Steps:
- Prepare noodles according to package directions.
- Preheat oven to 375 degrees F.
- Heat a large skillet over medium heat and brown beef with onion, garlic, oregano and salt. Stir in tomato sauce, water and cooked noodles. Pour into casserole dish and top with shredded Cheddar cheese.
- Bake 20 minutes or until casserole is bubbling.

Steps:
- Prepare noodles according to package directions.
- Heat oil in a large nonstick skillet. Add mushrooms, onion and garlic. Cook over medium heat, stirring frequently, for 5 minutes or until vegetables are tender. Remove from skillet (don't bother to wash skillet).
- Combine beef strips, 2 tablespoons flour, salt and pepper in a plastic bag. Shake well to lightly coat beef. Melt butter in skillet. Add the beef strips, half at a time if necessary to prevent crowding. Brown on both sides, about 2 minutes per side over medium heat. Remove when deep brown. Pour beef broth into skillet, scraping up browned bits in bottom of skillet. Reduce heat to low.
- Combine sour cream, tomato paste, paprika and remaining 1 tablespoon flour in a medium bowl. Pour about 1/2 cup of the hot broth into the sour cream mixture. Stir well. Pour the sour cream mixture back into the skillet. Cook over low heat, stirring constantly, until mixture is smooth and slightly thickened (sour cream may separate but will come together and thicken as it cooks). Stir in reserved mushroom mixture and beef and heat through, about 5 minutes. Serve over noodles. Garnish with chopped parsley.

WOLFGANG'S BEEF GOULASH
Steps:
- In a large saute pan, heat the olive oil and saute the onions and sugar until caramelized. Add the garlic and caraway seed. Cook for 1 minute. Add the sweet and sharp paprika, marjoram, thyme, and bay leaf. Saute another minute, until fragrant. Add the tomato paste. Deglaze with the vinegar and the stock and add the pieces of beef shank, salt, and pepper. Bring to a boil, then lower to a simmer and cook until very tender, about 1 1/2 hours, stirring occasionally.
- Taste and adjust seasoning with salt and pepper. Serve with Spaetzle on the side.
- In a small bowl, beat together the egg yolks, egg and milk. In a medium bowl, combine the flour, nutmeg, salt, and pepper. Add the egg mixture to the flour mixture and mix with hand until well blended. Do not overmix at this stage. Cover the bowl and refrigerate. Allow the batter to rest for at least 1 hour.
- Bring salted water to a boil. Place a perforated hotel pan on top of the pot. Place the batter on the pan and force through the holes to form spaetzle. Cook for 4 to 5 minutes, or until al dente. Transfer cooked spaetzle to a bowl of ice water to shock. When cool to the touch, drain well. Stir in half the oil. (At this point you can cover and refrigerate up to 2 days).
- Over high heat, place a large saute pan until it gets very hot. Add the remaining 1/4 cup of oil and the boiled spaetzle. Saute until golden. Season, to taste, with salt and pepper. Finish with butter and sprinkle with parsley.
BEEF GOULASH - LOW SODIUM
I got the original recipe from The American Heart Association recipe collection but I changed it up a little to make it better suited for what I wanted.

- Cook macaroni according to package directions, omitting salt.
- Drain and set aside.
- Brown ground beef with mushrooms, onion, peppers and garlic.
- Pour off fat.
- Add remaining ingredients.
- Simmer gently for 15 minutes.
- Add cooked macaroni.
- Simmer for 10 minutes.
- Serve.

- In large pot, cook egg noodles in boiling salted water until al dente, drain and set noodles aside.
- In the empty pot, heat olive oil and saute onion, garlic, red pepper flakes, and celery until onion is translucent.
- Add ground beef, parsley, oregano, paprika, garlic powder, salt, & pepper. Cook until meat is almost done (don't drain), then add peas & carrots and beef gravy.
- Cook until beef is done, then taste and adjust seasonings according to your preference.
- Toss cooked egg noodles in and coat well.
- Serve hot.

- Stir together flour, salt and pepper; coat meat with mixture. In 5-quart saucepan over medium-high heat, heat 1-1/2 tablespoons oil; add one-half meat. Cook until browned, about 5 minutes, stirring occasionally; remove meat. Heat remaining oil; add beef and cook until browned. Return all beef and any remaining flour mixture to saucepan. Stir in tomatoes with juice, broth, carrots, leeks, rosemary and paprika; heat to boiling. Reduce heat and cover. Simmer 45 minutes or until meat is tender.
- Meanwhile, cook noodles according to package directions; drain.
- Spoon goulash over noodles; spoon sour cream on top. Sprinkle with chives.
