Steps:

  • Pour boiling water over sugar in a small bowl. Stir till sugar is dissolved.
  • Cover and chill.
  • Sieve fruit puree, if necessary.
  • Combine with sugar syrup.
  • Freeze in ice cream maker according to manufacturer's directions.

1 banana, peeled and sliced
1/4 cup brown sugar
1 tablespoon lime juice

Steps:

  • Place all of the ingredients in a blender and blend until smooth. Place in an ice cream maker and freeze according to instructions. Or pour into a covered freezer proof container and place in the freezer. Stir to break-up the ice with a fork after the first 30 minutes in the freezer. Continue to stir the sorbet every 10 minutes for the next half an hour. You may substitute the fruits used here with any of your favorites.;

1 1/4 cups sugar
1 1/4 cups water
1 teaspoon grated grapefruit zest
2 cups freshly squeezed red-grapefruit juice
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon freshly ground black pepper

Steps:

  • Combine the sugar, water, and grapefruit zest in a medium saucepan, and bring to a boil over medium-high heat, stirring occasionally until the sugar dissolves. Remove the pan from the heat and set it aside to steep for 5 minutes.
  • Stir in the grapefruit juice and lemon juice. Strain the mixture through a fine-mesh sieve into a bowl. Stir in the black pepper, and set it aside to cool. (It will cool faster if you set the container in a bowl of ice water and stir it intermittently.)
  • Cover and refrigerate the sorbet base until it is thoroughly chilled, about 4 hours or up to overnight.
  • Process the sorbet in an ice cream machine according to the manufacturer's directions. Transfer it to a freezerproof container, cover, and freeze until ready to serve.

3 peaches, ripe but firm (peeled, pitted and sliced,about 2 cups)
1/2 cup raspberries
1/2 cup granulated sugar
1/2 cup water
1 strip lemon rind

Steps:

  • Freeze peach slices and raspberries in a single layer for at least 2 hours or until solid. Store in freezer bags or air-tight containers.
  • SIMPLE SYRUP: In a small saucepan, bring sugar and water and lemon rind to a boil, stirring to dissolve sugar. Boil for 1 minute. Let cool completely and remove rind.
  • In a food processor, process frozen fruit, pouring syrup in slowly, until smooth, 2-3 minutes.
  • Serve immediately, or store in freezer.

4 teaspoons dark rum
1 teaspoon freshly squeezed lime juice

Steps:

  • Cut the bananas and pineapples into small chunks.
  • Puree the fruit in a blender along with the tangerine juice, passion fruit juice or pulp, sugar, rum, and lime juice until very smooth.
  • Chill the mixture thoroughly, then freeze it in your ice cream maker according to the manufacturer's instructions.
