CREAMY BANANA FRENCH TOAST CASSEROLE
Adding just a little lemon juice not only keeps the bananas from turning dark but it also adds bright flavor to this creamy casserole. Serve with fresh berries if desired.

- Coat a 13- X 9-in baking dish with cooking spray; stand bread quarters up in prepared dish so it lines the sides and bottom in a single layer.Preheat oven to 350°F.
- Place milk, syrup, eggs, cream cheese, 2 bananas, rum, vanilla, juice, nutmeg, cinnamon and salt in a blender; process until smooth, 1-2 minutes. Slowly pour mixture over bread; press bread into egg mixture, making sure it is completely submerged. Cover with foil; chill for 30 minutes (or up to overnight).
- Preheat oven to 350°F.
- Just before baking, thinly slice remaining 2 bananas; tuck slices in between pieces of bread. Bake, covered with foil, 25 minutes. Remove foil; bake until golden brown and set, about 10 minutes more. Sprinkle top of casserole with powdered sugar; slice into 12 pieces and serve immediately.

I have yet to try this, but it sounds awesome! The banana whipped cream topping must be started at least two hours before serving. I would do this the night before so it is ready to use in the morning. This is definitely on my must try list.

Steps:
- For topping: combine bananas, orange juice, sugar and lemon juice and cook over medium heat for 5 minutes or until the bananas become very soft.
- With a slotted spoon, transfer bananas to blender.
- Add 1/4 cup of the liquid from the pan and puree until smooth.
- Place in a bowl, cover with plastic wrap and chill until cold (at least 2 hours).
- Just before serving, beat whipping cream in a medium bowl until stiff peaks form.
- Fold banana puree into whipping cream.
- For French toast, whisk together the eggs, milk, cinnamon and vanilla.
- Dip bread slices into egg mixture, coating both sides well.
- Melt butter in skillet or griddle and cook slices over medium heat until golden brown.
- Keep slices in warm oven until all are completed.
- Serve with a generous dollop of banana cream topping and garnish with a few slices of freshly sliced bananas.

- To make the filling: Mash cream cheese, banana, sugar, and vanilla.
- Slice bread in half and make little "half sandwiches" with the filling inside.
- Next, beat the eggs, milk, and salt in a seperate bowl.
- Heat butter in a skillet over medium heat.
- Dip the little half-sandwiches in the egg/milk mixture and place in the skillet.
- I cook 4 little half-sandwiches at a time for 3 minutes on the first side and 2 on the second until they are golden brown on each side.
- Sprinkle with confectioner's sugar and top with raspberries and whipped cream!
- Note: To keep them warm while I cook the rest, I keep them in a warm oven as they get done. Also, be sure to add more butter each time you put new sandwiches in the pan.
