ONION SKIN EASTER EGGS



Onion Skin Easter Eggs image

This was a recipe of my grandmother and maybe her mothers. My grandmother was born in 1869. These eggs were always a favorite in our easter baskets,as well as those of my children. If you ask, someone in produce will be happy to provide you with the onion skins.

fresh egg
onion, skins

Steps:

  • Place in a heavy pot a thick layer of onions skins.
  • Then a layer of eggs, then a layer of onion skin and so on,until you have in the pot as many eggs as you want.
  • Fill Pot with water to cover all.
  • Cook on medium heat and checking the eggs now and then until they are almost a burgundy in color.

  • Pour the 2,5 liters of water and the 200 ml of vinegar in the pot. Add the salt and bring to a boil. Reduce heat to medium and simmer for about 40 minutes. Remove from heat and set aside for 10-15 minutes to cool slightly.
  • With a tablespoon, dip the eggs carefully one by one into the dye. Once you have added all the eggs into the pot, transfer the pot to the heat again and simmer over medium heat for about 30 minutes.
