RADISH CUCUMBER SALAD
I put this salad together with vegetables I had left in my garden. My family liked it so well, I started bringing it to community suppers and was often asked for the recipe. It's a refreshing side dish for any meat entree. -Mildred Sherrer, Bay City , Texas

- In a serving bowl, combine the cucumber, radishes and onion. In another bowl, combine the remaining ingredients. Pour over vegetables and toss to coat. Serve immediately.

- Toss vegetables with 2 tablespoons salt in a large colander set over a bowl, and refrigerate for 1 hour. Rinse well, pat dry, and place vegetables in a clean glass jar or glass bowl. Bring remaining 2 tablespoons salt, the vinegar, sugar, peppercorns, mustard and coriander seeds to a simmer in a small saucepan over medium heat. Simmer for 5 minutes. Pour over vegetables, and let cool for 1 hour. Cover, and refrigerate overnight or up to 3 weeks.

- Place the cucumbers and radishes in an ice water bath for 8 to 10 minutes.
- Meanwhile, add the apple cider vinegar, oil, shallots, tarragon and sugar to a large bowl. Season with salt and pepper.

- Place cucumbers and red onion in a heatproof serving bowl.
- In a small nonreactive saucepan, combine sugar, vinegar, cloves, salt, pepper and 1/3 cup water. Bring to a boil over medium heat, stirring to dissolve sugar. Reduce to low, cover and cook 5 minutes.
- Pour vinegar mixture over cucumbers and onions. Stir to mix. Cover and refrigerate at least 2 hours before serving
FENNEL, CUCUMBER & RED ONION SALAD

Steps:
- Trim the base of the fennel and remove the leafy green tops.
- Using a mandolin or food processor slice very finely and place in a large bowl.
- Skin the red onion and slice finely as above. Add to the fennel.
- Cut the cucumber in half lengthways and remove the seeds with a small spoon.
- Slice finely using a peeler and add to the fennel and onion.
- Mix the vinegar, 4tbs of the oil and freshly ground black pepper together. Pour over the vegetables and stir to combine.
- Leave to infuse at room temperature for a couple of hours and just before serving add the dill.
- To serve, arrange on a large plate and spoon over the remainder of the olive oil.

These vegetables seem to go together for taste and crunch, especially in the summer. I like to use my dressing but you could use any that might have a little sweetness to it.It is good with any dressing.

- Take a fork and tine the cucumber peel of each cucumber down lengthways on all side of the cucumber. This will create a design of thin ridges down the peel. Slice in thin rounds.
- Put all of the cut and sliced vegetables in a large serving bowl.
- Sprinkle with salt or salt substitute. Let set.
- In a mixing bowl combine the mayonnaise, sour cream, sugar, celery seed and lemon juice. Stir until mixed.
- Note: cut the sugar in half if you use Miracle Whip Salad dressing.
- Pour out any water that has accumulated in the bottom of the vegetables. Drain well.
- Add your dressing or any dressing of your choice. Toss and serve.
- Wonderful to eat with mashed potatoes.
- Fix the potatoes the way you like them and this salad for a wonderful meatless meal.
