4 pounds apples
12 ounces fresh or frozen cranberries (can go up to a pound if stronger cranberry flavor is desired)
1/4-1/2 cup real maple syrup
1 Tablespoon orange zest
1 Tablespoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon salt
1/4 cup water

Steps:

  • Peel and core apples then cut into large chunks. If using an immersion blender for a smooth applesauce, you may leave the peels on for added nutrition.
  • Place apples, cranberries, maple syrup, cinnamon, cloves, orange zest, salt and water into a large heavy bottomed pot on medium high heat.
  • Cook for 10 minutes then stir.
  • Cook an additional 15-20 minutes with lid on, stirring regularly until sauce is preferred consistency.
  • For chunky cranberry applesauce, just break things up with a wooden spoon or potato masher. For a totally smooth cranberry applesauce, use an immersion blender to puree.
  • Preserve in jars using a water bath method.

1 cinnamon stick, broken in half

2 Gala apples, peeled, cored and diced
2 teaspoons corn starch

Steps:

  • In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.
  • Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.
  • Remove from heat and pour into a serving bowl. Refrigerate until thickened, about 30 minutes. Remove the cinnamon sticks and serve.

2 extra-large eggs, at room temperature
1 cup plus 1 tablespoon granulated sugar

1/4 cup sour cream
1 cup all-purpose flour
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F.
  • Combine the cranberries, apple, brown sugar, orange zest, orange juice, and 1 teaspoon of the cinnamon in a medium bowl. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs on medium-high speed for 2 minutes. With the mixer on medium, add 1 cup of the granulated sugar, the butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.
  • Pour the fruit mixture evenly into a 10-inch glass pie plate. Pour the batter over the fruit, covering it completely. Combine the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, until a toothpick inserted in the middle of the cake comes out clean and the fruit is bubbling around the edges. Serve warm or at room temperature.

  • In a medium sauce pan, combine cranberries, spices, sugar and wine. Bring to a boil, reduce heat and simmer, uncovered, for 20 minutes.
  • Meanwhile, peel and core apples and cut into 1/2" cubes, and add to the cranberry mixture after the original 20 minutes of simmering and mix well. Cover the sauce pan and continue to simmer an additional 20 minutes, stirring occasionally. If sauce begins to stick, add a small amount of water.

6 Tablespoons (90g) unsalted butter
1/2 cup (100g) packed dark brown sugar
1 medium apple, peeled, cored, and thinly sliced*
1 heaping cup (130g) fresh or frozen cranberries*
1/2 cup (115g) unsalted butter, softened to room temperature
1 cup (200g) packed dark brown sugar
2 large eggs, room temperature and separated
1 teaspoon pure vanilla extract
1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/3 cup (80ml) buttermilk*

Steps:

  • Lightly spray a 9-inch pie dish with non-stick cooking spray. Set aside. Make sure your apples are sliced and ready to go.
  • In a small saucepan, melt butter on low heat. When it begins to bubble, whisk in the brown sugar. Continue to stir until smooth. Then, leave on heat for about 2 minutes until it begins to bubble. Stir, then remove from heat and allow to briefly cool for a couple minutes. Layer the sliced apples and cranberries into the dish and pour the butter/sugar overtop. Set aside.
  • Preheat oven to 325°F (163°C).
  • In a medium bowl, toss the flour, baking powder, salt, cinnamon, nutmeg, cloves, and ginger together until combined. Set aside.
  • Using a handheld or stand mixer with a paddle attachment, beat the butter on high until creamy - about 1 minute. Add the brown sugar and beat on medium-high speed until creamed together, about 2-3 minutes. Scrape down the sides and bottom of the bowl as needed. Beat in the egg yolks and vanilla on medium speed until everything is combined, about 2 full minutes. Scrape down the sides and bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk, beginning and ending with the dry ingredients, and mixing each addition just until incorporated. Do not overmix. Whisk or beat the 2 egg whites until thick and foamy, about 3 minutes. Fold into cake batter. The batter will be smooth, velvety, and thick.
  • Spoon or pour batter over the apples/cranberries and bake for 40-44 minutes or until a toothpick inserted in the very middle comes out clean. Allow to cool for exactly ten minutes before inverting onto a large serving dish or cake stand. Serve warm or at room temperature. I prefer it at room temperature. Leftovers keep well covered tightly at room temperature or in the refrigerator for 2 days.

2 pounds fresh cranberries (8 cups)
3 cooking apples, peeled and chopped (I used granny smith)
2 firm pears, peeled and chopped
2 cups golden raisins
1 1/2 cups to 2 cups raw or granulated sugar (adjust according to how sweet/tart you like it. And keep in mind how sweet your orange liquor is)
2 oranges zested
1 cup fresh orange juice (about 3 oranges)
2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
pinch of salt
1/2 cup orange liquor, such as cointreau or grand mala*

Steps:

  • Add all of the ingredients except the orange liquor, to a large pot. Bring to a boil and reduce to a simmer. Allow the mixture to simmer for 35 to 45 minutes, stirring occasionally. You will know the cranberry sauce is done when most of the cranberries have popped and the sauce has reduced and become thick (see photo in post above).
  • With the heat off stir in the orange liquor. Taste and add more sugar if needed.
  • allow the sauce to mostly cool before transferring to airtight containers and storing in the fridge. Allow it to chill in the fridge for at least 4 hours (or overnight). This recipe is best made up to 2 days in advance so the flavors can really develop. You can make it up to 1 or 2 weeks in advance as it keeps for a long time in the fridge. Serve cold.

1 cinnamon stick
½ orange , rind peeled, then juiced
5 cloves
1 tsp ground ginger
2 star anise
1 small cooking apple , peeled, cored and cut into 1cm pieces
200g fresh or frozen cranberries
150g light brown soft sugar

Steps:

  • Bring the wine to a gentle simmer with the cinnamon, orange juice and rind, cloves, ginger and star anise. Once steaming, remove from the heat and leave to infuse for 30 mins.
  • Strain the wine into another pan, discarding the aromatics, and add the apple, cranberries and sugar. Bring to a simmer. Bubble for 10-15 mins until the berries start to burst, and the apple is soft. The sauce will thicken as it cools - you can add a splash more orange juice or water to loosen, if you like. Make ahead and freeze, or keep in the fridge for up to four days. Bring to room temperature to serve.

1 lb or 500g cranberries, fresh or frozen
2 Granny Smith Apples
1 cup or 200 g Sugar
1 Cinnamon Stick
Juice and zest of 2 Clementines and zest

Steps:

  • Peel, core and slice the apples in to chunks.
  • Add all the ingredients to a saucepan and bring to the boil. Once boiling, turn the heat down to low, stir and use a masher to crush down the sauce. Allow to simmer gently for around 15 minutes, until it thickens.
  • Transfer to a bowl and allow to cool. Remove the cinnamon stick too!
  • Refrigerate until ready to serve, or pop in gift jars to give to friends!

3 pounds apples, peeled, cored, and cut into 1/2-inch-thick slices (try a combination of Gala, Golden Delicious, and McIntosh)
1 cup fresh or frozen cranberries
1 cinnamon stick
1/2 cup sugar
3/4 cup water
2 teaspoons freshly squeezed lemon juice

Steps:

  • In a large saucepan, combine apples, cranberries, cinnamon stick, sugar, and water; bring to a boil. Reduce heat; cover, and simmer, stirring occasionally, until apples are tender, 30 to 35 minutes. (If sauce begins to stick to the bottom of the pan, add 2 to 4 tablespoons more water.)
  • Remove from heat; discard cinnamon stick. Stir in lemon juice.

½ cup packed dark brown sugar (or pure maple syrup, or honey)
½ cup apple juice (or apple cider)
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cinnamon stick (optional)

Steps:

  • In a medium-sized pan, add cranberries, apples, brown sugar, apple juice, ground cinnamon, nutmeg, and cinnamon stick. Stir to combine.
  • Bring sauce to boil over medium-high heat. Reduce heat to a simmer, cooking until most cranberries pop, apples are tender, and the mixture has slightly thickened, about 15 to 20 minutes. Make sure to stir occasionally, about every 5 minutes.
  • Turn off heat and remove cinnamon stick. Taste sauce and add more sweetener if desired. If needed, add more apple juice for a thinner sauce.
  • Allow cooling slightly to thicken before serving.

2 tablespoons unsalted butter

Steps:

  • In a heavy saucepan cook the apples, the cranberries, the sugar, the apple juice or water, the cinnamon stick, and the zest over moderate heat, stirring, for 15 minutes, or until the apples are very soft. Discard the cinnamon stick and the zest, force the apple mixture through the medium disk of a food mill into a bowl, and stir in the butter. Serve the applesauce warm or chilled. The applesauce keeps, covered and chilled, for 1 week.
