Steps:
- Mix together the arugula, almonds, celery and cucumber. Set aside while you make the dressing.
- Whisk together the mustard, cocoa powder, balsamic and olive oil. Drizzle the salad with enough dressing to coat. Toss well together. Serve in individual bowls and garnish with shaved Parmesan.

Steps:
- Heat the oven to 180C/160C fan/gas 4. Butter a 20cm square tin and line with baking parchment. Stir the melted butter and vanilla together in a bowl. Mix the caster sugar, flour and cocoa together in another bowl.
- Pour the bowl of wet ingredients into the dry and beat together, then add the egg and beat again until combined. Press into the prepared tin. Brush the top with water and sprinkle over the granulated sugar.
- Bake for 30-35 mins. Leave to cool slightly in the tin for 5 mins before slicing into squares and transferring to a wire rack to cool completely.

- Line an 8-inch square baking pan with parchment paper and set aside. In a medium bowl, whisk together the cocoa powder, maple sugar and 1/2 teaspoon salt. Whisk in the warm melted cacao butter and vanilla until smooth. Gently stir in the cereal and peanuts; pour into the lined pan and, using an offset spatula, spread evenly. Scatter some peanuts over the top and let set overnight at room temperature or refrigerate until firm, at least 2 hours. Cut into squares and serve.

- In a large saucepan, combine the peanut butter, brown sugar, corn syrup and honey. Stir over medium heat until smooth. Remove from heat and stir in peanuts and vanilla. Gradually add cereal, stirring until well coated. Press evenly into a buttered 15 x 10 inchy jelly roll pan.
- In a double boiler or small heavy pan, melt chocolate and shortening together over low heat. Spread evenly over mixture in the pan. Chill until set. Cut into bars about 3 x 1 inch. Makes about 50 depending on how you cut them.

- Preheat oven to 350°F.
- Mix butter, sugars, eggs and vanilla together in a large bowl until well blended. I just did this with a wooden spoon rather than a mixer.
- Blend flour, baking powder, baking soda and salt together and add to the bowl, then oats, Rice Krispies, chocolate chips and pecans. Stir well.
- Drop batter on parchment covered baking sheets in mounds of about 3 T., 3 inches apart, and flatten well with your hand.
- Bake for about 10 minutes until pale gold and let rest on sheets for a few minutes before removing to a cooling rack.

- Heat caramels and water over low heat, stirring often until caramels are melted and mixture is smooth.
- Preheat oven to 350°F.
- Mix flour, oats, brown sugar, margarine, baking soda and salt. Reserve 1 cup for the topping. Press remaining ingredients into a ungreased 9x13-inch pan.
- Bake 10 minutes.
- Sprinkle chocolate chips over baked layer, drizzle with caramel mixture.
- Sprinkle remaining reserved mixture on top. Bake until lightly brown about 15 minutes.
- Cool slightly; cut into 2x1-inch bars.
