CRANBERRY COMPOTE RECIPE

Sweet with a citrusy edge, this cranberry compote is delicious paired with Roasted Turkey. Ginger gives just the right amount of spices. You can make it ahead and store it in the fridge for about a week, or tuck it into the freezer for up to 6 months. Just warm it up in a saucepan before serving.

12 ounces cranberries ((fresh or frozen))
1 tablespoon orange zest
1 cup orange juice
2 tablespoons orange-flavored liqueur ((such as Grand Marnier))
1 (1-inch knob) ginger
3/4 cup Grade A dark maple syrup
1/2 teaspoon ground coriander

Steps:

  • Place all the ingredients into a medium saucepan, and then turn the heat to medium-high. Bring to a boil, and then turn the heat down to medium. Simmer until the cranberries pop, and the sauce thickens - about 15 minutes. Pluck out the ginger with a spoon, and then serve the sauce.

Number Of Ingredients 9

1/2 pound fresh cranberries
1 tablespoon grated orange zest
1 teaspoon grated lemon zest
1/4 cup fresh orange juice
3 tablespoons fresh lemon juice
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
2 cups water
3 tablespoons cornstarch

Steps:

  • Put the cranberries, orange and lemon zest, orange and lemon juice, sugar, vanilla, and 1 1/2 cups of the water in a medium-size nonreactive saucepan over medium-high heat. Bring to a boil and cook for 8 minutes.
  • Dissolve the cornstarch in the remaining 1/2 cup of water and add to the pan. Reduce the heat to medium, then stir constantly until the mixture thickens, about 2 minutes.
  • Remove from the heat and cool completely.

3 cups sugar
1 1/2 cups water
2 vanilla beans, split lengthwise
1 orange, zested and juiced
3 (12-ounce) bags fresh or frozen cranberries
Dash salt
Freshly ground black pepper
3 tablespoons Dijon mustard

Steps:

  • Start by making a simple syrup: dissolve the sugar in the water in a medium saucepan. Add vanilla beans and bring to a simmer. Add the orange juice and cranberries, a dash of salt and some freshly ground black pepper, to taste. Simmer until cranberries begin to pop and become tender, about 3 to 5 minutes. Remove from heat and stir in Dijon mustard. Chill cranberry sauce until ready to serve. The sauce can be made up to 2 days ahead of time. Just before serving, garnish sauce with freshly grated orange zest.

10 ounces frozen dark sweet cherries (about 2 cups)
1 1/4 cups (packed) brown sugar
1/2 cup apple cider
1/2 teaspoon freshly ground black pepper
1/2 cup bourbon

Steps:

  • Bring cranberries, cherries, brown sugar, cider, and pepper to a boil over high heat in a medium saucepan. Cook 2 minutes, stirring occasionally, then stir in bourbon. Reduce heat, bring to a simmer, and cook, stirring often and pushing fruit against the side of the pan with the back of a wooden spoon to break apart slightly, until thick and syrupy, about 25 minutes more. Let cool completely.
  • Do Ahead
  • Sauce can be made 5 days ahead; cover and chill. Bring to room temperature before serving.

Steps:

3 tablespoons boiling water
3 tablespoons orange juice
1 tablespoon Bourbon
1 teaspoon orange peel, minced
1/2 teaspoon gingerroot, minced
1 1/2 tablespoons unsalted butter
8 ounces veal scallops, thin
1 green onion, minced

Steps:

  • Combine dried cranberries and boiling water in small bowl.
  • Let stand 10 minutes.
  • Add orange juice, bourbon, orange peel and ginger, stir to blend.
  • (Can be made 3 hours ahead; Cover cranberry mixture and let stand at room temperature).
  • Melt butter in heavy large skillet over medium-high heat.
  • Season veal with salt and pepper.
  • Add veal to skillet and saute until brown and just cooked through, about 2 minutes per side.
  • Using tongs, transfer veal to plates.
  • Add cranberry mixture to skillet and cook until mixture thickens, scraping up any browned bits, about 1 minute.
  • Mix in green onion.
  • Season compote with salt and pepper.
  • Spoon over veal.

1/2 cup fresh cranberries
6 ounces dried apricots
1 grapefruit
2 navel oranges

Steps:

  • in a small saucepan combine 1/3 cup of the sugar and 1/3 cup water. bring mixture to a simmer until the sugar is dissolved. Add the cranberries and simmer 5 minutes or until they have barely popped. Transfer to a small bowl and let cool or chill in the refrigerator.
  • Repeat with the remaining 1/3 cup sugar and add the apricots. Simmer, covered, for 5 minutes. Transfer to another small bowl and cool or refrigerate.
  • Working over a bowl cut away the rinds and pith of the grapefruit and oranges and cut the fruit into sections. Chill the citrus fruit.
