FRUIT-SWEETENED BANANA BREAD



Fruit-Sweetened Banana Bread image

There's no refined sugar in this banana bread. The sweetness comes from the natural sugars in the bananas, raisins and dates.

1 cup raisins
2 large dates, pitted
1 3/4 cups whole-wheat pastry flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon fine salt
1 stick (8 tablespoons) unsalted butter, at room temperature
1 large egg plus 1 large egg yolk
1 teaspoon pure vanilla extract
1/2 teaspoon orange zest
1/2 cup milk
2 small ripe bananas, cut into small chunks

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
  • Put the raisins and dates in a medium bowl, cover with very hot water and let soak until the fruit is very soft, about 25 minutes. Drain, then puree until smooth in a food processor, scraping the bowl frequently.
  • Whisk together the flour, baking powder, cinnamon and salt in a medium bowl.
  • Beat the butter in a large bowl with an electric mixer on medium-high speed until smooth. Add the raisin-date mixture, and beat until incorporated and smooth. Add the egg and egg yolk, vanilla and zest, and beat until incorporated. Lower the mixer speed to medium-low, and add half the flour mixture, then the milk, then the remaining flour mixture, stopping to scrape down the side of the bowl as needed (it's OK if there are some lumps). Fold in the bananas.
  • Pour the batter into the prepared pan, and smooth the top with a spatula or the back of a spoon. Bake until the bread is golden brown and crisp and a toothpick inserted in the center comes out clean, about 1 hour. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 5x9-inch loaf pan.
  • Mash bananas and add flour, sugar, butter, vanilla, baking powder, baking soda and egg. Mix well. Pour into loaf pan.
  • Bake in preheated oven until toothpick inserted into center of cake comes out clean, 50 to 60 minutes.

1/3 cup butter
1/3 cup sugar
2 eggs
1 cup mashed banana
1/4 cup milk
1/3 cup candied fruit
1/4 cup seedless raisin
1/2 cup chopped walnuts or 1/2 cup pecans

Steps:

  • Sift together flour, baking powder, and salt. Add chopped nuts.
  • Cream together sugar and butter until fluffy. Add eggs, bananas, and milk and combine well.
  • Add dry ingredients to wet ingredients and mix until just moistened. Gently fold in the fruit and raisins.
  • Pour into a lightly greased loaf pan and bake at 350° for 35 to 45 minutes until golden in colour and tests done with a toothpick.
  • Freezes well.

I found this gorgeous recipe in Ruth Isabel Ross' "Irish Baking Book", which I had originally given to my mum as a birthday present when spending a year abroad in Ireland. It is easy to make and just tastes so fruity. =)

175 g flour
2 teaspoons baking powder
50 g sugar
100 g sultanas or 100 g raisins
1 egg
2 bananas

Steps:

  • Pre heat the oven to 180°C and line a small baking tin with baking paper.
  • Mix the flour, the baking powder, the sugar and the raisins/sultanas in a bowl.
  • Add the egg and the well mashed bananas. Blend toghether (The dough should be soft and creamy.).
  • Fill the dough into your baking tin and bake for approximately 45 minutes (or until inserted toothpick comes out clean).

1 cup desiccated coconut
3/4 cup brown sugar
1 1/2 cups self-raising flour, sifted
1 cup sour cream
1 egg, lightly beaten
1 teaspoon vanilla extract
3 bananas, mashed
1 cup icing sugar
2 passion fruit, halved

Steps:

  • Preheat oven to 170oC. Grease a 6.5cm deep, 11cm x 21cm (base) loaf pan. Line base and sides with baking paper, allowing a 2cm overhang at both long ends.
  • Combine coconut, sugar and flour in a large bowl. Whisk sour cream, egg and vanilla together in a bowl. Add bananas to egg mixture and stir until well combined. Add banana mixture to coconut mixture. Gently stir to combine.
  • Spoon mixture into prepared pan. Smooth the surface. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Stand loaf in pan for 15 minutes. Lift onto a wire rack. Allow to cool completely.
  • To make passionfruit glaze, sift icing sugar into a bowl. Add passionfruit pulp and stir to form a thick paste. Microwave, uncovered, on high for 45 seconds or until warm and runny. Pour glaze over loaf. Serve.
