2 plum tomatoes, thinly sliced
1/2 teaspoon sea salt or kosher salt
1 loaf (1 pound) frozen pizza dough, thawed
2 tablespoons olive oil, divided
1/2 cup shredded Parmesan or Asiago cheese
1/2 cup fresh or frozen corn, thawed
1/4 cup thinly sliced red onion
8 ounces fresh mozzarella cheese, sliced
1/2 cup thinly sliced fresh spinach
3 tablespoons chopped fresh basil

Steps:

  • Sprinkle tomatoes with salt; set aside. On a lightly floured surface, divide dough in half. Roll or press each to 1/4-in. thickness; place each on a greased sheet of foil (about 10 in. square). Brush tops with 1 tablespoon oil., Carefully invert crusts onto a grill rack, removing foil. Brush tops with remaining oil. Grill, covered, over medium heat until bottom is golden brown, 2-3 minutes. Remove from grill; reduce grill temperature to low., Top grilled sides of crusts with Parmesan or Asiago cheese, tomatoes, corn, onion and mozzarella cheese. Grill, covered, on low heat until cheese is melted, 4-6 minutes. Sprinkle with spinach and basil.

3 garlic cloves, minced
3 medium tomatoes, cut into 1/2-inch slices

Steps:

  • Mix oil and garlic; brush onto both sides of vegetables. Sprinkle with pepper. Grill, covered, over medium heat until tender, 4-5 minutes per side for pepper and onion, 3-4 minutes per side for zucchini, 2-3 minutes per side for tomatoes., Coarsely chop pepper, onion and zucchini. Spread pizza crust with cream cheese; layer with 4 slices provolone and tomato slices. Sprinkle with 1/4 cup basil, carrots, oregano and thyme. Top with grilled vegetables, then remaining cheese., Grill pizza, covered, over medium heat until bottom is golden brown and cheese is melted, 5-7 minutes. Top with remaining basil.

1 1/4 cups warm (100 to 110 degrees F) water
2 packages dry yeast
1 tablespoon honey
3 tablespoons good olive oil
4 cups all-purpose flour, plus extra for kneading
2 teaspoons kosher salt
1 red onion, thinly sliced
1 pound fresh mozzarella, grated
1/2 pound Italian Fontina, grated
1/2 pound mild goat cheese, such as Montrachet, sliced
1 red or yellow bell pepper, cored, seeded, and julienned
1/4 pound prosciutto, thinly sliced and julienned
1 bunch arugula, cleaned and dried
6 plum tomatoes, sliced 1/4-inch thick
4 pork or turkey sausages, cooked and sliced
1 bunch basil leaves, cleaned and dried
4 garlic cloves, roasted
Crushed red pepper flakes
1/2 cup good olive oil
Cornmeal

Steps:

  • For the dough, combine the water, yeast, honey, and olive oil in the bowl of an electric mixer fitted with a dough hook. Add 3 cups flour, then the salt, and mix. While mixing, add 1 more cup of flour, or enough to make a soft dough. Knead the dough on low to medium speed for about 10 minutes until smooth, sprinkling it with flour, if necessary, to keep it from sticking to the bowl.
  • When the dough is ready, turn it out onto a floured board and knead by hand a dozen times. It should be smooth and elastic. Place the dough in a well-oiled bowl and turn it several times to cover it lightly with oil. Cover the bowl with a kitchen towel. Allow the dough to rest at room temperature for 30 minutes.
  • Divide the dough into 6 equal parts and roll each one into a smooth ball. Place the balls on a baking sheet and cover them with a damp towel. Allow the dough to rest for 10 minutes. Use immediately, or refrigerate for up to 4 hours.
  • If you've chilled the dough, take it out of the refrigerator approximately 30 minutes ahead to let it come to room temperature. Roll and stretch each ball into a rough 8-inch circle and place them all on baking sheets sprinkled with cornmeal. (You will be able to fit 2 pizzas on each 18 by 13-inch baking sheet.)
  • Light your grill and wait until it's hot.
  • Place the pizzas directly onto the grill and cook on 1 side for 1 minute. Turn the pizzas over and brush with olive oil or garlic oil.
  • Top the pizzas with any toppings you wish, piling them high. Drizzle each pizza with 1 tablespoon of olive oil. Put the lid on your grill and cook for 5 minutes more, until the crust is crisp and the toppings are cooked.

Store bought dough makes this loaded vegetable pizza an easy weeknight meal. Mix up your vegetables to suit your taste.

1 lb pizza dough (prepared)
1/2 C Italian Vinaigrette (I used Briannas)
14 oz can diced tomatoes (or fresh, drained)
1 ear corn (fresh (husk intact))
1 zucchini (chopped)
1/2 large red onion (sliced)
3 garlic (roughly chopped)
6 oz mozzarella (chopped)
Olive oil
fresh basil

Steps:

  • Place zucchini, onion and garlic in a bowl with vinaigrette. Set aside.
  • Press pizza dough down into a flat round(ish) disc on a nonstick surface, such as non stick foil. Brush top with oil.
  • Wrap corn in a damp towel and place in microwave. Cook on high for 6 minutes. Allow to cool enough to handle. Remove husk and silk. It should peel away very easily.
  • Preheat grill to medium/high heat.
  • Remove vegetables from bowl with a slotted spoon and place on grill, on a grill tray or basket. Place corn on the grill as well. Remove garlic after just 2 minutes on grill, as not to burn. Grill remaining vegetables 7-10 minutes, occasionally turning. Remove from grill and set aside. Cut kernels from cob and place with other vegetables.
  • Place pizza dough directly on grill rack, oiled side down. Cook just 2-4 minutes, until nice grill marks are in place. Brush oil on the top of dough. Flip over using spatula and/or tongs. Layer ingredients on pizza, starting with the tomatoes and ending with the cheese. Once toppings are on pizza, reduce heat to medium/low and cover. Cook about 4-5 minutes until dough is firm and cheese is melted.
  • Garnish with torn basil leaves if desired.
  • Enjoy!

It's a great tangy (and quick) sauce base to have on pizza as you top it with charred summer vegetables. You can use whatever looks good at the store. I personally love a vegetable version of a sausage and pepper theme that takes me straight to a summery street fair in my own backyard....

2 1/4 teaspoons active dry yeast
1 1/2 cups warm water (about 110 degrees F)
3 1/2 cups all-purpose flour, plus more for dusting
2 to 3 tablespoons extra-virgin olive oil
2 teaspoons kosher salt
1 teaspoon red wine vinegar
1 tablespoon honey
6 tablespoons extra-virgin olive oil
6 large cloves garlic, grated
3/4 cup tomato paste
1 cup heavy cream
Kosher salt
1/4 cup extra-virgin olive oil
2 red bell peppers, cored and cut into 1/2-inch strips
2 yellow bell peppers, cored and cut into 1/2-inch strips
3 medium red onions, cut into 1/2-inch rounds
1/2 teaspoon red pepper flakes
Kosher salt
1 to 2 tablespoons canola oil, for oiling the grill
2 pounds pre-sliced mozzarella cheese
1 to 2 tablespoons canola oil, for oiling the grill
2 cups arugula leaves, lightly chopped

Steps:

  • The yeast: For the pizza dough, combine the yeast and warm water in a bowl of an electric mixed fitted with the paddle attachment. Stir to dissolve the yeast and allow the mixture to rest for 5 minutes.
  • The dough: Using a sieve or strainer, sift about half of the flour over the yeast mixture and blend on low speed for 1 to 2 minutes. Add 1 tablespoon of the olive oil, the salt, vinegar, honey and remaining flour and mix to blend. With the mixer on medium low, mix the dough 5 to 7 minutes until it becomes a smooth ball in the bowl.
  • Rest: Lightly oil a bowl with the remaining olive oil and place the dough inside. Cover with plastic wrap and let it rest in a warm place until it has doubled in volume, about 1 1/2 hours.
  • The pizza rounds: Press gently on the dough and turn it onto a floured surface. Divide the dough into 4 pieces, rolling each into a loose ball. Cover with a kitchen towel and allow the dough to rest for an additional 15 minutes.
  • Preheat the oven to 450 degrees F.
  • Flatten each ball, then roll and gently stretch into an 8-inch round. Place each round on a pizza peel or the bottom side of a floured baking sheet.
  • Prebake: Place the pizza rounds on the center racks of the oven and bake until they become firm and rigid, about 5 minutes.
  • The tomato sauce: In a medium skillet, warm the olive oil, garlic and tomato paste over medium heat, stirring constantly with a wooden spoon, almost frying the paste. Add 1/2 cup water and let the tomato paste get hot and the garlic soft, 2 to 3 minutes. Add the cream, season with salt, stir and shut off the heat.
  • Get ready: Preheat the grill on high.
  • The vegetables: In a large bowl, combine the olive oil, red and yellow peppers, onions and red pepper flakes with a generous pinch salt.
  • Grill: Lightly oil a kitchen towel with canola oil and oil the grill. Arrange the vegetables on the grill and char on all sides until tender, 8 to 10 minutes. Remove from the grill.
  • The pizzas: Arrange each prebaked pizza round on the bottom of a baking sheet fitted with parchment paper or on a floured pizza peel. Arrange a quarter of the mozzarella and spoon a quarter of the sauce in a single layer on each of the pizza rounds. Leave a 1-inch edge (the crust) all around without sauce. Top with the vegetables.
  • Grill: Lightly oil a kitchen towel with canola oil and oil the grill so the pizza won't stick. Slide the pizzas off the baking sheets right on to a hot (but not the hottest) part of the grill. Close the lid and cook 2 to 3 minutes to allow the dough to finish cooking and the cheese to melt. Move the pizzas gently to a less hot area and cook until browned, an additional 2 to 3 minutes.
  • Finish: Transfer the pizza rounds to a serving platter. Top with the arugula leaves, lemon zest and Parmesan.

3 1/2 cups unbleached, all purpose flour
2 packages dry active yeast
1 teaspoon salt
1/2 teaspoon sugar
1 1/2 cups lukewarm water from the tap
1/2 teaspoon olive oil
Flour for the work surface
A sprinkling of cornmeal
2 (28-ounce) cans whole peeled tomatoes
Red peppers
Zucchini
Eggplant
Asparagus
Portobello mushrooms
Onions
Scallions
Olive oil
Salt, pepper

Steps:

  • Dough: Place flour, yeast, salt and sugar in a mixer fitted with a dough hook. While mixer is running, gradually add water, knead on low speed until dough is firm and smooth, about 10 minutes. Turn machine off. Pour oil down inside of bowl. Turn on low once more for 15 seconds to coat inside of bowl and all surfaces of dough with the oil. Cover bowl with plastic wrap. Let rise in warm spot until doubled in bulk, about 2 hours.
  • Sauce: Pour tomatoes into a strainer that has been fitted over a microwave proof bowl. Using your hands, crush the tomatoes. Press all juices into bowl. Set crushed tomatoes aside. Place bowl with tomato juices in microwave and cook on high until thickened to consistency of ketchup, about 20 to 25 minutes. Add crushed tomatoes to sauce. Cool to room temperature. Toppings: Slice some vegetables. Skewer onion slices to keep them together. Brush vegetable slices with olive oil. Sprinkle with salt and pepper. Place vegetables on hot grill pan. When done, set aside. Assembly: Preheat your oven to highest setting, 500 or 550 degrees. If using a pizza stone, preheat oven 1 hour ahead. Punch dough down, cut in half. On generously floured work surface, place one half of dough. By hand, form dough loosely into a ball, stretch into a circle. Using a floured rolling pin, roll dough into large circle until very thin. Don't worry if your circle isn't perfect. If you get a hole, pinch edges back together. To prevent dough from sticking to counter, turn it over and add flour as needed. Transfer dough to pizza peel sprinkled with cornmeal. Ladle tomato sauce on pizza dough. Add assorted vegetables. Bake 10 to 12 minutes or until golden.
  • Store-bought Pizza dough can be used instead .

This is a combination of a focaccia and pizza. I wanted something I could make indoors all year round. I worked this recipe up as a tasty (and sneaky) way to get my DH's daily veggie and whole grain requirements. It's also a great way to use up left over grilled veggies from a summer BBQ and even sauteed spinach. Use what ever veggies you prefer or are in abundance from your garden. Use them all or just one, it comes out great either way. You can make your own pizza dough, but they are readily available in most supermarkets fresh and frozen. You can even get them from your local pizza parlor.

1 lb whole wheat pizza dough
1 medium zucchini
1 medium eggplant
1 medium red onion
1 portabella mushroom
1 red bell pepper
3 -4 roma tomatoes
4 garlic cloves
salt
pepper
1/4-1/2 cup olive oil
crushed red pepper flakes (optional)
fresh herb (Rosemary, basil and or oregano)
1/4 cup parmesan cheese, Locatelli or 1/4 cup romano cheese
1/2 lb fresh mozzarella cheese (optional)

Steps:

  • Slice Zucchini, Eggplant and Tomatoes into 1/4" rounds.
  • Slice Red Pepper, Onion, and Mushroom into 1/4" strips.
  • Crush/mince garlic and place into a large zip top bag with all the cut veggies, salt, black pepper and enough olive oil to coat (about a 1/4 cup).
  • Toss gently in bag until all are coated, let marinate at least a 1/2 hour.
  • Broil all the veggies, except the tomatoes, on a cookie sheet 4-6 inches from the flame (or heating element for an electric stove) for about 5 mins per side or until they get a bit of that charred color. Watch then periodically so you can turn them once, and remove the pieces as they are done. Set aside.
  • Pre-heat oven to 500 deg.
  • Roll or strech out 1/2 your dough on to a pizza stone or cookie sheet to desired thickness. Thick for Focaccia style or you can stretch it thin for a crispier crust. (I roll the dough ball into a bit of olive oil on a cookie sheet then stretch/press it out with my fingers into the desired shape. It doesn't stick when cooked and I do not have to make a mess with loose flour!). NOTE: The thicker the crust the more veggie topping the pizza can hold.
  • Brush dough with a little olive oil.
  • Sprinkle with salt, pepper, and some of the herbs.
  • Layer all your veggies (including the uncooked Roma tomato slices) on top of dough.
  • Finely grate parmesean cheese on top of pizza.
  • Dot with fresh mozzarella balls and crushed red pepper flakes.
  • Bake for about 10 mins until cheese is melted and crust is crisp.
  • Serve with salad or soup for nice light brunch or vegetarian meal.

Then, since we've already bucked tradition, skip the marinara and drizzle your pizzas with a simple mustard vinaigrette instead. It offsets the rich cheeses and unites the vegetables into bites so satisfying, no one will notice you're having salad for dinner.
