CRAB-TOPPED FISH FILLETS
These fillets are elegant enough for company but truly no trouble to make. Fish is abundant here in South Florida, and we like to get together with friends in the afternoon, so I often need to whip up a quick dinner when we get home. - Preheat oven to 350°. Place fillets in a greased 13x9-in. baking pan. Bake, uncovered, until fish flakes easily with a fork, 18-22 minutes. Meanwhile, in a large bowl, combine the crab, cheese, mayonnaise and lemon juice., Drain cooking juices from baking dish; spoon crab mixture over fillets. Broil 4-5 in. from the heat until topping is lightly browned, about 5 minutes. Sprinkle with almonds and, if desired, paprika.

CRAB STUFFED FISH
I love this dish I got it off of the T.V years ago and I make it often. I normally use a whitefish of some sort. Tilapia or Flounder are my favorites. I usually serve with rice and steamed vegetable. It's filled with flavor and is pretty easy to make. I could eat the stuffing all by it's self. A lot of times I double the stuffing but it's up to you what you think.

Steps:
- Preheat the oven to 400°F; coat a 9x13-inch baking dish w/ non stick cooking spray.
- In a large skillet melt 4 T butter over medium-high heat. Add celery, onion & parsley. Sauté until tender. Remove from heat and stir in crabmeat, bread crumbs, lemon juice and red pepper flakes.
- Spoon crabmeat mixture evenly over the filets. Starting from the small end, roll up each fillet, jelly roll- style. Place the rolls seam side down in baking dish. Melt the remaining butter and drizzle over fillets. Sprinkle with paprika.
- Bake for 20 -25 minutes, or until fish flakes easily with a fork.
BLACK SEA BASS WITH CORN AND JUMBO LUMP CRAB SAUTE
Steps:
- Score the skin side of the sea bass fillet (make a few small slit marks in the skin with a sharp knife). Season the fish with salt and pepper.
- Preheat a medium saute pan over high heat and add 2 ounces of olive oil. When the oil is smoking, add the fish, skin side down. Reduce heat to medium and press fillet with a spatula to crisp the skin. When the skin is browned, flip fish. (The total cooking time for the fish should be 5 minutes). Remove from pan and keep warm.
- Add the remaining 2 ounces olive oil to the saute pan. Add the corn, onion, red pepper, and poblano pepper and saute for 1 minute. Add the crabmeat, chives, and chopped thyme, stirring to blend. Adjust seasoning to taste. Add the chicken stock and whisk in the butter to form a sauce. Reduce until sauce consistency.
- Arrange the sauteed vegetable mixture in a large serving bowl. Top with the warm bass fillet and roasted fingerling potatoes. Garnish with a sprig of thyme.
WHOLE STUFFED FLOUNDER W/ CRABMEAT DRESSING
I love crabmeat dressing more than anything, and I love baked flounder so here you go with my recipe from the 60's. Still my favorite.

- 1. DRESSING:
- 2. mix creole seasoning and italian seasoning with breadcrumbs,then add onion,bell pepper, and last mayonnaise.Then gently fold in crab meat being careful not to break up lumps of crab. meat.refrigerate I like to make my dressing the day before or the morning of my dinner,it gives the seasoning time to marry together.
- 3. LEMON,GARLIC,BUTTER SAUCE:
- 4. In small skillet, cook garlic in olive oil until tender (careful not to burn) add butter,creole seasoning,lemon juice and zest, simmer for 2 min.
- 5. Put fish in prepared pan, fill with 1 cup crab meat,then lay sides up over the crab meat. cover fish with sauce.
- 6. preheat oven to 400 degrees. Spray large sheet pan with cooking spray. cook flounder for 30 min.(or until flakey) spoon sauce over fish ever 10 min.When done place each fish on plate and pour sauce from baking dish over fish and serve
- 7. If using filets, place one filet on baking pan cover with dressing, top with filet,spoon sauce over filets. cook as above.
- 8. TIPS: If you use canned crab be sure to drain off the water in can and rainse the crab at least 3 times to get rid of the can smell and taste.
- 9. In the dressing you can add small cooked shrimp or cooked crawfish tails, I love to change it around.
- 10. I like to serve mine with a greek salad and hard greek rolls,or a twice baked potato, tossed spinch salad, and garlic bread.
- 11. You can also make crab meat rolls,with thin filets, just place dressing on the filet and roll it up then bake with the sauce over it.

- Preheat oven to 350°F.
- Saute onion, bell pepper and celery in margarine for 10 minutes.
- In mixing. bowl, add crumbled toast, milk and egg.
- Mix well and add crab meat.
- Add mixture to sauteed vegetables and mix well on low heat.
- Add salt and pepper to taste.
- Place in casserole dish.
- Top with bread crumbs and green onions and dot with margarine.
- Bake at 350F for 45 minutes.

- Lay the cooked crab on its back and twist off the claws and legs. Crack the claws and legs using a heavy object - but don't allow the shell to shatter into very small pieces as it will be difficult to find. Carefully remove the meat using a lobster pick or teaspoon and put it into a bowl (preferably metal). Check for stray shell by shaking the bowl from time to time - shell fragments 'ping' against the side and can be removed. Put your thumbs on the base of the body, at the back of the crab, and push upwards to release it from the carapace.
- Pull away and discard the lungs ('dead man's fingers') found around the main body and inside of the carapace. Press the mouth so that it snaps away from the main shell and pull away the stomach sac. Cut the body in half and scoop out further white meat - it is worth taking time over this as there is a surprising amount in all the small cavities.
- Scoop out the brown meat from the carapace - the quantity and quality of this will depend on the time of year. If the crab has had its shell for some time, the brown meat will be plentiful. Some people like brown meat straight from the shell, others add seasoning, a little mustard and breadcrumbs, too. White meat is great just as it is.
CRAB BAKE
Steps:
- Preheat the oven to 375 degrees F.
- Combine all ingredients except crackers, adding enough milk to make dip consistency. Place in a small baking dish and bake for 15 minutes. Serve hot on crackers.

- Check through the crab meat and discard any pieces of shell. Drain off any liquid. Then place in a mixing bowl along with the breadcrumbs, parsley, mayonnaise, mustard, ginger, scallions, egg and lemon juice and mix well. Season with salt and black pepper.
- Using damp hands, shape the mixture into eight crab cakes. Chill in the fridge for an hour if possible.
