Mix lemony kale with a sweet-and-spicy pine nut mixture.

3 tablespoons extra-virgin olive oil
1/4 cup golden raisins
2 tablespoons pine nuts
1/2 teaspoon red pepper flakes
2 garlic cloves, sliced
2 bunches black kale, leaves and stems separated and chopped
Kosher salt
Juice of 1/2 lemon

Steps:

  • Heat the oil in a large skillet set over medium heat. Add the raisins, pine nuts, red pepper flakes and garlic. Cook, swirling the skillet occasionally, until the pine nuts are toasted, about 2 minutes. Remove the ingredients from the oil with a slotted spoon and set aside.
  • Add the kale stems to the skillet and cook, stirring, until soft, about 3 minutes. Add the kale leaves in batches, stirring to wilt each batch. Add 1/2 teaspoon salt and 1/2 cup water, cover and cook, stirring once, until tender, 7 to 10 minutes.
  • Remove from the heat and add the lemon juice and the reserved pine nut mixture. Adjust the seasoning with additional salt.

8 cups loosely packed stemmed kale, chopped
juice from 1/2 lemon (about 1-1/2 Tbsp.)
1 Tbsp. toasted pine nuts
1/4 cup sliced almonds, toasted

Steps:

  • Heat dressing in large nonstick skillet on medium heat.
  • Add onions; cook on medium-low heat 10 min. or until tender and golden brown, stirring frequently.
  • Add kale; cook and stir 3 min. or just until kale is wilted.
  • Drizzle with lemon juice; stir. Sprinkle with pine nuts and almonds.

¼ cup pine nuts
1 tablespoon olive oil
1 onion, thinly sliced
1 clove garlic, minced
1 pound baby kale
salt and ground black pepper to taste
¼ cup golden raisins

Steps:

  • Place pine nuts in a skillet over medium-high heat. Cook, stirring constantly, until toasted and fragrant, about 2 minutes.
  • Heat oil in a large skillet over medium heat. Add onion; cook, stirring often, until starting to brown, about 5 minutes. Add garlic; cook and stir, about 1 minute. Stir in baby kale a few handfuls at a time until it starts to wilt. Cover and cook until kale is completely wilted and hot, 3 to 4 minutes. Season with salt and pepper.
  • Remove from heat and stir in pine nuts and golden raisins. Cool briefly before serving, about 5 minutes.

1/4 cup extra-virgin olive oil
1/2 lemon, juiced
Kosher salt
Pinch of red pepper flakes
1/2 cup pine nuts, toasted

Steps:

  • Place the kale in a large bowl. In a separate bowl, whisk together the olive oil, lemon juice and some salt. Toss the kale in the dressing and let sit at room temperature to soften.

4 tablespoons fresh lemon juice (, divided)
2 tablespoons extra virgin olive oil
1 tablespoon champagne vinegar or white wine vinegar
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 cup grated Parmesan cheese
1/3 cup toasted pine nuts
1/4 cup capers (, drained)

Steps:

  • Rinse the kale leaves and pat dry. Trim the stalky veins from the leaves and discard. Cut the leaves into very thin slices and place in a large mixing bowl.
  • In a small bowl or glass jar fitted with a lid, combine the lemon juice with the olive oil, vinegar, kosher salt, and freshly ground black pepper. Drizzle the chopped kale with 2 tablespoons of the dressing then use your fingers to massage the kale leaves for a few minutes until it becomes glossy and reduces in volume.
  • Toss with more dressing to taste then add the Parmesan cheese, toasted pine nuts, and capers. Toss to combine and season with more dressing if desired and salt and pepper. Let stand 30 minutes to an hour before serving.

1/4 cup plus 2 tablespoons olive oil, divided
1/2 teaspoon salt, divided
12 ounces uncooked whole wheat linguine
1 large sweet onion, thinly sliced
3 garlic cloves, minced
1 tablespoon honey
3 large tomatoes, chopped

Steps:

  • Pulse hazelnuts in food processor until finely ground. Add kale, 1/4 cup Parmesan cheese, basil, 1/4 cup olive oil and 1/4 teaspoon salt; pulse until smooth and creamy, adding oil if pesto seems dry., In a large stockpot, cook linguine according to package directions. Meanwhile, in a large skillet, heat remaining 2 tablespoons olive oil over medium heat. Add onion; cook and stir until tender, about 5 minutes. Reduce heat to low; add garlic and honey. Cook, stirring occasionally, until onion caramelizes, about 5 minutes more., Drain linguine, reserving 1/2 cup pasta water. Steps:

  • Combine oil, onion, garlic, and 1/4 teaspoon salt in a large saute pan; cook over medium heat, stirring occasionally, until onion is lightly browned, about 5 minutes. Reduce heat to medium-low; cook until onion is soft, about 10 minutes.
