HAMENTASCHEN

Hamentaschen image

These are a traditional Jewish or Israeli cookies associated with the holiday of Purim. The name translates to Hamen's hat or Hamen's pockets or Hamen's ears in Hebrew. The three-cornered shape refers to the shape of Hamen's hat. You'll see three different fillings traditionally: poppy seed, apricot and prune. These will keep one week in an airtight container. They also freeze well.

Categories     dessert

Time 1h59m

Yield 35 cookies

Number Of Ingredients 11

2 cups finely chopped dried apricots
1 1/3 cups orange juice
2/3 cup honey
1/2 orange, zest grated
2 2/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup cold unsalted butter
2/3 cup sugar
1 egg
1 egg white

Steps:

  • To make the Filling: Place the ingredients in a saucepan and bring to a boil. Reduce heat and simmer for about 15 minutes or until soft and the liquid is absorbed. Add water, if needed. Let cool.
  • To make the Dough: Combine the flour, baking powder and salt in a food processor. Add the butter and pulse. In a small bowl, mix together the sugar, egg, egg white, and orange zest. Add it to the processor and pulse to mix, being careful not to over mix. Divide into 2 disks and chill 30 minutes.
  • Preheat oven to 350 degrees F.
  • Roll out the dough on a floured work surface to 1/4-inch thick. Cut out 2 1/2 to 3-inch disks. (You can re-roll the scrapes to make more disks.) Place a disk of dough down and place 1 teaspoon of filling in the center. Pinch the disk in 3 places to form a triangular shape with the filling still showing in the center. They will look like 3 cornered hats. Place 2 inches apart on baking sheets. Continue until all the disks are made.
  • Bake for 12 to 14 minutes.

CREAM CHEESE HAMANTASCHEN DOUGH

Cream Cheese Hamantaschen Dough image

Less traditional but certainly appropriate, this all-purpose pastry dough yields a very delicate and flaky pastry.

Provided by From cookbook author Marcy Goldman

Yield 16

Number Of Ingredients 11

1/4 cup sugar
1/2 cup unsalted butter or vegetable shortening
1/2 cup cream cheese
1/2 teaspoon vanilla extract
1/8 teaspoon salt
1 cup flour, plus more as needed
1 large egg plus 1 egg yolk
Pinch sugar
1 to 2 tablespoons water
Filling (use chocolate-hazelnut or poppy-seed pastes; or following recipes for prune, apricot or cherry)
Granulated or coarse sugar for topping (optional)

Steps:

  • 1 To make the dough: Place the sugar
  • 2 butter or shortening and cream cheese in a large mixing bowl
  • 3 Add the vanilla, salt and flour, and stir to make a soft dough, adding a little flour if the dough is too sticky to handle
  • 4 (The dough may also be made in a food processor
  • 5 Place the flour in the work bowl
  • 6 Add the butter or shortening and cream cheese in chunks along with the vanilla and salt
  • 7 Process until the dough forms a ball
  • 8 Remove from the processor bowl and sprinkle on a little flour to make handling the dough easier
  • 9 Wrap in plastic and chill for 30 minutes or overnight
  • 10 )
  • 11 Place a rack in the upper third of the oven and preheat to 350 degrees
  • 12 Line a baking sheet with parchment paper
  • 13 While the oven is heating, make the egg wash: Combine the egg, egg yolk, sugar and water in a small bowl and whisk to combine thoroughly
  • 14 Set aside
  • 15 To assemble the hamantaschen: Roll out the dough on a well-floured board, being careful not to press too firmly; the dough will be a little fragile
  • 16 Cut into 3-inch rounds and brush with egg wash
  • 17 Scraps can be rerolled once
  • 18 Place a generous teaspoonful of filling in the center of each round
  • 19 Fold over the edge of the circle in three sections to form a triangle and pinch the corners closed
  • 20 There should be a lip of dough around the outside, but some filling should be left exposed in the center
  • 21 Brush the exposed dough with egg wash again and, if desired, sprinkle with regular or coarse sugar
  • 22 Transfer the triangles to the baking sheet
  • 23 Bake for about 18 to 22 minutes, until golden brown

HAMANTASCHEN (BEST EVER!)

Hamantaschen (Best Ever!) image

A friend gave me this recipe for hamentaschen, the traditional pastry of the Jewish holiday of Purim. The filling is more likely to please an adult than a child. To use up all the filling takes somewhere between one and two batches of dough. These freeze well. I'm totally guessing on the time it takes to make them. They aren't quick, but worth the effort!

Provided by helowy

Categories     Dessert

Time 2h15m

Yield 2 batches, 72 serving(s)

Number Of Ingredients 16

20 ounces pitted prunes (2 packages)
12 ounces dried apricots (2 packages)
6 ounces dried peaches (1 package)
10 ounces raisins (1 package)
1 orange (thin skinned or peeled)
1 apple
6 ounces apricot jam (1/2 a small jar or to taste)
1 dash lemon juice
1 cup sugar
3 eggs
1 cup oil
1/2 lemon, juice and zest of
1 teaspoon vanilla
3 -5 cups flour (sifted)
2 teaspoons baking powder
1 pinch baking soda

Steps:

  • For the filling, simply chop all the ingredients fine in your food processor and mix well.
  • For the dough, cream sugar and eggs.
  • Add oil and mix until it turns pale yellow and is no longer shiny.
  • Mix in lemon and vanilla.
  • In another bowl combine flour, baking soda, and baking powder.
  • Slowly add dry ingredients to wet. When it becomes difficult to mix, add more flour and knead.
  • Preheat oven to 375°F.
  • To assemble cookies, roll out dough (in batches) to desired thickness (maybe a little thinner than 1/4") and cut into circles of desired size (can use cookie cutter, inverted glass, etc). Put a dollop of filling in the center of each cookie and fold up into a triangular shape, pinching the corners and leaving the center open so that the filling peeks out.
  • Bake cookies for about 15 minutes until they are beginning to brown. I've always greased the cookie sheet very lightly with non-stick spray, but I don't know that you need to.

HAMANTASCHEN

Categories     project, dessert, side dish

Time 1h30m

Number Of Ingredients 12

1/2 cup unsalted butter
1/4 pound real cream cheese
1/2 cup sour cream
Pinch of salt
2 teaspoons sugar
1 large egg
2 3/4 cups flour, approximately
1 pound prune jam (lekvar)
2 teaspoons lemon juice
1 teaspoon grated lemon rind
1/2 teaspoon cinnamon
2/3 cup finely chopped walnuts

Steps:

  • Let butter and cream soften at room temperature. Cream them together until thoroughly blended; beat in sour cream.
  • Stir in salt, sugar and the egg.
  • Gradually beat in flour, adding just enough to make a dough that will stick together. Form a ball, wrap in waxed paper and chill overnight.
  • Before rolling out dough, prepare filling by blending prune jam with remaining ingredients. Set aside.
  • Divide dough in half; place one half in the refrigerator while you roll the first. Place a sheet of waxed paper on the counter top or pastry board and place the first half of the dough on it. Top with a second sheet of waxed paper. Using a rolling pin, roll dough between sheets of waxed paper, turning the dough over with the paper so it is rolled on both sides and lifting the sheets of paper between every two or three rollings. Dough should be about 1/8-inch thick.
  • Roll the second half of the dough in the same way.
  • Using a 3 1/2- to 4-inch round cookie cutter, cut circles from the rolled out dough. Place a well-rounded teaspoon of prune filling in the center of each circle.
  • Moisten the edges of each circle with a little cold water and shape triangles; be sure to pinch the three corner seams tightly closed.
  • Arrange hamantaschen on cookie sheets and place in refrigerator for 30 minutes to an hour before baking.
  • Preheat oven to 400 degrees. Bake hamantaschen for about 15 minutes or until bottoms and tops are golden brown.

GREAT-GRANDMOTHER BUBBIE'S HAMANTASCHEN

Great-Grandmother Bubbie's Hamantaschen image

Brought over from Poland by my great-grandmother, these little fruit-filled cookies are traditional for the Jewish holiday Purim where they are put in gift baskets and given to all one's friends. We always make extra so there are some left over for us, they are the best! (The filling can be anything, for a shortcut, you can substitute any flavor of jam, but this is the original filling.)

Provided by Aliza Finley

Categories     Desserts     Cookies     Fruit Cookie Recipes     Apricot

Time 2h50m

Yield 36

Number Of Ingredients 12

2 cups pitted prunes, cooked, drained and mashed
2 cups dried apricots, cooked drained and mashed
3 eggs
1 cup white sugar
½ cup safflower oil
1 lemon, zested
1 orange, zested
4 cups unbleached all-purpose flour
2 teaspoons baking powder
1 tablespoon lemon juice
½ cup chopped walnuts
⅓ cup white sugar, or to taste

Steps:

  • Place prunes and apricots into a large pot filled with water and bring to a rolling boil over high heat. Cook the fruit uncovered, stirring occasionally, until the fruit is tender, about 15 minutes. Drain fruit in a colander and mash together in a bowl using a fork. Set aside.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Whisk eggs, 1 cup sugar, oil, lemon zest, and orange zest together in a bowl and set aside. Sift flour and baking powder together in a large bowl. Stir in the egg mixture, kneading with hands until the dough comes together. Roll out dough to about 1/4 inch in thickness on a lightly floured surface. Cut circles out using a cookie cutter or the rim of a drinking glass.
  • Mix prune and apricot mixture, lemon juice, walnuts, and 1/3 cup sugar in a bowl. Place a tablespoon of the filling in the center of the cookie. Pinch the edges firmly together to create a triangle, leaving the center open to expose the filling. Repeat with the remaining cookies.
  • Bake in the preheated oven until golden brown, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

SWEET DANISH HAMANTASCHEN WITH CREAM CHEESE FILLING & POPPYS

Sweet Danish Hamantaschen With Cream Cheese Filling & Poppys image

This recipe is from pastry chef Mindy Segal, owner of the Chicago restaurant, "Hot Chocolate". If you want, you can use this amazing filling with a less complicated dough.

Provided by blucoat

Categories     Yeast Breads

Time 1h24m

Yield 40 serving(s)

Number Of Ingredients 22

1 3/4 cups bread flour
1/2 cup cake flour
3/4 teaspoon dry yeast
1 1/2 teaspoons salt
3 tablespoons sugar
8 ounces butter, cubed (cold)
1/4 cup water (room temp)
1/2 cup milk (room temp)
1 egg (room temp)
3 tablespoons honey
8 ounces cream cheese (room temp)
2 tablespoons honey (clover or orange blossom)
1/2 cup granulated sugar (preferably natural cane sugar)
1 egg
1 pinch salt
1/4 teaspoon vanilla extract
1 teaspoon orange zest
4 ounces cubed cold butter
3/4 cup light brown sugar
1 cup and 1 tablespoon all-purpose flour
1 pinch salt
1/4 cup poppy seed

Steps:

  • To Prepare Filling: Beat together cream cheese, honey and sugar. Add egg, vanilla, salt, and orange zest. Mix until cohesive.
  • To Prepare Poppy Seed Streusel: Beat all ingredients on low speed until the mixture crumbles. Refrigerate until ready to use.
  • To Prepare Dough: In a mixing bowl combine all dry ingredients. Add cold, cubed butter with paddle attachment. Mix on low speed for about 3 minutes or until mixture resembles cornmeal. Add all wet ingredients and mix on medium speed for about 2 minutes, until dough forms a batter.
  • Cover with plastic wrap and let set in a refrigerator overnight. After 24 hours remove dough from bowl and place on a well-floured surface. Flour the top of the dough and roll into a 12X4" rectangle. With the rectangle horizontal to you fold the right third of the dough over the left creating a letter fold. Wrap in plastic wrap and return to refrigerator to rest for 30 minutes. Repeat the letter fold technique two more times (alternating left, then right). After the third turn is complete let rest in refrigerator for 30 more minutes. Remove dough from refrigerator and place dough on well-floured surface and roll out to 1/4" thick, keeping it as close to a square as possible.
  • Cut the Danish into 3" squares and place about 1 tablespoon of filling (filling recipe below) into the center of the square. Sprinkle the streusel (streusel recipe below) on top and bring corners into the center forming a pouch.
  • Preheat oven to 350°F
  • Brush dough with egg whites and sprinkle with more streusel. Bake in the oven for about 25 minutes or until golden brown. Let cool and dust with powder sugar.

FRUIT-FILLED HAMANTASCHEN FROM PHILADELPHIA

Fruit-Filled Hamantaschen from Philadelphia image

Categories     Dessert     Bake     Purim     Prune     Raisin     Walnut     Kosher

Yield Yield: 36 cookies (P) with margarine; (D) with butter

Number Of Ingredients 16

Fruit Filling
3/4 cup pitted prunes
1/3 cup seedless raisins
1/4 cup water
1/4 cup shelled walnuts
1/4 apple with peel
Juice and rind of 1/4 lemon
2 tablespoons sugar
Dough
2/3 cup pareve margarine or butter
1/2 cup sugar
1 large egg
1/2 teaspoon vanilla
1/2 to 3 cups unbleached all-purpose flour
1 teaspoon baking powder
Dash of salt

Steps:

  • 1. To make the filling, simmer the prunes and raisins together in the water, covered, for 15 minutes or until the prunes are softened but still firm.
  • 2. Add the nuts, then put the mixture through a grinder or chop in a food processor with the apple. Add the lemon juice and rind and sugar and mix well.
  • 3. To make the dough, cream the margarine or butter with the sugar. Add the egg and vanilla and continue creaming until smooth. A food processor is great for this.
  • 4. Add the flour, baking powder, and salt. Process until a ball of dough is formed.
  • 5. Chill for 2 to 3 hours, or overnight.
  • 6. Taking one fourth of the dough, roll out on a lightly floured board to a thickness of 1/8 inch. Cut into 2 1/2-inch circles. With your finger, brush water around the rim of the circle. Drop 1 teaspoon of filling in the center. Then bring the dough around the filling and press 3 ends together.
  • 7. Bake in a preheated 375-degree oven on a well-greased cookie sheet for 10 to 15 minutes or until the tips are golden.

Measure 2 cups flour and 3 tablespoons sugar into the food processor. Step 2: Add 2 sticks worth of butter cubes and 8 ounces cream-cheese chunks. Pulse until pastry comes together in clumps; do not over-process.
