CRANBERRY CITRUS SALAD WITH PECANS
Fresh, crisp and healthy, this Cranberry Salad recipe with Pecans is the perfect Thanksgiving side dish. Made with mandarin oranges, fresh cranberries, and topped with goat cheese and pecans, this cranberry salad is amazing!

Steps:
- To a microwave safe bowl, add the fresh cranberries, 2 Tbsp. of orange juice and 2 Tbsp. of granular sweetener. Stir together and microwave on 1 minute increments until the cranberries burst. Stir. 2 minutes will likely be all that is needed to cook the cranberries. Set cranberries aside to cool.
- In a large bowl or platter, add the spring mix/salad greens, oranges, green onions, celery, pecans and cooled cranberries. Top with the goat cheese crumbles. Refrigerate until ready to serve.
- For the dressing, whisk together the olive oil, balsamic vinegar, garlic, honey, orange juice and zest, salt and pepper. Serve the dressing on the side or dress the salad just before serving.

- Preheat oven to 400 degrees F (200 degrees C). Spread pecans evenly on a baking sheet. Toast for 8 to 10 minutes, or until lightly browned and fragrant.
- In a small bowl, stir together the vinegar, mustard, sugar, salt, and pepper; mix until sugar and salt dissolve. Whisk in olive oil.
- In a salad bowl, toss together the greens, cranberries, pecans, onions, and cheese. Drizzle with vinaigrette, and toss gently to coat.

- Start by carmelizing pecans.
- Melt butter in pan.
- Add brown sugar and stir unti mixture bubbles and doesn't appear to greasy or too dry.
- Add pecans, stir and cook until well coated.
- Place on cookie sheet to dry and cool.
- Prepare the salad dressing.
- Mix balsamic vinegar and olive oil.
- Add jam, orange juice and ginger.
- Put greens, cranberries, cheese and carmelized pecans in a salad bowl.
- Toss with salad dressing and serve immediately.

- Bring 1 cup orange juice to simmer in heavy small saucepan. Remove from heat.
- Mix in dried cranberries.
- Let stand until softened, about 30 minutes. Drain well; discard soaking juice.
- Whisk oil, vinegar, orange peel and remaining 3 tablespoons orange juice in small bowl to blend. Mix in cranberries.
- Season dressing to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.).
- Place greens in large bowl.
- Toss with 2/3 of dressing.
- Divide greens among 6 plates.
- Add orange segments to bowl; toss with remaining dressing.
- Top salads with orange segments and pecans.

Steps:
- Preheat the oven to 350 degrees F. Toast the pecans in a shallow pan until they begin to get fragrant, about 5 to 7 minutes. Let cool completely.
- Combine the lettuce, mesclun, and onion in a salad bowl. Just before serving, pour on the dressing and toss well. Check to see if you need to add more dressing; you don't want to make the greens too wet. Serve on individual salad plates with the pecans and the cranberries sprinkled on each portion.
- Place all the ingredients in a jar with a tight-fitting lid and shake vigorously.
