CREAMED PEARL ONIONS WITH PEANUTS
A traditional holiday favorite in my family, this creamed pearl onion recipe is a surprising treat to the palate. Chopped dry roasted peanuts mingle with the cream sauce and onions, while the bread crumb topping gives it a nice bit of added texture. My sister used to bake this at every holiday meal she hosted, and since we've lost her, it has a special meaning :).

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a saucepan over medium heat, melt 2 tablespoons butter, and stir in the flour, salt, paprika, and pepper until smooth. Gradually blend the milk into the saucepan until thickened. Place the onions and nuts in a medium casserole dish. Pour the sauce over the onions and nuts, and toss to coat.
- In a separate saucepan, melt the remaining butter, and toss with the bread crumbs to coat. Sprinkle over the casserole.
- Bake 20 minutes in the preheated oven, until bubbly and lightly browned.

CREAMED RED AND WHITE PEARL ONIONS WITH BACON
This recipe came to The Times in 2003 from Barbara Lynch, the owner and chef of No. 9 Park in Boston. It is incredibly rich, and remarkably good. If you don't have time to blanch and peel the onions, feel free to use frozen pearl onions in a pinch.

Steps:
- If red and white onions are about the same size, bring a large pot of water to boil over high heat. Add onions and blanch until skins loosen slightly, about 5 minutes. Drain. (If white onions are considerably larger, blanch onions separately, increasing time on white onions by a couple of minutes.) Let onions until cool enough to handle, then trim and peel. Set aside. (Onions can be blanched, peeled and trimmed ahead of time. Place in 2-quart zipper-lock bag and refrigerate until ready to use.)
- Sauté bacon in a Dutch oven over medium heat until crisp, about 5 minutes. Transfer to paper-towel-lined plate and set aside. Pour off bacon fat. Melt butter in Dutch oven over low heat until foaming, add shallots and garlic and cook until translucent but not browned, stirring frequently, about 3 minutes. Add heavy cream and salt. Simmer, stirring often, until cream is thick and golden and has reduced by half, 15 to 20 minutes. Stir onions into cream to heat through.
- Heat broiler. Turn onions and cream into a shallow 1 1/2-quart casserole dish. Top with bacon, bread crumbs and parsley. Place under broiler and cook until crumbs are browned and dish is bubbling, about 10 minutes.

- Blanch the pearl onions by placing them into a large pot of rapidly boiling water. Cook them for about 1 minute. Remove the onions from the water with a strainer, then plunge into an ice bath to stop the cooking process. Drain them, then remove the skins.
- Put the onions in a 3-quart saucepan and place over low-medium heat. Add the cream, bay leaves, parsley, garlic and nutmeg. Season with salt and pepper. Cover and let simmer for 10 minutes, stirring occasionally, until thickened. Then, remove the cover and add stock. Season again. Allow to cook down for 5 minutes to tighten up the cream sauce. Discard the garlic clove and bay leaves before serving.

- Blanch onions in a large pot of boiling water 2 minutes, then drain and peel.
- Heat butter in a deep 12-inch heavy skillet over moderate heat until foam subsides, then cook onions, stirring occasionally, until golden in patches, about 8 minutes. Add sugar, salt, cloves, and enough water to cover onions and simmer, covered, until onions are tender but not falling apart, 25 to 30 minutes. KING'S ARMS TAVERN-LIKE CREAMED ONIONS
This is similar to the recipe for creamed onions served at the King's Arms Tavern in Colonial Williamsburg. The Tavern version (from a 1970s cookbook of Old Williamsburg recipes) includes extra salt which I omit. The salted peanuts make it salty enough for my tastes, even before the doctor put me on a low-salt diet. However, I always have a salt shaker on the table so people who like it saltier can add it themselves.

- Cook the onion in boiling salted water until tender; drain.
- Melt the butter over medium heat and stir in the flour and salt.
- Add the milk and continue to cook, stirring constantly, until the sauce is smooth and slightly thickened.
- Put the onions in a greased 1-quart casserole and pour the sauce over them.
- Stir in the whole peanuts.
- Top with the crumbs and chopped peanuts.
- Bake at 400° approximately 15 minutes until bubbly and lightly browned.
