CRUNCHY SALAD WITH COCOA VINAIGRETTE



Crunchy Salad with Cocoa Vinaigrette image

4 cups baby arugula
1 cup roasted almonds, chopped
2 stalks celery, thinly sliced
1 English cucumber, chopped
1 teaspoon Dijon mustard
1 teaspoon unsweetened cocoa powder
1/4 cup balsamic vinegar
1/4 cup extra-virgin olive oil
Shaved Parmesan, for garnish

Steps:

  • Mix together the arugula, almonds, celery and cucumber. Set aside while you make the dressing.
  • Whisk together the mustard, cocoa powder, balsamic and olive oil. Drizzle the salad with enough dressing to coat. Toss well together. Serve in individual bowls and garnish with shaved Parmesan.

170g unsalted butter, melted, plus extra for the tin
1 tsp vanilla extract
170g caster sugar
225g self-raising flour
25g cocoa powder
1 large egg, beaten
2 tbsp granulated sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 20cm square tin and line with baking parchment. Stir the melted butter and vanilla together in a bowl. Mix the caster sugar, flour and cocoa together in another bowl.
  • Pour the bowl of wet ingredients into the dry and beat together, then add the egg and beat again until combined. Press into the prepared tin. Brush the top with water and sprinkle over the granulated sugar.
  • Bake for 30-35 mins. Leave to cool slightly in the tin for 5 mins before slicing into squares and transferring to a wire rack to cool completely.

This is a bit like a coleslaw, but much more interesting with the combination of the baby vegetables and the shoots.

2 handfuls alfalfa and broccoli sprouts
2 handfuls mung bean sprouts
2 handfuls sunflower salad shoots
Mixed edible flowers
1 bunch fresh mint, leaves picked
2 baby courgettes (zucchini), sliced thinly lengthways
2 red chicory, cut in 1/2 then finely shredded
1 bunch baby carrots, sliced thinly lengthways
1/2 fennel bulb, halved and sliced finely
1 bunch French breakfast radishes, sliced lengthways
1 head celery, outer stalks and ends removed, halved and finely sliced lengthways
2 tablespoons French mustard
4 tablespoons creme fraiche
1 tablespoon olive oil
2 to 3 tablespoons white wine vinegar
Sea salt and freshly ground black pepper

Steps:

  • Mix all the vegetables together in a bowl. Now make your dressing by mixing all the ingredients together and toss the dressing with the salad.

2/3 cup unsweetened raw cocoa powder
1/4 cup maple sugar
Salt
2/3 cup raw cacao butter, melted
1 teaspoon pure vanilla extract
1 cup unsweetened rice cereal
1/2 cup roasted salted peanuts, plus more for topping

Steps:

  • Line an 8-inch square baking pan with parchment paper and set aside. In a medium bowl, whisk together the cocoa powder, maple sugar and 1/2 teaspoon salt. Whisk in the warm melted cacao butter and vanilla until smooth. Gently stir in the cereal and peanuts; pour into the lined pan and, using an offset spatula, spread evenly. Scatter some peanuts over the top and let set overnight at room temperature or refrigerate until firm, at least 2 hours. Cut into squares and serve.

1 cup peanut butter
1 cup packed brown sugar
1/2 cup corn syrup
1/2 cup liquid honey
1 cup chopped peanuts
1 teaspoon vanilla
8 cups corn flakes
2 cups chocolate chips
2 tablespoons shortening

Steps:

  • In a large saucepan, combine the peanut butter, brown sugar, corn syrup and honey. Stir over medium heat until smooth. Remove from heat and stir in peanuts and vanilla. Gradually add cereal, stirring until well coated. Press evenly into a buttered 15 x 10 inchy jelly roll pan.
  • In a double boiler or small heavy pan, melt chocolate and shortening together over low heat. Spread evenly over mixture in the pan. Chill until set. Cut into bars about 3 x 1 inch. Makes about 50 depending on how you cut them.

1 1/2 cups butter
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups oats
2 cups Rice Krispies
1 1/2 cups chocolate chips
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°F.
  • Mix butter, sugars, eggs and vanilla together in a large bowl until well blended. I just did this with a wooden spoon rather than a mixer.
  • Blend flour, baking powder, baking soda and salt together and add to the bowl, then oats, Rice Krispies, chocolate chips and pecans. Stir well.
  • Drop batter on parchment covered baking sheets in mounds of about 3 T., 3 inches apart, and flatten well with your hand.
  • Bake for about 10 minutes until pale gold and let rest on sheets for a few minutes before removing to a cooling rack.

1 (14 ounce) package Kraft caramels (about 48 caramels)
1/3 cup water
2 cups all-purpose flour
2 cups quick-cooking oats
1 cup packed brown sugar
1 cup melted margarine
1/2 teaspoon baking soda
1/4 teaspoon salt
1 (6 ounce) package semi-sweet chocolate chips

Steps:

  • Heat caramels and water over low heat, stirring often until caramels are melted and mixture is smooth.
  • Preheat oven to 350°F.
  • Mix flour, oats, brown sugar, margarine, baking soda and salt. Reserve 1 cup for the topping. Press remaining ingredients into a ungreased 9x13-inch pan.
  • Bake 10 minutes.
  • Sprinkle chocolate chips over baked layer, drizzle with caramel mixture.
  • Sprinkle remaining reserved mixture on top. Bake until lightly brown about 15 minutes.
  • Cool slightly; cut into 2x1-inch bars.

  • Directions.

Steps:

  • Combine cereal, chocolate chips, almonds and coconut. Add sweetened condensed milk and mix until well combined. Spread mixture in parchment paper-lined 8-inch square baking pan.
  • Bake in preheated 350F oven 20-25 minutes or until just golden.
  • Press candy pieces into top while still warm. Cool thoroughly and cut into bars.
