I was surprised when I first saw this recipe as usually Monster Cookies are made with huge amounts of ingredients. This one does not have flour, and I was told by the friend to use Quick oats other wise the cookies come out very dry. I used the medium size scoop from Pampered Chef to make these cookies. Very good!

3 eggs
1 cup brown sugar
1 cup white sugar
1 teaspoon vanilla
1 teaspoon corn syrup
1/2 cup butter
1 1/2 cups peanut butter
2 teaspoons baking soda
4 cups oatmeal
1/2 cup M&M's plain chocolate candy
1/2 cup chocolate chips

Steps:

  • Mix ingredients in order listed.
  • Fold in M&M's and Chocolate chips.
  • Bake at 350 degrees for 12 minutes.

CRANBERRY CHOCOLATE OATMEAL MONSTER COOKIES

This is a great easy cookie recipe that kids love! I adapted it from a recipe I found in Family Fun magazine. You can substitute the Cranberries and Chocolate pieces for any toppings you like - nuts, M&M's, and other dried fruits - but I really like the combination of the dried cranberries and chocolate.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup butter, cubed at room temperature
3/4 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
2 cups rolled oats
1 cup dried cranberries
1/2 cup white chocolate chips
1 cup semisweet mini chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Sift the dry goods together into a large bowl. Set aside.
  • Cream together the butter and both sugars, then beat in the eggs. Stir in the vanilla extract.
  • Add the dry goods to the wet works a small amount at the time until well combined.
  • Using a spatula, fold in the rolled oats until thoroughly combined. Add in the dried cranberries and both types of chocolate chips.
  • Use a 1/3 or 1/4 cup measuring cup to transfer the dough onto an ungreased baking sheet. Use the floured bottom of a drinking glass to smash the cookies flat.
  • Bake for 13 to 15 minutes or until lightly brown.
  • When they have slightly cooled, but are still warm, transfer the cookies onto a cooling rack.
  • Enjoy with a big glass of milk!

6 eggs
1 cup butter
2 cups brown sugar
1 1/2 cups honey
9 cups oatmeal
4 teaspoons baking soda
18 -24 ounces peanut butter
1 tablespoon vanilla
1 cup powdered milk
1 cup golden raisin
1 cup dates
1 (6 ounce) package dried mixed fruit, chopped
12 ounces chocolate chips (optional)

Steps:

  • Preheat oven to 350°F.
  • Mix all ingredients in order.
  • Use a tablespoon to make large scoops. Flatten to 3/4 of an inch.
  • Bake until done (recipe doesn't say how long!). Do not overbake.
  • These freeze well for a quick breakfast or snack.

2 sticks (1/2 pound) salted butter, softened
1 1/2 cups brown sugar, packed
1/2 cup white sugar
2 whole large eggs
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cup oats (either quick or regular)
1 cup chocolate coated candies, such as M&M's
3/4 cup chocolate chips (milk or semisweet)
1/2 cup pecans, chopped
2 1/4 cups rice cereal, such as Rice Krispies
Cold milk, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Cream the butter with both sugars in a mixing bowl until fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat.
  • Combine the flour, salt, baking powder and baking soda. Add to the mixing bowl and mix until combined. After that, add in the oats, chocolate candies, chocolate chips and pecans in whatever quantity you prefer. Add the cereal at the very end, mixing until just combined. Do not over mix!
  • Use a cookie scoop to scoop balls of dough onto a cookie sheet. Bake until golden brown, about 20 to 25 minutes, and then allow to cool on a rack.
  • Serve with glasses of cold milk.

Steps:

  • In very large bowl, use mixer to combine first seven ingredients--eggs through peanut butter.
  • Add oatmeal, candy, and chocolate chips and mix thoroughly by hand.
  • If dough is too sticky, either refrigerate or add another 1/2 to 1 cup oatmeal.
  • Scoop ice cream size balls of dough onto cookie sheets, with plenty of space in between.
  • Bake at 350° for 13-15 minutes. If using two racks, switch top to bottom and bottom to top about halfway through.
