2 onions, thinly sliced
few thyme sprigs
2 tbsp olive oil
1 ½kg floury potato, such as Maris Piper or Desirée, peeled and sliced thinly, by hand or using a food processor
425ml vegetable stock

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Fry the onions and thyme sprigs in the oil until softened and lightly coloured (about 5 mins).
  • Spread a layer of potatoes over the base of a 1.5-litre oiled gratin dish. Sprinkle over a few onions (see picture, above) and continue layering, finishing with a layer of potatoes. Pour over the stock and bake for 50-60 mins until the potatoes are cooked and the top is golden and crisp.

An irresistible all-in-one dish from Gordon - sure to be a firm favourite in minutes

1 ½kg medium-sized potato , peeled Maris Piper, Desirée or King Edward are best
2 large onions
50ml olive oil
12 sprigs thyme
3 tbsp balsamic vinegar
750ml fresh lamb or chicken stock
85g butter , softened
3 lamb rumps
garlic bulb

Steps:

  • Thinly slice the potatoes on a mandolin, then soak in a large bowl of cold water for 1 hr. Drain well, then pat dry between two clean tea towels. Halve the onions, then thinly slice.
  • Heat 2 tbsp of oil in a large frying pan, then sauté the onions with 4 sprigs of thyme for around 10 mins, stirring once or twice. Stir in the vinegar and cook until evaporated, about 2 mins, stirring two or three times so the onions don't burn. Heat oven to 190C/fan 170C/gas 5.
  • Arrange a quarter of the potatoes in a large ovenproof dish, reserving any larger slices for the top. Season, then sprinkle over leaves from 3 thyme sprigs and scatter over a third of the onions. Repeat the potato layers three times more and onions twice, seasoning in between, then finishing with a potato layer and more thyme sprigs.
  • Bring the stock to the boil, then ladle it over, making sure it seeps down the sides. Dot the top with half the butter, then bake, uncovered, for 45 mins.
  • While the potatoes are cooking, score the fat on the lamb rumps in a crisscross using the tip of a sharp knife. Cut the garlic bulb in half, place in a bowl with a drizzle of oil, the lamb and the remaining thyme, then leave to marinate. After the potatoes have been in for 45 mins, season both sides of each lamb rump.
  • Heat more oil in a large non-stick frying pan and when hot, brown the rumps, fat-side down, for 5 mins with the garlic bulb. Then, turn and brown the rumps all over for 5 mins more. Add the remaining butter to the pan, turning the rumps in the melted fat. Place the rumps on top of the potatoes, adding the garlic and drizzling with the pan juices.
  • Season again and return to the oven for about 35 mins. By now, the whole dish should be finished with cooked potatoes and tender lamb cooked to medium. Remove the lamb, then leave aside to rest for 10 mins, returning the potatoes to the oven to crisp up. To serve, slice each rump lengthways. Spoon the potatoes onto 6 warmed plates with slices of lamb on top.

4 onions, sliced
2 pounds potatoes, thinly sliced
Kosher salt and freshly ground black pepper
Fresh thyme sprigs, leaves picked
2 cups beef stock

Steps:

  • Preheat the oven to 300 degrees F.
  • Melt half the butter with the olive oil in a saute pan, and gently fry the onions until soft and lightly golden, about 15 minutes. Spread half the onions in the bottom of a casserole. Lay a layer of sliced potatoes on top, season with salt and pepper, and scatter with thyme leaves. Build another layer of onions, then a final one of potatoes, and finally pour over the stock. Cover the pan with foil, and bake until all the liquid has been absorbed, 2 to 3 hours, removing the foil for the last hour if you like a crisp top.

1/4 pint milk
2 ounces butter

Steps:

  • Pre-heat oven to gas 4 or 180c.
  • Grease with butter an oblong roasting tin, or a wide shallow dish.
  • Peel potatoes and slice thinly into rounds.
  • Finely chop onion.
  • Arrange a layer of potato on base of dish, sprinkle with onion, and salt and pepper.
  • Continue until all is used up, ending with potato.
  • Pour over the stock and milk, then dot with butter.
  • Place in the hottest part of the oven for 45-50 minutes, until the potatoes are cooked and the top golden and crunchy.
  • For a change used chopped leek as well as or instead of onion.

50 g butter

  • Pre heat oven 350 (180).
  • butter a shallow baking dish allover up the sides as well.

1 unpeeled large (3/4 pound) russet (baking) potato, scrubbed well and cut into 1/4-inch-thick slices

Steps:

  • In a 1-cup glass measure combine the butter and the broth and microwave the mixture at high power (100%) for 1 minute, or until the butter is melted. In a small microwave-safe bowl or casserole arrange one third of the potato slices, drained, in one layer, top them with one third of the onion slices, and layer the remaining vegetable slices in the same manner. Pour the butter mixture over the potato mixture and sprinkle the top with the salt and pepper to taste. Microwave the mixture, three fourths covered with microwave-safe plastic wrap, at high power (100%) for 10 to 12 minutes, or until the potatoes are tender.

This dish is like a potato gratin but without the cheese and cream; the pancetta (Italian cured bacon) adds rich flavor. It would make a great side dish for roast chicken or beef.

1 Tbs. olive oil
3-1/2 oz. (1/2 cup) diced pancetta
3 small onions, thinly sliced (2 cups)
3 medium sprigs fresh thyme
1 bay leaf
Scant 1 tsp. kosher salt
1/4 tsp. freshly ground black pepper
2 lb. Yukon Gold or Yellow Finn potatoes, peeled and sliced into 1/4-inch-thick half moons
1 cup homemade or low-salt canned chicken broth

Steps:

  • Heat the oven to 375°F. Heat the olive oil in a medium (9-inch) Dutch oven over medium heat. When the oil is hot, add the pancetta. Sauté until it just begins to crisp and turn brown, about 4 min. Add the onions, thyme, bay leaf, salt, and pepper. Cook, stirring occasionally and more frequently toward the end, until the onions are deep golden, about 14 min. Meanwhile in a small saucepan, bring the chicken broth to a boil and then remove from the heat. Add the potatoes to the onions and cook, stirring for a minute or two. Pour the hot broth over the potatoes and onions and bring the pot to a boil, stirring with a wooden spoon to scrape up the browned bits from the bottom of the pan. Cover the pot, put it in the oven, and bake for about 15 min. Uncover the pot, gently and evenly push the potatoes down with a spatula, and continue to bake uncovered until the potatoes are completely tender and have started to brown, about another 25 min. Discard the bay leaf and thyme before serving.

This classic potato dish is, quite rightly, seen as the perfect partner to roasts, casseroles, sausages and braised dishes.

2 lb 8 oz (1.15 kg) Desirée potatoes, peeled
1 heaped tablespoon finely chopped fresh sage, plus 8 small sage leaves
2 medium onions
10 fl oz (275 ml) hot stock made with Marigold Swiss vegetable bouillon powder
5 fl oz (150 ml) milk
1½ oz (40 g) butter
a little olive oil, for dipping
sea salt and freshly milled black pepper

Steps:

  • Begin by peeling and cutting the onions in half and then the halves into the thinnest slices possible; the potatoes should be sliced, but not too thinly (about 3-mm thick). Now all you do is arrange a layer of potatoes, then onions, in the dish, followed by a scattering of chopped sage, then season. Continue layering in this way, alternating the potatoes and onions and finishing with a layer of potatoes that slightly overlap. Now mix the stock and milk together and pour it over the potatoes. Now put little flecks of butter all over the top and place the dish on the highest shelf of the oven for 1 hour, by which time the top will be crisp and golden and the underneath creamy and tender. Then leave the potatoes to get cold (don't put them in the fridge). To reheat, cook on the middle shelf at gas mark 7, 425°F, 220°C, for 25 minutes. Dip the sage leaves in a small dish of olive oil and scatter them over the top of the potatoes 10 minutes before the end of the reheating time.
