While the rest of the meal is on the grill, toss together this cool steakhouse salad.

3 tablespoons red-wine vinegar
3 tablespoons olive oil
1 shallot, minced
2 teaspoons capers, rinsed and coarsely chopped
3 ripe beefsteak tomatoes
Coarse salt and ground pepper

Steps:

  • In a small bowl, whisk together red-wine vinegar and olive oil; stir in shallot and capers.
  • Core tomatoes; cut each into 8 wedges and place in a serving bowl. Drizzle with dressing, and season with salt and pepper. Serve immediately.

3 tablespoons balsamic vinegar
1 teaspoon chopped fresh oregano
1/2 teaspoon honey
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil
2 beefsteak tomatoes (or large heirloom if available), sliced 1/2-inch-thick
1 small red onion, diced
1 cup crumbled feta
2 tablespoons fresh mint leaves
1 tablespoon fresh parsley leaves
8 fresh basil leaves, torn

Steps:

  • For the dressing: In a small bowl, whisk together the balsamic, oregano, honey, salt and pepper. Slowly whisk in the extra-virgin olive oil until combined.
  • For the salad: Arrange the sliced tomatoes on a platter. Scatter over the onions and feta. Drizzle with the dressing, then top with the mixed herbs.

John Villa's Pineapple Carpaccio with Blueberries, Mint and Fresh Coconut image

1/2 pint of blueberries (about 40 to 45 berries)
1/2-ounce sugar
2 ounces water
1 small pineapple
8 to 10 fresh mint leaves, rinsed
3/4 ounces fresh coconut meat, shredded

Steps:

  • Place blueberries, sugar, and water into a bowl. Stir to dissolve sugar and marinate for about 10 minutes (do not refrigerate). Slice pineapple as thinly as possible and place slices on 4 chilled plates covering the entire plate. Pat mint leaves dry, and place on top of one another and roll tightly, then slice across as thin as possible. Top the pineapple with the blueberry mixture. Sprinkle with mint ribbons, coconut and drizzle some of the remaining water mixture over the entire plate.

1 garlic clove
1 red bell pepper, roasted
1/4 pound sliced prosciutto, roughly chopped
5 fresh basil leaves, finely chopped
1 tablespoon dried oregano
1 pound ground veal
1/2 pound ground beef (85-90% lean)
1 sweet onion (Vidalia or Walla Walla; substitute yellow onion), finely chopped
1 cup unseasoned bread crumbs
1/2 cup grated Parmesan cheese, plus extra for the table
2 teaspoons kosher or sea salt
1 teaspoon freshly ground black pepper
2 eggs

Steps:

  • Instructions:Sauce In a large saucepan over medium-low heat, warm oil and gently sautegarlic, add canned tomatoes and bell pepper basil mixture, season with salt and pepper to taste Heat oven to 350°. Place garlic and bell pepper in a food processor and pulse a few times to break them up. Add prosciutto and basil and pulse until well combined. Remove to a large bowl. Add remaining ingredients (through eggs) and mix with your hands until well combined. Form into golf ball-sized balls. Place on a baking sheet and bake about 15 minutes. Remove from oven and gently fry until golden and aadd to gravy

6 bacon slices, chopped
1/2 cup sour cream
3 tablespoons whole milk plus additional if necessary
2 tablespoons cider vinegar
1 scallion, chopped
1 cup crumbled blue cheese (1/4 pound), divided
1 (1/2-pound) head Bibb or Boston lettuce
1 large beefsteak tomato, cut into wedges

Steps:

  • Cook bacon in a 10-inch skillet over medium heat until crisp. Transfer to paper towels to drain, reserving fat in skillet.
  • Whisk together 1 tablespoon hot bacon fat, sour cream, milk, vinegar, and 1/4 teaspoon each of salt and pepper until smooth. Stir in scallion and 2/3 cup blue cheese. Thin with additional milk if desired.
  • Quarter lettuce lengthwise (through stem) into wedges, then remove core and arrange each wedge on a plate with tomato wedges. Stir dressing and spoon over top. Sprinkle with bacon, remaining 1/3 cup blue cheese, and pepper to taste.

3 ripe beefsteak tomatoes, cut into 1/2-inch thick slices
12 seedless watermelon sticks (3 inch long sticks)
8 sticks firm feta cheese (2 inch long sticks)
4 tablespoons extra virgin olive oil (good quality)
4 tablespoons balsamic vinegar
basil leaves
sea salt or herb fleur de sel
2 cups fresh basil leaves
1 cup olive oil
salt, to taste

Steps:

  • To prepare Basil Oil: blanch 2 cups basil leaves in boiling water, then immediately place in ice water; drain well.
  • Transfer drained basil to blender; add 1 cup olive oil and salt to taste; process 1 minute or until pureed.
  • Pass through a fine mesh strainer.
  • To prepare the salad, divide tomato slices among four salad plates.
  • Top each with three sticks watermelon and two sticks feta cheese; drizzle with olive oil, balsamic vinegar and some Basil Oil.
  • Garnish with basil leaves; serve salt separately.

  • In a medium saucepan, heat the 1/2 cup of olive oil. Add the dried shiitakes and garlic and cook over moderately low heat, stirring, until softened, about 3 minutes. Add the crushed tomatoes, kombu and sugar and simmer until thickened slightly, about 30 minutes. Strain the pomodoro sauce through a fine-mesh sieve set over a medium bowl, pressing on the solids; season with kosher salt. Let cool to room temperature.
  • Meanwhile, preheat the oven to 350° and line a large rimmed baking sheet with parchment paper. In a food processor, pulse the panko, flour and cocoa powder until combined. Add the olives and pulse until finely chopped. Add the butter and pulse until the mixture resembles coarse crumbs. Spread the streusel on the prepared baking sheet. Bake for about 15 minutes or until toasted and golden brown. Transfer to a rack and let cool completely.
  • Spoon some of the pomodoro sauce onto a platter or plates. Arrange the tomato slices over the sauce and top with the burrata. Generously sprinkle with the olive streusel and garnish with basil leaves and fennel fronds, if using. Drizzle the salad with olive oil and sprinkle with sea salt before serving.
