Ingredients

1 lb small-curd whole milk cottage cheese (not low-fat)
1/4 c good-quality bottled horseradish (or 1/8 cup freshly grated horseradish root*)
1 tsp dill weed
1/2 tsp sugar
salt and pepper to taste

Steps:

1. The morning you're going to serve this, combine all ingredients and refrigerate. This gives the flavors time to blend and mellow. Check the seasoning before serving. If you've used fresh dill, garnish with a few sprigs before serving. This was served at the Inn with ridged potato chips. It also goes well with crudité or any of your favorite things to dip.

This is a recipe I developed to copy a tasty dip that came from our favorite local mexican restaurant when my husband and I were in college at Michigan State University. It's pretty close to the real thing! A very simple and easy dip to serve with tortilla chips and salsa.

1 (24 ounce) container cottage cheese
1/2 cup sour cream
1/2 cup monterey jack cheese, grated
2 green onions, sliced thinly
2 -3 cloves fresh garlic, minced
1/4 teaspoon cumin (optional)
black pepper

Steps:

Mix all above ingredients together in a medium sized bowl.
For best results, use regular cottage cheese and sour cream, rather than reduced fat.
This will help form a thicker dip.

1 onion, diced
1 teaspoon paprika (or more if you like spicy)

Steps:

Get a carton of cottage cheese, dice an onion up, and add paprika and mix in carton.

16 ounces small-curd whole-milk cottage cheese
1/4 cup (or more) preserved horseradish
1 teaspoon fresh chopped dill
1/2 teaspoon sugar

Potato chips or crudités

Steps:

1. Add all ingredients into a food processor and blend until smooth. Adjust seasonings to taste.
