- In a small saucepan, combine vinegar and honey. Bring to a boil. Reduce heat; simmer, uncovered, until mixture is reduced by half, about 5 minutes. Set aside to cool., Lightly brush both sides of baguette slices with oil; place on an ungreased baking sheet. Broil 3-4 in. from the heat 1-2 minutes on each side or until golden brown. Set aside., In a small bowl, combine the topping ingredients; toss to coat. In another bowl, beat goat cheese, lemon zest and pepper until blended., To serve, spread goat cheese mixture over toasts. Stir cranberry mixture; spoon over goat cheese. Drizzle with balsamic glaze and sprinkle with mint.

- In a medium bowl, combine the goat cheese, olive oil, honey and half of the tarragon, shallots and lemon zest. Season with salt and pepper.
- In a separate bowl, toss the figs with the lemon juice, saba vinegar and remaining tarragon, shallots and lemon zest. Season with salt and pepper.
- Spread the goat cheese mixture on the crostini, then top with the figs.
SUNNY'S EASY CRANBERRY AND GOAT CHEESE CROSTINI

- In a medium saucepan over medium-high heat, add the cranberries, stock, honey, rosemary, a pinch of salt and a few grinds of pepper and bring to a boil. Simmer for 1 minute, then remove from the heat and let cool in the pan.
- Smear the crostini with the goat cheese, then top with the cooked cranberries.

- Preheat oven to 375°F.
- Slice 12 ½-inch slices of bread from the baguette. Place on a baking sheet, and brush generously with the olive oil. Sprinkle a little salt if desired on each slice.
- Bake for about 10 mins, or until crisp and slightly golden. Remove from oven and cool slightly.
- Spread goat cheese on each crostini. Spread about a tablespoon of Bonne Maman Fig Preserves on top of the goat cheese.
- Fold the slices of prosciutto neatly and place on top of each crostini.
- Lay fresh arugula leaves on top of each crostini to taste.

- Heat the oven to 400°F
- Cut the baguette on the bias into about 20 (1/2-inch-thick) slices and place on a baking sheet.
- Using 1 tablespoon of the olive oil, lightly brush each slice. Sprinkle with salt and bake until lightly toasted and crisp, about 8 minutes; let cool.
- Line a plate with paper towels and set aside.
- Heat the remaining olive oil in a small frying pan over medium-low heat. When the oil shimmers, gently place 2 to 3 sage leaves at a time into the hot oil until they darken in color and any bubbling subsides.
- Immediately remove the leaves with tongs or a slotted spoon and transfer to the paper-towel-lined plate.
- Repeat with remaining sage leaves; set aside.
- Gently spread 1 teaspoon of the goat cheese on each crostini, top with a heaping 1/2 teaspoon of the fig jam, and garnish with a fried sage leaf.
CROSTINI WITH WARM GOAT CHEESE AND BALSAMIC FIGS
These are very easy to make and are absolutely delicious. The ingredients are estimates since it really depends on how large your crostini are. Feel free to make your own crostini by cutting french bread into thin slices and toasting them in the oven. Prep time does not include the soak time for the figs. Another option for serving, is to take the soaked figs and blend in a mini food processor, then spread on the goat cheese before baking.

- Chop figs into 1/4 inch pieces and soak in balsamic vinegar, over night.
- When ready, preheat oven to 350 degrees F. Spread goat cheese onto the crostini, and top with a spoonful of the chopped balsamic figs. Bake for approximately 10 minutes.
- Remove from oven, and drizzle with a few drops of the remaining balsamic vinegar. Serve.

- Peel and slice onion as thinly as you can. Use a mandolin slicer if you have.
- Add about 3 tablespoons of olive oil to a pan set over medium-low heat and toss in your sliced onion. Toss to coat. If the pan looks dry, add another tablespoon of oil. Stir your onions every 10 minutes or so for 20-30 minutes.The longest part of this recipe revolves around our onions. We need to slowly simmer them in order to caramelize them properly. This will help to release the sugars in the onion making them much sweeter! Don't rush this by turning up the heat or your onion will burn.
- While your onions are caramelizing, we can prepare our crostini. Slice the baguette into ¼" slices. Brush olive oil lightly over each slice and bake in the oven at 450°F for about 8 minutes or unti golden brown and crispy.
- Once your onions are cooled and crostini is ready, it's time to assemble!
- Spread goat cheese evenly over each crostini followed by some of the caramelized onions and finally, a dollop of fig jam. Garnish with thyme leaves if desired. *Serve within 2 hours to optimal crunchiness.

- Preheat your oven to 450°F.
- Slice your baguette into even slices no bigger than ½" thick and brush each side with olive oil.
- Place brushed slices onto a baking sheet and bake for 6-9 minutes until toasted.*
- Remove from the oven and allow to cool before adding the toppings (at least 5 minutes).
- While your crostini is toasting, make the whipped goat cheese with thyme by placing the goat cheese, cream cheese, salt, and thyme leaves into a food processor (or high power blender) and process until combined. Scrape down the sides of your food processor with a rubber scraper part way through to ensure all ingredients are getting incorporated.
- Spread an even layer of the whipped goat cheese mixture onto each cooled crostini toast.
- Top with a spoonful of homemade cranberry sauce and gently spread it across the goat cheese layer.
- Add a little sprig of fresh thyme, or additional thyme leaves, for garnish if desired.
- Place assembled crostini on a serving platter, eat, and enjoy!
