1 tablespoon butter
7 onions, coarsely chopped (about 7-cups)
1/2 cup self-rising flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups (5-ounces) shredded Cheddar cheese, divided
1 1/4 cups (5-ounces) shredded Monterey jack cheese, divided
1 tablespoon jarred jalapeno peppers, drained and chopped (optional)

Steps:

  • Preheat oven to 350 degrees F. Coat a 1-1/2-quart casserole with cooking spray. In a large skillet over medium-high heat, melt butter. Add onions and sauté about 10 minutes, or until softened. Meanwhile, in a medium bowl, combine flour, salt, and pepper. Add 1 cup of each cheese; mix well. Add jalapeño peppers, if desired, and cooked onions; mix well. Pour into prepared casserole dish. Combine remaining cheese and sprinkle evenly over onion mixture. Bake 30 minutes, or until cheese is melted and bubbly.

1 pound frozen gnocchi
8 ounces green beans, ends trimmed, cut into large pieces
5 ounces pancetta, cut into 1/2-inch pieces
1 red bell pepper, cut into 1-inch pieces
1 small yellow onion, cut into 1/2-inch pieces
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
6 tablespoons unsalted butter
6 to 8 fresh sage leaves
1/2 cup grated Parmesan
Fresh basil leaves, for garnish

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Add the gnocchi, green beans, pancetta, red pepper and onion to a large bowl and mix to combine. Spread the gnocchi mixture in a single layer on the prepared baking sheet and sprinkle with the salt and pepper. Cut 4 tablespoons of the butter into pieces and top the gnocchi mixture with the butter pieces and sage leaves. Place on the middle rack and bake, stirring halfway through, until the gnocchi are tender, 16 to 18 minutes.
  • Melt the remaining 2 tablespoons butter and keep warm. When the gnocchi are tender, drizzle the mixture with the butter and gently stir to combine with a rubber spatula. Scoop the mixture into a large serving bowl and garnish with the Parmesan and basil.

We love onions and caramelized is one of our favorite ways to have onions with meat! This recipe was out of Taste of Home magazine and instantly became a hit with my family! I hope you enjoy it as well.

1 large sweet onion, thinly sliced
1 teaspoon sugar
2 teaspoons olive oil
1 (1 lb) pork tenderloin
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet, cook onion and sugar in oil over medium-low heat until onion is tender and golden brown, about 30 minutes, stirring occasionally.
  • Place the pork in a 13 x 9 x 2 baking dish coated with nonstick cooking spray.
  • Sprinkle with salt and pepper.
  • Top with onion mixture.
  • Bake, uncovered, at 350 degrees for 40-45 minutes or until a meat thermometer reads 160 degrees.
  • Let stand for 5 minutes before slicing.
