CRANBERRY GARLIC SAUCE
I love cranberries! I came across a handwritten cookbook featuring nothing but cranberry recipes and this one is my favorite. I use it as a topping for baked brie, a side to any pork dish and of course the standard, turkey.

Steps:
- Mince garlic and ginger.
- Saute garlic & ginger in olive oil till soft.
- Add soy and vinegar and bring to a boil.
- Simmer 3 minutes.
- Stir in cranberry sauce, honey and sesame oil.
- Bring to a boil again then back to a simmer.

PERFECT CRANBERRY SAUCE

Steps:
- Empty cranberries into a saucepan and transfer 1/2 cup to a small bowl.
- Add sugar, orange or lemon zest, and water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes.
- Increase the heat to medium and cook until the cranberries burst, about 12 minutes.
- Reduce the heat to low and stir in the reserved cranberries.
- Add sugar, salt, and pepper to taste and cool to room temperature before serving.

Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. MAKE-AHEAD CRANBERRY SAUCE

- Cook the cranberries, sugar, and 1 cup of water in a saucepan over low heat for about 5 minutes, or until the skins pop open. Add the apple, zests, and juices and cook for 15 more minutes. Remove from the heat, let cool, and serve chilled.

Okay, it's October, but I want Thanksgiving to be now so I can make this! Says the Good Housekeeping Magazine website about this recipe... "Red onions are cooked down until sweet and rich, then simmered with brown sugar and balsamic vinegar -- a perfect match for tart cranberries! - Heat a nonstick 12-inch skillet over medium heat, the melt margarine. While this is happening, cut the onions into 4 wedges each, then thinly slice the wedges crosswise.
- When the butter is melted, add onions to skillet, and cook 15 to 20 minutes or until onions are dark brown and tender, stirring occasionally.
- Increase heat to medium-high. Stir in cranberries, sugar, vinegar, salt, and 1 cup water; heat to boiling. Reduce heat to medium and cook, uncovered, 12 to 15 minutes or until most cranberries pop and mixture thickens slightly, stirring occasionally. Spoon sauce into serving bowl; cover and refrigerate until well chilled, at least 3 hours.
