- Preheat oven to 300 degrees F (150 degrees C).
- Place sausage links on a sheet pan and bake for 15 to 20 minutes, or until done. Cut each link in half lengthwise, and then into 1/2 inch slices. Set aside for later.
- In a 4 quart saucepan over medium heat, saute the onions and the pancetta for 10 minutes, or until onions are almost clear. Add the garlic and saute for one more minute. Add the chicken base OR bouillon, water and potatoes and bring to a simmer for 15 minutes. Add the kale, cream and reserved sausage, simmer for 5 more minutes and serve.

Steps:
- Brown sausage and onion in dutch oven until no longer pink. (If using regular sausage, drain and wipe out bottom of pan.).
- Add chicken broth to sausage and onions and bring to boil.
- Add potatoes and simmer on med high for 20 mins or until potatoes are soft.
- Remove from heat and mash potatoes completely.
- Add evaporated milk and cheese and stir until cheese is melted.
- Add garlic powder and cracked pepper to taste.
- If you like a thicker soup, add a little cornstarch or flour for thickening.

- In a 12 inch skillet, heat oil over medium-high heat. Brown sausage on all sides and remove.
- Cut sausage into 1-inch slices (when slightly cooled) and set aside.

- Cook sausage and bacon, cut up bacon, then set aside.
- Dice onion and sauté in 1-2 Tbsp. of bacon and sausage grease.
- Peel and dice potatoes.
- Place potatoes, sausage, onions, paprika, bay leaves and salt and pepper in slow cooker or pot on stove. Pour in stock.
- *If using a slow cooker, cook on medium for 6-8 hours, or high for 4-5 hours. If cooking on stovetop, cook until potatoes are tender ~ 30 minutes. I use the slow cooker to develop flavors.
- Around 15-20 minutes prior to serving. melt butter in frying pan.
- Add flour and whisk until mixture is completely combined.
- Cook 1 minute.
- Gradually add in evaporated milk, stirring constantly until completely smooth.
- Allow mixture to continue to cook until it reaches a simmer, and thickens. (It will be quite thick.)
- Add rue to soup, and stir in.
- Then stir in sour cream and cheese.
- Once all ingredients are combined, use a potato masher and mash ingredients to desired consistency. (This is optional and mainly affects the potatoes, but also assists to thicken the soup.) Allow to sit for 15-20 minutes while cooking bacon.
- Cook bacon until crisp, then stir into soup.
- Garnish with cheese and enjoy.

- Take the sausage meat out of its casings and crumble it into a large soup pot. Cook it over medium-high heat for 5 minutes, until browned. Spoon out most of the fat.
- Add the onion and garlic to the pot and cook for 5 minutes.

- We need potatoes first, I used about a kilogram of white potatoes. I washed the potatoes and peeled them. Then I cut them into 2-2.5 cm cubes. The second ingredient is smoked sausage, I used about 500g of smoked pork sausage. I washed the sausage a little and cut it into slices not very thin, about 1 cm thick.
- To start we heat a little sunflower oil in a soup pot and place the sliced sausage to fry. Roast the sausage about 3-4 minutes, to get a little color and aroma. Put the potatoes over the sausage, mix, and allow 2-3 minutes to fry together. Season with a tablespoon of sea salt and pour the water on top, to cover the potatoes well. I put about 3 liters of water in a 7-liter pot.
- We let it boil until the potatoes are soft, about 20 minutes, while we make a roux. To do this, in a small pan or small saucepan we heat 50 ml of olive oil. After the oil has warmed, add two tablespoons of wheat flour. Mix flour in the oil, until it is homogenized and forms a paste. Allow boiling until golden brown and add a tablespoon of sweet paprika powder. Stir until the paprika dissolves and take the pan from the heat. For added flavor, I also added a teaspoon of sweet pepper paste.
- Add the roux to the soup, using a sieve so that it does completely dissolved. Another favorite ingredient of mine is tarragon, which we add now, and let it boil for another five minutes. In the end, we season with a tablespoon of vegetable mix and a handful of chopped green parsley.
