FANCY OVEN ROASTED SWEET POTATOES
In my never ending quest to find a new way to cook sweet potatoes, this idea came to me born out of three different sweet potato recipes I have posted. This will be on my table for Thanksgiving.

Steps:
- 1. Cut ends off and peel sweet potatoes. Cut in half lenghtwise, and into large cubes. However you cut your potato, try to get all in the same size so they will cook evenly. Place pecans in food processor and pulse till very fine. NOTE: These can also be made using thin potato rounds.
- 2. Pour olive oil or melted butter in mixing bowl. Add salt, pepper, cinnamon, nutmeg and brown sugar, Mix together wll. Add potatoes and mix by hand to ensure they are completely coated. Sprinkle on panko and pecans, and mix again. Grease cookie sheet with olive oil. Pour potatoes onto sheet, spread out so they are not bunched together. Scoop up any pecans not stuck to potatoes and place ontop.
- 3. Bake 400° for 30 min on middle rack.

Steps:
- Preheat the oven to 375°.
- Toss the potatoes with the oil and season lightly with salt and pepper to taste.
- Bake for 35 minutes.
- While the potatoes are baking, place the butter, brown sugar, zest and lemon juice in a small pan over medium heat.
- Cook until the butter is melted and all is combined.
- Remove the potatoes from the oven and toss with the butter mixture.
- Return potatoes to oven and continue cooking for 10 minutes or until the potatoes are cooked through and glazed.

OVEN-ROASTED SWEET POTATOES
This is a recipe that I picked up on a recent trip to Central Market in Dallas, TX. Sounds like a healthy way to prepare sweet potatoes.

Steps:
- Preheat oven to 325 degrees.
- Place the sweet potatoes in a shallow roasting pan that has been sprayed with cooking spray.
- Drizzle with the oil, sprinkle with salt and pepper; toss well to coat.
- Place in preheated oven and bake for 30 minutes.
- Add the onions; stirring well.
- Bake an additional 30 minutes; remove from oven.
- Preheat broiler.
- Drizzle the sweet potato mixture with melted butter; stirring to coat.
- Broil 10 minutes or until browned.

ROASTED SWEET POTATOES
Steps:
- Preheat the oven to 350 degrees F.
- Put the sweet potato halves in a large bowl and set aside. In a small saucepan, melt the butter over low heat. Add the sugar and allspice and stir until melted and combined. Pour the spiced butter over the potatoes. Season with salt and pepper. Toss to coat. Put the potatoes on a rimmed baking sheet.
- Roast until the potatoes are tender, turning once, about 45 minutes depending on the size of the potatoes. Transfer to a warmed platter and drizzle over any accumulated pan juices. Taste and adjust for seasoning with salt and pepper. Serve immediately.
WHOLE ROASTED SWEET POTATOES

- Preheat the oven to 425 degrees F.
- Wash the potatoes well and pat dry. Poke holes all around each potato using a fork.
- Rub the potatoes all over with oil, then sprinkle liberally with salt and pepper. Place the potatoes on a baking sheet or aluminum foil and roast until tender when pierced with a fork, 40 to 45 minutes.
- Transfer the potatoes to a plate and serve with shaved Parmesan and a drizzle of olive oil.

- Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
- Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.

- With a sharp knife, slice potatoes thinly but not all the way through, leaving slices attached at the bottom. Place potatoes in a greased shallow baking dish. OVEN ROASTED HONEY-GLAZED SWEET POTATOES
Simple yet so delicious, this one of my family's favorite sweet potato dishes and I have made this many times for the holidays and always receive rave reviews! --- If you double the recipe bake in a large roasting pan or use two 13x9 baking dishes, when I am making these for company, I use a large foil pan and just throw the pan away after, saves cleaning :)

- Set oven to 350 degrees F.
- Pat all the potato cubes thoroughly dry using paper towel/s.
- Arrange the sweet potato cubes (if possible in a single layer) in a lightly-buttered 13 x 9-inch dish.
- In a small saucepan or the microwave stir together butter, honey and lemon juice until butter melts.
- Pour butter mixture over the sweet potatoes; toss well to coat.
- Sprinkle with salt and lots of black pepper.

This is a great vegetable to accompany almost any meal and a great company dish. Does not taste like traditional sweet potatoes. I got this recipe from "Healthy Choices" cookbook and I tweaked it a bit.
