CRANBERRY OR CHERRY BISCOTTI IN A JAR (GIFT)
Wonderful gift for a coffee drinker!!! You can double the recipe to make extra gifts. Tie a pretty ribbon around the jar for a personal touch.

Steps:
- Layer ingredients in order inside a a clean 1 quart jar.
- Tap gently on the counter top to settle each layer before adding the next.
- Add additional cranberries or pecans to top off the jar.
- On gift Tag include additional ingredients (butter and eggs) and these baking directions:.
- Beat 1/3 cup butter on medium speed for 30 seconds. Add 2 eggs and beat on medium until well combined.
- Using a wooden spoon, stir in contents of jar just until combined. Divide into 2 loaves on cookie sheet, chilling if necessary to make dough easier to handle. Each loaf should be about 9 inches long and 2 inches wide.
- Bake at 375°F for 25-30 min or until a toothpick inserted in the center comes out clean. Cool on sheet for 1 hour.
- Cut each loaf diagonally into 1/2 inch thick slices using a serrated (bread) knife. Place slices on an ungreased cookie sheet.
- Bake at 325°F for 8 minutes, then turn over and bake for 8-10 minutes more or until dry and crisp. Transfer to wire rack to cool.

CRANBERRY SWIRL BISCOTTI
What do you get when you cross cranberries and cherry preserves? Just make these and see! The combination of the two is delicious and festive and a dessert you won't likely forget! Steps:
- In a food processor, combine the cranberries, preserves and cinnamon. Cover and process until smooth; set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well.
- Divide dough in half. On a lightly floured surface, roll each portion into a 12-in. x 8-in. rectangle. Spread each with cranberry filling; roll up jelly-roll style, starting with a short side.
- Place seam side down 4 inches apart on a lightly greased baking sheet. Bake at 325° for 25-30 minutes or until lightly browned.
- Carefully transfer logs to a cutting board; cool for 5 minutes. With a serrated knife, cut into 1/2-in. slices. Place 2 inches apart on lightly greased baking sheets. Bake 15 minutes longer or until centers are firm and dry. Remove to wire racks.
- In a small bowl, combine glaze ingredients; drizzle over warm biscotti. Cool completely. Store in an airtight container.

- Layer the ingredients in a 1 quart or 1 liter jar, in the order listed.
- Attach a tag with the following instructions: Cranberry Hootycreeks 1. Preheat oven to 350 degrees F (175 degrees C). Grease a cookie sheet or line with parchment paper. 2. In a medium bowl, beat together 1/2 cup softened butter, 1 egg and 1 teaspoon of vanilla until fluffy. Add the entire jar of ingredients, and mix together by hand until well blended. Drop by heaping spoonfuls onto the prepared baking sheets. 3. Bake for 8 to 10 minutes, or until edges start to brown. Cool on baking sheets, or remove to cool on wire racks.

Stir in ground almonds and cranberries (mixture will be stiff)., Divide dough in half. Using lightly floured hands, shape each portion into a 9x3-in. rectangle on a parchment-lined baking sheet. Bake until lightly browned, about 25 minutes., Cool on pans on wire racks until firm. Reduce oven setting to 325°. Transfer baked rectangles to a cutting board. Using a serrated knife, cut diagonally into 1/2-in. slices. Place on baking sheets, cut side down., Bake until lightly browned, 8-10 minutes per side. Remove from pans to wire racks; cool completely. Store in an airtight container.

- Wash and thoroughly dry a 1-quart wide-mouth canning jar.
- Layer the ingredients in the jar as listed above starting with the flour, salt, baking soda, nutmeg, baking powder, sugar, walnuts and then cranberries - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.

- Additional ingredients to be added by the recipient: 1/2 cup cold butter, 3/4 cup buttermilk, 1 egg, separated and 2 tsp sugar.
- CRANBERRY WALNUT SCONES INSTRUCTIONS:
- Preheat oven to 375.
- Place the contents of the jar in a large bowl and stir to combine.
- Using a pastry blender or fork, cut in the butter until mixture resembles coarse crumbs.
- Stir in buttermilk and egg yolk just to moisten.
- Turn the dough onto a greased cookie sheet and use the back of a wood spoon to pat into an 8-inch round.
- Score it into 8 wedges without cutting through.
- Beat the egg white slightly and brush over the dough.
- Sprinkle with the sugar and bake for 15-20 minutes or until golden brown.
- Cool for 5 minutes, cut into scones and serve warm; or cool completely and store in an airtight container for up to 1 week.
