who had been in the army, or if she just liked it because it tasted good and was a budget stretcher. A traditional favorite, good ol' SOS. Note: the title of this recipe specifies that it is made ground beef, rather than chipped beef; "authentic" SOS is generally made with chipped beef, however many folks also refer to the ground beef version by the same name.

1/4 cup chopped onion
1/4 cup flour
1 teaspoon beef bouillon powder
3/4 teaspoon salt, to taste

1/4 teaspoon onion powder (optional) or 1/4 teaspoon granulated onion (optional)
cayenne powder, to taste

1 tablespoon bacon drippings or 1 tablespoon oil
1/2 lb ground beef
3 tablespoons minced onions
1 1/2 tablespoons flour
1 cup milk
salt and pepper
mashed potatoes or toast

Steps:

  • Heat bacon drippings or oil in a large skillet over medium-hi heat; add ground beef and onion and cook and stir, breaking meat into small crumbs, until meat and onions have browned, about 7 minutes.
  • Push meat to side of pan and drain off all but 1 1/2 tablespoons pan drippings; return to low heat and whisk flour into pan drippings until smooth.
  • Slowly add milk and stir until smooth.
  • Move meat back into center of pan and stir to coat with gravy; cook until thickened, season with salt and pepper to taste and serve over split baking powder biscuits, toast or corn bread or over mashed potatoes.
