- Cook bacon in a non-stick pan over medium heat until crisp. Use a slotted spatula to remove the bacon and place it on plate. Do not discard the bacon grease and drippings!
- In the same pan, add onion and cook until translucent.

- Place the butter and the bacon in a large Dutch oven or pot with a lid over medium-high heat. Cook, stirring occasionally, until bacon is lightly browned and crisp, 7 to 8 minutes (lower the heat if the bacon begins to get too dark). Using a slotted spoon, remove the bacon to a paper-towel-lined plate and reserve (do not wipe out pot).
- Add the onion, garlic, and 1/2 teaspoon salt to the pot, stirring frequently with a wooden spoon and scraping up any browned bits from the bottom of the pan. Cook until the onion is very soft, about 8 minutes.
- With the heat at medium-high, add the cabbage, 1 teaspoon salt, and 1/4 teaspoon black pepper. Stir until the cabbage starts to soften, 5 minutes. Reduce heat to medium-low or low and cook, covered, until the cabbage is very tender, with a little bit of texture remaining in the thicker rib pieces, 12 to 15 minutes, stirring occasionally to make sure the bottom isn¿t getting too dark.
- Uncover the pot and increase heat to high. Add the Worcestershire sauce and stir for about a minute. There should be almost no liquid in the pot. Add more salt and pepper, if necessary, transfer to a serving bowl and top with the reserved bacon bits.

- Cook the bacon in a heavy bottomed skillet over medium heat until it starts to become crisp and most of the fat is rendered. Remove the bacon with a slotted spoon to a paper towel lined plate to dry, and remove all but about 2 tbsp of the bacon grease from the pan.
- Add the onion, cook for about a minute or two, then add the garlic and continue to cook until the onion is softened - about 5 - 6 minutes.
- Increase the heat a bit, add begin to add the cabbage, stirring well to combine. You might not be able to fit all the cabbage in at once, so continue to stir, and as the cabbage cooks and wilts add more until it is all in the pan
- Add the paprika, cayenne, salt, pepper and Worcestershire sauce, stir well to combine, then add the cooked bacon.
- Continue to cook and stir for about 15 mins more, or until the cabbage is cooked and tender.

This recipe started off as "Oops I don't have enough cabbage," so I added some collard greens that I had to stretch the portions. It ended up with everyone really loving the combination of the two greens with the smoky bacon, spices, sweet peppers and fragrant garlic. It's two Southern gems wrapped up in one dish. I always top off my cabbage or greens with chow-chow, which is a mixture of tomatoes, diced onions, bell peppers, hot sauce and vinegar. It gives it an extra zing of pickled flavor.
