4 large boneless skinless chicken breasts
1 cup mayonnaise
2 teaspoons garlic powder
2 cups grated cheddar cheese
1/4 cup grated cheddar cheese
4 slices ham (thin slices)
2 cups breadcrumbs (Italian are best)
1/4 cup melted butter

Steps:

  • Preheat oven to 375.
  • Pound chicken breasts with a mallet until tender and malleable.
  • Sprinkle each breast with 1/4 garlic powder.
  • Spread 1/4 of mayo on each breast.
  • Sprinkle 1/4 of cheddar on each breast.
  • Lay ham slice over top of cheese.
  • Roll breast tightly, secure with at least two toothpicks.
  • Repeat with each chicken breast.
  • Place in 9x9 glass pan, open side down.
  • Sprinkle evenly with bread crumbs and remaining cheese.
  • Pour butter over top.
  • Cook for 40 minutes, turning inside edges to outside of pan at 25 minutes till juices run clear and meat is no longer pink.
  • Broil for 5 minutes or until cheese is golden and bubbly!

4 chicken breasts
4 slices deli ham (I like to use the honey ham, but any kind is good)
4 slices swiss cheese (sandwich size)
2 tablespoons cream cheese
salt
1 egg, lightly beaten
crushed saltine crackers
3 tablespoons vegetable oil
2 tablespoons water

Steps:

  • Place chicken between two pieces of wax paper or plastic wrap and pound till 1/4" thick.
  • Place one slice ham and one slice cheese on each breast.
  • Evenly distribute cream cheese between chicken breasts, spreading on top of the ham.
  • Roll up carefully, securing with toothpicks.
  • It is important to secure the ends so the cream cheese doesn't leak out!
  • Just close the ends by securing them with toothpicks.
  • Lightly sprinkle each piece with salt, then dip in the egg.
  • Roll chicken in cracker crumbs.
  • Cook rolls in hot oil in skillet until light brown, turning occasionally (approx. 5-10 minutes) When brown, add water, cover and simmer until chicken is done, about ten minutes.
  • Remove toothpicks and serve.

This is an easy version of cordon blue. If you have never tried to make it before because it sounds intimidating, then you are missing out! This is a really easy way to do it (as most are). I personally think this is a very inexpensive dish!

2 large boneless skinless chicken breasts
4 slices deli ham
4 slices swiss cheese
1/4 cup flour, in bowl
1 -2 egg, beaten, in bowl
1/2 cup Italian seasoned breadcrumbs, in bowl

Steps:

  • Take chicken and place on a large cutting board. Put a piece of wax paper (or even saran wrap) over the chicken breast.
  • Use a heavy pan, or mallet, and smash the chicken breast till it spreads out to about the size of 2 chicken breasts.
  • Then place 2 pieces of ham on the chicken breast and then 2 pieces of cheese.
  • Take chicken and roll up into a log. If it isn't holding together, place a couple toothpicks into the chicken to hold in place.
  • Roll each piece in the flour, then in beaten egg, then in bread crumbs.
  • Place the chicken breasts in a baking dish and place in oven at 375°F and bake for 30-45 minutes (or until chicken is cooked through).
  • Cut each piece in 2 pieces, and serve!

1/2 teaspoon pepper, divided
1/4 teaspoon salt
1/3 cup gruyere, or, Swiss cheese
2 tablespoons reduced-fat cream cheese
1/4 cup whole wheat breadcrumbs
1 tablespoon fresh parsley, chopped
4 teaspoons extra virgin olive oil, divided
1/4 cup ham, chopped

Steps:

  • Preheat oven to 400°F.
  • Sprinkle chicken with 1/4 t pepper and salt. Combine cheeses in a bowl. And the remaining 1/4 t pepper, breadcrumbs, parsley and 2 t oil in another bowl.
  • Heat the remaining oil in a large ovenproof nonstick skillet over medium heat. Cook the chicken until browned on both sides, about 2 minutes per side. Move the chicken to the center so all pieces are touching. Spread with cheese mixture, sprinkle with ham, then top with breadcrumb mixture.
  • Bake until the chicken is no longer pink and registers 165F internally, 5-7 minutes.

8 slices black forest ham
8 teaspoons crumbled blue cheese
1/2 cup Shake-n-Bake (Original, Extra Crisp, one pouch)
1/4 cup milk

Steps:

  • prepare your boneless skinless chicken breasts by slicing them almost in half through the side - butterflying them.
  • spread them open and set aside.
  • pour your milk on a plate the appropriate size for your chicken breast to sit on.
  • sprinkle your shake 'n' bake mixed with pepper to taste on another plate the same size.
  • place two slices of ham together neatly.
  • in the center of the ham sprinkle two teaspoons of blue cheese.
  • roll the ham rather tightly to avoid losing your cheese.
  • place the ham in the middle of the chicken breast and close it - secure with a couple of toothpicks.
  • gently place the chicken in the milk and with your hand pat the top with the milk - a gentle milk bath will secure the shake 'n' bake and keep the chicken moist.
  • now gently place in the shake 'n' bake and pat crumbles on the top and sides.
  • place the breasts in a baking dish and cook at 350 degrees for 1 hour.
  • allow the chicken to cool for 5 minutes before removing the toothpics and serve.

I came up with this recipe because I love Chicken Cordon Bleu... but, to me, it's always too greasy when fried. Very Tasty!

4 boneless skinless chicken breasts
6 slices ham (thin not shaved)
8 ounces mozzarella cheese (block)
3 slices swiss cheese
1 cup heavy cream
1 (2 3/4 ounce) package Shake-n-Bake (your choice of flavor)
1 cup ranch dressing
2 tablespoons white wine

Steps:

  • Preheat oven to 350.
  • Cut 8 thin slices Mozzarella Cheese (to go in chicken breasts) 2 per chicken breast. Set aside.
  • Cut up remainder of Mozzarella Cheese in small chunks (for sauce). Put in a small pot on stovetop.(don't heat yet).
  • Cut up 1 slice of Swiss and put in pot with Mozzarella. Set aside.
  • Cut the remaining 2 slices of Swiss in half. Set aside with Mozzarella slices.
  • Rinse Chicken breasts.
  • Cut Chicken breasts in half (make sure they are still attached at one side.
  • Insert 2 slices of ham, two slices of mozzarella, and one slice of swiss.
  • Fold top of Chicken breast over until all ingredients inside are covered.
  • Use as many toothpicks as you need to keep chicken breast closed.
  • Repeat to 3 remaining breasts.
  • Mix 1 cup of Ranch Dressing with 1/2 cup of heavy cream. Mix till well blended.
  • Put Shake and bake breading in bowl.
  • Cover Chicken Breasts w/ Ranch mixture -- then cover generously in breading mixture. Put in baking pan. Repeat to other chicken breasts.
  • Once in pan -- you can take toothpicks out.
  • Bake in preheated oven for 30 minutes.
  • While Chicken is baking, Make sauce mixture.
  • Mix 1/2 cup heavy cream w/ chunked cheese. Heat till melted.
  • Add a splash of white wine.
  • Mix while heating to keep from burning and sticking.
  • When Chicken breasts are done, pour sauce over top and serve.

This is so good! I love ordering veal dishes at French restaraunts and decided to try making this myself. I was surprised that it isn't that hard. I found this recipe in a 1973 Betty Crocker cookbook. Prep and cook times approximate. Note: If you don't have a wooden mallet, the edge of a plate can be used to pound meat.

4 boneless veal cutlets (about 4 ounces each) or 1 lb veal round steak, 1/2 inch thick
4 slices ham, thin,boiled or cooked
4 slices swiss cheese, thin
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon allspice
1 egg, slightly beaten
1/2 cup dry breadcrumbs
3 tablespoons shortening
2 tablespoons water

Steps:

  • If using veal round steak, cut into 4 serving pieces.
  • Pound meat until 1/4 inch thick.
  • Place a slice of ham and cheese on each piece of meat.
  • Roll up carefully, beginning at narrow end; secure rolls with wooden picks.
  • Mix flour, salt, pepper and allspice; coat rolls with flour mixture.
  • Dip rolls into egg, then roll in bread crumbs.
  • Melt shortening in large skillet; brown rolls, about 5 minutes.
  • Reduce heat and add water.
  • Cover; simmer 45 minutes or until tender.
  • Remove cover last 2 or 3 minutes to crisp rolls slightly.
