STEAK MEDALLIONS WITH POTATOES

1 1/2 pounds bite-size potatoes
Kosher salt
2 tablespoons olive oil
6 tablespoons salted butter
1 1/2 pounds 1-inch-thick filet steaks, cut into 2-inch medallions
2 tablespoons Montreal steak seasoning
2 tablespoons minced garlic
1 teaspoon minced fresh thyme
1 teaspoon minced fresh oregano
1 large yellow onion, sliced thin
1/4 cup white wine
Chopped fresh parsley, to garnish
Flaky sea salt, to garnish
1/2 cup bottled horseradish cream, optional

Steps:

  • Place the potatoes in a large, high-sided skillet, cover with water and bring to a boil. Add a good pinch of kosher salt and cook until tender, about 12 minutes.
  • Heat the olive oil and 2 tablespoons of the butter in a large heavy-bottomed skillet over medium-high heat. Season the steak medallions all over with the steak seasoning. When the oil is hot and the butter has melted, add the steak to the skillet and cook 2 to 3 minutes per side for medium rare. Remove to a plate and cover with foil to rest.
  • Without cleaning the skillet, add the garlic, thyme, oregano and onions. Reduce the heat to medium and cook, scraping the skillet to release any flavorful steak bits stuck to the bottom, until the onions are starting to become golden, 6 to 8 minutes. Add the white wine to the onions and allow it to reduce for 1 minute. Add the remaining 4 tablespoons butter and allow it to melt.
  • Drain the potatoes and pour onto a serving platter. Using the bottom of a glass, press firmly to slightly crush the potatoes and sprinkle over a little kosher salt. Top with the onion mixture. Place the steak medallions on top and garnish with the chopped parsley and flaked sea salt. Serve with horseradish cream if desired.

2 inches fresh ginger root, peeled and grated
1/4 cup tamari aged soy sauce
2 limes, zested and juiced
3 tablespoons vegetable oil, eyeball it
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
2 pounds flank steak
2 1/2 to 3 pounds Idaho potatoes, 4 large potatoes, peeled and cut into chunks
Salt
1/4 to 1/3 cup cream
1 to 2 tablespoons wasabi paste - how hot do ya like it?
4 scallions, root end trimmed
Handful cilantro leaves

Steps:

  • Preheat a grill pan or indoor/outdoor grill to high.
  • Combine ginger, tamari, lime juice, oil and grill seasoning in a large sealable plastic bag. Add meat to marinade and coat evenly. Let stand 10 minutes then grill meat 6 to 7 minutes on each side.
  • Place potatoes in a pot and cover with water. Bring to a boil, salt the potatoes and cook until tender, 10 to 12 minutes. Drain potatoes and add them back to the hot pot. Smash the potatoes with a masher to desired consistency with the cream and wasabi. Adjust salt, to taste.
  • While potatoes and meat cook, finely chop the scallions together with cilantro and lime zest.
  • Let meat rest 5 minutes then thinly slice on an angle against the grain. Serve meat on mash potato mounds with a garnish with a generous sprinkling of the chopped scallion-cilantro-lime zest.

I was craving 'loaded mashed potatoes' like they serve at some of the chain restaurants but was tired, busy and in a hurry so in an effort to eliminate some steps I tried seasoning my mashed potatoes with Montreal steak seasoning (my favorite slow cooker seasoning!) and threw in some cream cheese and shredded cheese for a super easy treat that the whole family raved over. Next time I will double the recipe so I can have leftovers for my lunch bucket!

1 lb of thin sliced venison, cut into strips
1/4 cup vegetable oil
1/4 cup vinegar (any kind)
2 tablespoons McCormick's Montreal Brand steak seasoning
4 large potatoes
2 tablespoons butter
2 garlic cloves, mashed
2 green onions, chopped
2 -3 bell peppers, sliced thin (cook's choice)
1 large onion, sliced
1 tablespoon olive oil
1/2 cup sour cream
1/4 cup chicken broth
1 cup shredded cheddar cheese

Steps:

  • Mix 1/4 cup oil & 1/4 cup vinegar with the Montreal steak seasoning. Pour over sliced venison and refrigerate overnight or 8 hours. Cook potatoes with skins on until tender, drain & set aside. Cook the garlic & green onions with 2 tablespoons butter. While the potatoes are cooking, drain the marinade from the venison and heat a heavy skillet over medium high heat. Cook the venison for 6-7 minutes and then add the onion and peppers. Cook until the onions are clear, moving everything around the skillet. Turn the heat down and set aside. Add the garlic & green onions to potatoes and mash adding sour cream and enough broth for good consistency. Serve venison and veggies over potatoes and garnish with cheddar cheese.

2 large heads cauliflower, broken into florets
1-1/2 cups shredded Parmesan cheese
1 cup shredded Colby-Monterey Jack cheese

TOPPING:
1 cup Italian-style panko bread crumbs
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. Place cauliflower in a stockpot; add water to cover. Bring to a boil. Reduce heat; simmer, uncovered, until very tender, 10-12 minutes. Drain; transfer to a large bowl. Mash cauliflower; stir in cheeses, cubed butter and seasonings. Transfer to a greased 3-qt. or 13x9-in. baking dish., In a small bowl, mix bread crumbs with melted butter until evenly coated; sprinkle over cauliflower mixture. The fries turn out tender on the inside and crispy on the outside with the flavors of montreal steak seasoning. Please be warned, though, that these are lightly salty. DH and I enjoy a bit of saltiness, so that wasn't a problem for us.
