Adding just a little lemon juice not only keeps the bananas from turning dark but it also adds bright flavor to this creamy casserole. Serve with fresh berries if desired.

5 spray(s) Cooking spray
1 cup(s) 2% reduced fat milk
0.5 cup(s) Maple syrup
6 large Raw egg(s)
4 oz Neufchâtel cheese (1/3-less-fat cream cheese)
4 medium Banana(s) ripe, divided
1 tbsp(s) Rum
1 tsp(s) Vanilla extract
2 tsp(s) Fresh lemon juice
0.5 tsp(s) Ground nutmeg
0.5 tsp(s) Ground cinnamon
0.25 tsp(s) Table salt
3 tbsp(s) Powdered sugar (icing sugar)

Steps:

  • Coat a 13- X 9-in baking dish with cooking spray; stand bread quarters up in prepared dish so it lines the sides and bottom in a single layer.Preheat oven to 350°F.
  • Place milk, syrup, eggs, cream cheese, 2 bananas, rum, vanilla, juice, nutmeg, cinnamon and salt in a blender; process until smooth, 1-2 minutes. Slowly pour mixture over bread; press bread into egg mixture, making sure it is completely submerged. Cover with foil; chill for 30 minutes (or up to overnight).
  • Preheat oven to 350°F.
  • Just before baking, thinly slice remaining 2 bananas; tuck slices in between pieces of bread. Bake, covered with foil, 25 minutes. Remove foil; bake until golden brown and set, about 10 minutes more. Sprinkle top of casserole with powdered sugar; slice into 12 pieces and serve immediately.

I have yet to try this, but it sounds awesome! The banana whipped cream topping must be started at least two hours before serving. I would do this the night before so it is ready to use in the morning. This is definitely on my must try list.

8 slices bread
4 large eggs
1 cup milk
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 ripe bananas, peeled and sliced
1/2 cup orange juice
1/4 cup confectioners' sugar
2 tablespoons fresh lemon juice
3/4 cup chilled whipping cream

Steps:

  • For topping: combine bananas, orange juice, sugar and lemon juice and cook over medium heat for 5 minutes or until the bananas become very soft.
  • With a slotted spoon, transfer bananas to blender.
  • Add 1/4 cup of the liquid from the pan and puree until smooth.
  • Place in a bowl, cover with plastic wrap and chill until cold (at least 2 hours).
  • Just before serving, beat whipping cream in a medium bowl until stiff peaks form.
  • Fold banana puree into whipping cream.
  • For French toast, whisk together the eggs, milk, cinnamon and vanilla.
  • Dip bread slices into egg mixture, coating both sides well.
  • Melt butter in skillet or griddle and cook slices over medium heat until golden brown.
  • Keep slices in warm oven until all are completed.
  • Serve with a generous dollop of banana cream topping and garnish with a few slices of freshly sliced bananas.

12 slices of good quality bread
4 eggs
2 cups milk
1 pinch salt
8 ounces cream cheese (softened)
1 teaspoon confectioners' sugar
1 teaspoon vanilla
1 ripe banana (mashed in a dash of lemon juice to prevent browning)
1 dash confectioners' sugar
1 cup raspberries
Cool Whip

Steps:

  • To make the filling: Mash cream cheese, banana, sugar, and vanilla.
  • Slice bread in half and make little "half sandwiches" with the filling inside.
  • Next, beat the eggs, milk, and salt in a seperate bowl.
  • Heat butter in a skillet over medium heat.
  • Dip the little half-sandwiches in the egg/milk mixture and place in the skillet.
  • I cook 4 little half-sandwiches at a time for 3 minutes on the first side and 2 on the second until they are golden brown on each side.
  • Sprinkle with confectioner's sugar and top with raspberries and whipped cream!
  • Note: To keep them warm while I cook the rest, I keep them in a warm oven as they get done. Also, be sure to add more butter each time you put new sandwiches in the pan.
