SZECHUAN GREEN BEANS

2 cups canola oil, plus 1 tablespoon
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
1/4 cup soy sauce
1 ounce hot chili garlic sauce
1/4 cup rice wine vinegar
2 tablespoons hoisin sauce
1 tablespoon mirin or white wine
1/2 teaspoon sesame oil
1 teaspoon chopped fresh cilantro leaves
1 pound green beans, cleaned
2 tablespoons chopped peanuts
1 tablespoon chopped fresh parsley leaves

Steps:

  • To medium Dutch oven, add 2 cups canola oil and heat to 350 degrees F.
  • In medium saute pan over medium heat, add 1 tablespoon oil. Add ginger and saute for 2 to 3 minutes. Add garlic and cook for 1 minute or until it turns light brown; quickly add soy sauce, chili sauce, rice wine vinegar, hoisin, mirin, sesame oil and cilantro.
  • Fry the green beans in the canola oil for about 45 seconds, or until beans turn dark green. Remove, strain, and add to sauce. Toss and garnish with peanuts and parsley.

1 lb green beans, trimmed
1 teaspoon sesame oil
1 teaspoon vegetable oil
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
crushed red pepper flakes (, mild is just a sprinkle)
1 1/2 teaspoons light soy sauce
2 tablespoons water
1 teaspoon sesame seeds, toasted,garnish

Steps:

  • Steam beans for only a few minutes, you want them crisp.
  • Dash beans in cold water to stop the cooking (do this the day ahead if you wish) Heat the oils and saute,over low heat, the garlic& ginger until you can smell that wonderful aroma (the garlic will be golden) Add beans, pepper flakes,soy and water.
  • Cover cook over high heat for a few minutes until the water evaporates and the oils have coated the beans and they are hot Shake the pan as the beans cook.
  • Garnish with sesame seed.

Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

1 tablespoon oil, peanut or sesame
2 cloves garlic, thinly sliced
1 pound fresh green beans, trimmed
1 tablespoon white sugar
2 tablespoons oyster sauce
2 teaspoons soy sauce

Steps:

  • Heat peanut oil in a wok or large skillet over medium-high heat. Stir in the garlic, and cook until the edges begin to brown, about 20 seconds. Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes. Stir in the sugar, oyster sauce, and soy sauce. Continue cooking and stirring for several minutes until the beans have attained the desired degree of tenderness.

  • cook green beans in a large pot of rapidly boiling water until just tender, 4-5 minutes.
  • while beans are cooking, in a small bowl combine soy sauce, oil, and sugar; set aside.
  • drain beans, run under cold water, and set aside.
  • spray wok or skillet with nonstick cooking spray, place over medium high heat; add garlic, cook, stirring constantly, until softened, 20-30 seconds.
  • add green beans, stirring until coated with garlic.
  • add soy sauce mixture, continue to stir and turn until most of the liquid is absorbed, 1-2 minutes.

1 lb fresh green beans
3 garlic cloves, crushed and easy chopped
1 tablespoon canola oil
1/2 teaspoon red pepper flakes
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 tablespoon honey (pref. raw-thick type)
1/8 teaspoon cornstarch
1/4 teaspoon pepper
1/4 teaspoon toasted sesame oil
1/4 teaspoon ground ginger
1/8 teaspoon Lawry's Seasoned Salt
1 pinch cinnamon
1/2 teaspoon sesame seeds

Steps:

  • Wash and cut ends off your beans and place them in a large skillet with 4 cups of water. Bring to a boil, then boil beans for 5 minutes.
  • After boiling, pour beans into a collander and dump the water.
  • In a small bowl; mix together rice vinegar, honey, Lawry's, cornstarch, soy sauce, pepper, red pepper flakes, toasted sesame oil, ginger, and cinnamon.
  • Heat the canola oil on med-high in your skillet and add the garlic. Saute garlic for 1 minute then add back your beans and the marinade. Stir fast.
  • Saute beans on med heat for 8 minutes, stirring often.
  • Remove skillet from burner and let beans continue to sizzle just from the heat of the pan.
  • When sizzling stops, sprinkle sesame seeds on top and serve.

This is one of my favorite recipe inventions. It is easy to make and I like to eat it with ham, so I often have it for Christmas dinner.

1 1/2 lbs fresh green beans
2 (3 ounce) packages Top Ramen noodles
1/2 cup vegetable oil
1/3 cup toasted almond
salt, as needed
black pepper, as needed

Steps:

  • Wash the green beans, cut off the ends, and cut the green beans into 3-4" lengths.
  • Steam until just tender.
  • In a large nonstick frying pan put the oil and the powder from the two Top Ramen seasoning packets.
  • I like to use the oriental flavored seasoning.
  • Mix the oil and seasoning powder together.
  • Do not turn on the heat yet, or the powdered spices might stick to the bottom of the pan.
  • Next crumble one packet of the noodles into small pieces and stir into the oil mixture.
  • Save the other noodles for soup or some other recipe.
  • After the dried noodles are well coated with oil, stir in the cooked green beans.
  • Turn the heat on medium, and stir the green beans occasionally, until heated through.
  • Add salt and pepper when half heated, and then stir in the toasted almonds just before you turn off the heat.
  • Serve at once.
